First there were the hydraulic spray injectors and the cook in technologies which, combined with the computerized gentle/energetic massaging reactors and the first wholemuscle stuffers, enabled meat processors to access cooked meat products never before seen. Later, the marinating technologies devised by METALQUIMIA allowed for industrializing said process and dramatically increasing the market value of fresh meats. More recently, the QDS (Quick Dry Slice) technology has led to the emergence of METALQUIMIA in the cured meat products sector with a breakthrough technology that is already changing paradigms in the global meat industry. 3 METALQUIMIAS MARINATOR VERY GENTLE MARINATING The MARINATOR marinating reactors are equipped with a very gentle massaging system of great operational versatility, which enables them to marinate very delicate meats with optimal distribution and very efficient penetration / absorption of the marinade within the meat muscle. The MARINATOR reactors are highly recommended for the marinating processes where the special characteristics of the raw material (size, fragility, etc...) make marinating by injection unadvisable. The MARINATOR reactor has also been designed for conditioning and / or marinating a wide range of products, bone-in or boneless, including pork, beef, poultry or seafood products, and, thanks to its innovative baffle design, has shown great efficiency in processes of impregnation, coating (oils, flavorings, spices, etc...), breading, smoking, rehydration and/or cryogenic freezing of meats and food products in general. 4 METALQUIMIAS MULTIPLUS MARINATION High density spray marinating METALQUIMIA displays at IFFA 2013 the new marinating lines MULTIPLUS (models MultiPlus 360 and Multiplus 720), especially recommended for marinating low-profile fresh meats (chicken parts, bacon, etc ), with a wide range of new features for optimal cost and functionality of the marinating line, providing greater injection precision, less dripping (better retention), absence of needle marks, as well as top quality and consistency of the fresh marinated product. The new MULTIPLUS injectors for marinated products are equipped with a spray marinating head with a very high density of needles (up to 726 needles of 2 mm in diameter and with up to 2904 injection points), controlled by an automatic regulation device in the injection area. The new MULTIPLUS models, in addition to other design innovations, provide higher injection speed and greater productivity, incorporating an easily exchangeable injection needle plate, meat level sensor for optimal performance and injection precision, with special emphasis on ergonomic operation, hygiene and safety. The MULTIPLUS models also incorporate new possibilities of control and operation that guarantee constant marinating of unrivaled quality throughout the day. DRYBINDER The ultimate drainer METALQUIMIA presents at IFFA 2013 the new DRYBINDER, the continuous draining system for injected marinated products that provides optimal brine retention and a significant improvement in quality of marinated meat after packaging. Its specific design, its diverse configurations of baffles, together with its tilting options, enable the DRYBINDER to perform fast draining of the free surface marinade, while providing slightly greater retention of the injected brine, resulting in a drier product, thus increasing yields, improving shelf life (expiration) and giving the product an optimal appearance after packaging. 4 I 4-9 MAY I IFFA SPECIAL EDITION

5 METALQUIMIAS D-ICER High performance defrosting METALQUIMIA presents at IFFA 2013 the D-ICER Reactor for Multistage Defrosting of whole-muscle or ground meat products. The exclusive D-ICER defrosting technology designed by METALQUIMIA combines total control of the thermal cycles of heating and cooling, the vacuum phases and all movements of the meat, with very fast and uniform final cooling, guaranteeing the obtainment of defrosted raw material of top quality (highly recommended for injection processes) and optimal food safety, which greatly improves the Chain of Value of said process. 11 METALQUIMIAS The digitalization of dry-cured meat products The QDS Process technology is based on a continuous digitalization system that applies conventional air-drying to fermented slices instead of to whole pieces. This provides an important reduction in production time, going from a process of several weeks to a drying period of between 15 and 60 minutes. This shortening of production time is achieved without any alteration to the organoleptic and nutritional characteristics of the product, a fact that introduces a new process paradigm that is giving rise to the appearance of new product ranges and new business models. QDS Standard & QDS Utility At IFFA 2013, METALQUIMIA presents the QDS Standard and QDS Utility lines, with capacities that range from 150 up to 800 kg/hr (depending on the model), suitable for all types of cured meat products and production capacities. 13 METALQUIMIAS QDS Research Center inauguration On March 12, 2013 METALQUIMIA inaugurated in Girona the new Research and Development Center for the project Quick-Dry-Slice Process (QDS process ). The act was presided over by the Most Honorable Mr. Artur Mas, President of the Government of Catalonia, who during his visit of the new facilities remarked that Metalquimia is a family-owned business, in a traditional sector, with roots in Girona, with a very creative, innovative, exporting mindset, that is transforming the world from the standpoint of the very essence of meat processing. The mayor of Girona, Mr. Carles Puigdemont, also spoke at the ceremony and expressed his gratitude for the Lagares family s commitment to the city of Girona and stressed that innovation in the global meat industry is being achieved from Girona. Josep Lagares, General Manager of Metalquimia emphasized that this new Research Center, unique in the world, born from the ideas, passion, collaboration, and perseverance of so many people, will help to accelerate the research of new meat products, as well as to envision new Business Models that will, no doubt, propel the meat sector into playing an important role in solving the great food challenges of the future. 18 METALQUIMIAS UPDATING TENDERIZATION AND PREMASSAGING After the launching at IFFA 2010 of the new range of FILOGRIND 3-OPTION meat tenderizers, METALQUIMIA introduces at IFFA 2013 new Tenderizing accessories (Rollers Mod. Rollercomb ) and Premassaging accessories (super aggressive head Mod. Fakir ), which provide for significantly increasing the efficiency of said processes, resulting in a reduction in cooking losses, minimization of inter-muscle binding defects, and maximization of slicing yields. NEEDLECLEAN AUTOMATIC CLEANING AND SANITATION OF NEEDLES METALQUIMIA presents at IFFA the NEEDLECLEAN, the unit for automatic and simultaneous cleaning and sanitation of all the needles of the injector. The NEEDLECLEAN is an excellent complement for ensuring daily consistency of injection percentages. ROTARY FILTER FR-33 The new 24 h ecofilter The automatic self-cleaning FR-33 filter, particularly recommended for high-capacity injectors, is designed for 24 h filtering brines of all types of viscosity (low, medium, high) without the use of water. In the brine tank, three security filters, connected to the injector suction inlet, retain all the fibers that have passed through the automatic pre-filters.
