1 Sodium Nitrate (Salpeter) TECHNICAL DATA SHEET Product Description October 2007 Sodium Nitrate, NaNO 3 is a white, crystalline, slightly hydroscopic, inorganic salt in compressed prill form. It does not contain an anti-caking agents but due to its prill form it remains free-flowing during storage. It is readily soluble in water up to 874 grams per 1 liter water at 20 C. It is more soluble than the Potassium salt, KNO 3, which is only 316g/lt water. Nitrates are added to cheese milk to effectively inhibit the gas producing Clostridia and /or Coliform bacteria to reduce to formation of eyes or large gas holes in the cheese. Nitrates are added to cheese milk up to levels of about 145 g per 1000lt milk. Normal dosage for Gouda or Edam cheeses is about 100g/1000 lt. milk. As the cheese ripens the Nitrate is decomposed to Nitrite. Overdosage of Nitrates can inhibit growth of starter culture and slow down the ripening of the cheese. In high dosages it can also discolour the cheese and cause reddish streaks and an impure taste. First Aid Measures Inhalation Move person to fresh air Eye Contact Flush eyes with large amounts of water for at least 15 minutes. Consult doctor if irritation persists Skin Contact Wash affected skin area thoroughly with soap and water. Apply moisturising cream. Consult doctor if irritation persists Ingestion If swallowed, give the person 2 glasses of water to drink. Summon doctor immediately. Never give anything by mouth to an unconscious person 5. Fire Fighting Measures Extinguishing agents The product itself is non-combustible but greatly facilitates the combustion of other materials Use extinguishing agents appropriate for surrounding fire. Water is the more efficient material to use Personal protective equipment Wear self-contained breathing apparatus and full protection gear. In the event of fire the following can be released Nitrous gases, Sodium Nitrite and Sodium peroxide

4 6. Accidental Spills Personal Protection Wear appropriate protective equipment as outlined in section 8. If exposed to material during clean-up operations refer to section 4 Ensure adequate ventilation. Avoid dust formation. Keep away from sources of ignition. Procedures Collect material in containers for later recovery or disposal. Do not allow to enter water drainage system. 7. Handling and Storage Store at ambient temperature in a well-ventilated area. Keep away from flammable or combustible materials and any sources of heat or ignition. 8. Personal Protection Respiratory protection not required during normal use of the product but if ventilation is insufficient use breathing apparatus. Eye protection not required during normal use of the product but use tight fitting goggles is if exposure if possible. Hand protection not required during normal use of the product but use neoprene gloves if the material is going to be decanted. General do not eat, smoke or drink while working with product. Wash hands after exposure. Remove contaminate clothing immediately 9.
