It is through our meat mastery that Classic Meats services hotels, pubs, clubs, caterers, institutions and a broad range of restaurants. Classic Meats provides customers with the specialty focus necessary when talking centre of plate. We are a respected wholesaler, processor and specialist provider of fresh and frozen meat products, principally into the foodservice industry. We have dedicated supply partners, which allows us to offer a large range of branded products, as well as our own premium brands. All of our meat is wet aged to deliver the best eating experience for your customers. We also offer an exclusive dry age program on request. In addition to being the first national distributor to be MSA licensed, our extensive range has full HACCP accreditation. All of our branches operate under Food Safety Management System ISO 22000:2005, Environmental Management System ISO 14001:2004 and Safety Management System AS/NZS 4801:2001, so you can be confident that our products adhere to the strictest safety requirements. 4 5
Classic Meats farming partners operate in accordance with animal welfare best practices. We aim to ensure that all our animals are provided for, in both their physical and mental well-being. All our farmers use stress minimising handling techniques to ensure the health of the animals. Emerald Valley cattle and lamb are free range and pasture fed. Our cattle and lamb are raised in stress free environments with access to lush pastures, clean water and country air. ANIMAL WELFARE All Homestead Pork pigs are grown in sow stall free environments allowing each animal space and social involvement. They are eco-shelter raised which allows for plenty of natural light and air movement. Bounty Premium cattle are raised in clover and rye grass pastures. They lead a tranquil existence, have access to fresh country air and can roam the pastures freely. 6 7

OUR BRANDS Classic Meats stable includes our own exclusive brands: Emerald Valley, Bounty Premium, Homestead Pork and Naturalaz. All these are available exclusively through Classic Meats & Bidfood Foodservice branches
Emerald Valley is an industry leading meat brand recognised both nationally and internationally for its premium beef and lamb offerings. Both Emerald Valley Beef and Emerald Valley Lamb are independently graded for the MSA (Eating Ouality) program
EMERALD VALLEY BEEF Emerald Valley Beef is grown in the lush pastures of the Northern Rivers and New England regions in New South Wales. Rolling green hills, clean fresh country air and flowing streams combine to create the ideal landscape for producing succulent Australian beef. Emerald Valley Beef is free range pasture fed, predominantly British bred Hereford and their crosses. Cattle roam freely, grazing upon grass paddocks in a serene and stress-free environment that allows them to grow naturally to their ideal weight at the age of approximately 24 months. Emerald Valley s livestock supply is backed by approximately 126 farmers who operate both small and large facilities, dependent on the time of year, all of whom are dedicated to producing quality pasture fed beef. All Emerald Valley beef is processed at the Northern Co-Operative Meat Company, a farmer owned conglomerate of 1600 members
EMERALD VALLEY LAMB Emerald Valley Lamb is produced in the fertile, pristine Goldfields region of western Victoria. The region is internationally recognised as one of the best grazing environments for producing premium export quality lamb that is delicate and succulent. All Emerald Valley lambs are 100% natural free range pasture fed and have access to lush natural grass, clean water and fresh country air. This type of feeding process enables the lambs to reach their potential in a stress free environment the way nature had intended free from hormones and growth promotants. Emerald Valley Lamb is processed by the Australian Lamb Company (ALC). ALC is Australia s premier lamb processor, and the market leaders in the supply of chilled lamb to Australia and the world s most prestigious establishments. Through good stock selection, efficient processing and wet ageing, ALC can guarantee that from pasture to plate, all Emerald Valley Lamb will deliver mouthwatering tenderness
Bounty Premium cattle are raised on the lush New England high country clover and rye grass pastures in north eastern New South Wales. The cattle are then finished at the Myola Feedlot, a state of the art facility located north east of Moree in northern New South Wales
BOUNTY PREMIUM The creation of fine grain fed beef is a unique process; it is both an art form and a science. Premium eating quality beef is dependent upon the land from which the cattle have come from, the weather and soil, the breeds of cattle, and then how the product has been graded and aged. It is due to the relationship between our people, our land and our cattle that the beef we produce can belong in the company of the best beef in the world. This unique standard ensures Bounty Premium Beef provides exceptional consistency, flavour and tenderness. Bounty Premium Beef is processed by Bindaree Beef, who are one of Australia s largest meat processors, and a prominent leader in the Australian meat industry. It is a family owned and operated processing plant at Inverell in northern New South Wales. Employing over 600 people from the surrounding region, the facility is capable of processing 1300 cattle per day. This operation is strategically located to ensure that Bindaree Beef can source cattle all year round
Raised on the renowned Granite Belt in the Southern Downs region of Oueensland, Homestead Pork pigs enjoy the vast expanses provided by the western slopes of the Great Dividing Range
HOMESTEAD PORK Supported by industry best practices in animal welfare and quality assurance, all Homestead Pork pigs are grown sow stall free and eco shelter raised, with the health and welfare of every animal given primary importance. Homestead Pork s ability to provide a great eating experience is derived from a unique customised feeding system. 100% Australian grown, Homestead Pork is hormone free and produced without the use of growth promoters the way nature intended. Homestead Pork is processed exclusively for Classic Meats and Bidfood Foodservice
Naturalaz is the industry pioneer in the sous-vide (under vacuum) preparation of tender, moist, succulent meat
NATURALAZ Ouality cuts are sealed in oxygen proof bags, slow cooked in their own juices to perfection and then rapidly chilled. The final product will delight and satisfy diners looking for rich, full flavoured tender meat. Naturalaz is truly value for money; providing a perfectly cooked cut of meat, that busy chefs just unwrap, heat, brown, sauce and garnish to their own specifications for a professional finish. Well-trimmed to remove excess fat and tough tissue, it is available in convenient, easy to handle and store packs. Naturalaz has you covered when feeding hungry, value conscious customers. Benefits of sous-vide: Enhanced flavours Perfect every time Convenient Time saving Improved nutrition 30 31
