2 Day: Friday April 11 Time: 11:30 am 1:30 pm BA Sustainability Benchmarking PILOT Study JS hitting critical mass, nice update. Any objections about sharing data? We have a total of 19 breweries in the data set. Five are from our BA Sustainability Subcommittee, seven are from my pilot sustainability roadmap work in the Pacific Northwest last fall and seven are from others that heard about our efforts and wanted to join in on the fun. I personally have been to most of these facilities and have a high confidence in the data that has been submitted. Really important to compare apples to apples. Solid waste data is hard to come by. Under 5000 bbl usage ratios appear to be an order of magnitude (!) higher than larger brethren. Spent grain tough due to moistures. Total degree days could be cool to look at. TDS and BOD data, so loads and charge structures possible. So far we ve learned that the act of collecting and time commitment is overwhelming. MG can I use some analysis for CBC, any thoughts on how data used? JS we can do a detailed summary for this group, and less detail at CBC, whatever we want to do. Sustainability Light. Quick one-page sustainability guide for breweries < 1,000 BBLs BA Graphic Design Team can start on this after CBC MG some good discussion between a few folks. Content not the challenge, but more about presentation. So decided not to rush now, working on infographics, get feedback, then dive into proposals after CBC. Potential Future BA & MBAA Sustainability Partnership Updates? No update from Chris. Cheri to update via Susan Welch BA Power Hour o Team send ideas for a brewery/guest speaker that recently started measuring water usage and has a success story to tell. o Team send ideas to for top 3 water topics to be featured. 3 1) How does the average brewery use its water? What are the average and best in class per bbl usage rates in the brewhouse, cellar, and packaging (and kitchens)? 2) What are the first projects that breweries could take to reduce water consumption and/or wastewater costs (sustainability light). 3) What wastewater parameters will municipalities regulate/charge your brewery for? ANYONE ELSE? JS looking at tap fee alone is not true cost of water. But if you think about total cost (heat, cool, condition it, dispose of it), that makes project more attractive PK I would throw in number 4, some practical recommendations pulse rinsing, etc from a production perspective. KW behavioral and cultural PK yes, a limited resource. Wednesday, 4/9, 2:40 PM - 3:40 PM Sustainability on the Farm Buzz Mattelin, Montana Wheat and Barley Committee; Carman McKinney, Roy Farms; Michael Roy, Roy Farms Moderator: Cheri Chastain, Sierra Nevada We all rely on high quality hops and barley to make our delicious brews, but what goes into growing those crops? What inputs are required to grow these essential ingredients? Learn directly from hop and barley farmers some of the hurdles and successes they face in moving to more sustainable farming practices and what inputs they rely on to produce the ingredients we all use. Thursday, 4/10, 9:00 AM - 10:00 AM Sustainability Manuals: Metrics Roadmap to Sustainability Manuals & Utility Benchmarking Study John Stier, Antea Group +++add Doug Moderator: Eric Larkin, Allagash The BA Sustainability Manual and Tools were introduced at the 2013 CBC. This year's sustainability manual seminars aim to provide details of how breweries can leverage these resources. This session

5 covers a pilot completed with six craft brewers in the Pacific Northwest to create a sustainability roadmap in one day using these BA resources. Thursday, 4/10, 1:20 PM - 2:20 PM Sustainability Manuals: Waste Water Understanding What Goes Down Your Drain Jeffrey VanVoorhis, Symbiont Moderator: Peter Kruger, Bear Republic How does wastewater management impact brewery operations? Jeff Vanvoorhis explores basic wastewater terminology, types of wastewater treatment options, operations and maintenance considerations, and how a basic understanding of wastewater will help you plan for brewery expansions and new facilities. This session answers all basic wastewater questions and provides a chance to talk with an expert about the right options for your operation. Thursday, 4/10, 2:40 PM - 3:40 PM Sustainability Manuals: Energy Navigating Renewable Energy for Craft Breweries Big & Small Fal Allen, Anderson Valley Brewing Co.; David Anderson, Dave's Brew Farm; Cheri Chastain, Sierra Nevada Brewing Co.; Moderator: Marcus Powers, Zipline Large and small breweries are initiating renewable energy projects to offset the rising cost of traditional energy and to demonstrate their commitment to natural resource preservation. Representatives from Anderson Valley, Sierra Nevada and Dave's BrewFarm discuss a spectrum of renewable energy projects in operation at their breweries. The speakers focus on their experiences both positive and negative in developing these projects and offer their insights on how to develop a successful renewable energy program at your brewery.
