Thais have a long history with edible insects and especially crickets. They have been farming crickets for centuries and have developed breeding and feeding techniques. Using their knowledge of insect farming with our capacity to create new products and trade worldwide, we can offer a quality product that meet international standards regarding hygiene and processes. We work hand by hand with Thai farmers to always improve the quality and breeding techniques of the crickets. We also try to give them the opportunity to grow and expand their business by offering them a fair price on their production. So everybody win.

3 Description: Our crickets are selected in commercial farms, approved by the Entomology department of the Khon Kaen University. They are specially raised for human consumption. Our farms are checked on a regular basis to ensure hygiene and quality of production. Crickets are then transported to our processing facility where it will be washed carefully, dehydrated and processed. Our extra fine grade cricket flour is rich in protein, iron, amino acids, vitamins and almost a perfect balance of omega 3 and omega 6. It can be used to create new foodies or simply boost your usual baking recipes. Our facility in Chiang Mai furnished with the latest technology, has been approved by the Food and Drugs Administration (FDA) and the Thai Ministry of Industry. We also use Good Manufacturing Practice standards. Ingredients: house crickets (Acheta domesticus). To keep our product fresh, our bags are vacuumed and flushed with nitrogen gas. 6 Production steps EIF gives a special attention to the control of its products throughout the production line, here are the different steps: BREEDING Our employee head of research, graduated with a degree in entomology in the renowned university of Khon Kaen works closely with a team of scientists from this university. This collaboration has allowed us to select farms and develop partnerships in order to ensure guidance in the rules of breeding. Feeding: Our crickets are fed with a high quality multiple components flour, made for breeding crickets: Soybean, peanut and sun flower meal, corn meal/broken-milled rice, rice bran, Leucaena leaf, coconut, salt, vitamins, minerals, amino acids. SLAUGHTER Crickets are cleaned carefully. They are then packed and placed in a cold storage. The cold chain is respected until we receive the crickets in our facility by private transport. PROCESSING Upon arrival, all crickets are placed on stainless steel trays and put into the hot air oven at a temperature of 110 C, long enough for a proper dehydration and killing residual bacteria. After dehydration, we keep some of the dried crickets and we grind the rest in a several step process, in order to obtain a fine grade flour. ANALYSIS After each shipment of crickets we send a sample of flour to the Central Lab Thai of Chiang Mai to obtain a bacteriological analysis and ensure that we comply with European standards. Each product will be delivered with the corresponding test (full bacteria, total count plate, yeast and mold) PACKING We can use two types of packaging depending on the product: vacuum or nitrogen filling. These methods allow us to offer products with a minimum shelf-life of one year from production date.
