The Transfrmatinal Fd Manufacturing Innvatin Institute (TFMII) A public private partnership facilitated by:

Establish a Manufacturing Innvatin Institute (MII), a public-private partnership, thrugh the Natinal Netwrk f Manufacturing Innvatin (NNMI) fcused n Advanced Manufacturing in the US Fd industry. The Visin The MII pprtunity: $70M frm the U.S. Dept. f Cmmerce ver 5 years Minimum 1:1 match frm industry, academia, state and lcal gvernments (past winners have demnstrated 2:1) This is an pen tpic cmpetitin; 2 MIIs will be awarded Prpsal deadline: 22 July 2016

The Natinal/ Glbal Cntext The grwing glbal ppulatin (~9 billin peple by 2050) can be destabilized by a lack f healthy and plentiful fd supply. 50% f the wrld s fd supply is lst t waste. In the US, the $300B fd manufacturing industry is in a state f crisis. Energy and water intensive prductin methds have changed little since the early/mid 20th century. Much f ur fd is handled by humans wh transfer and intrduce cntaminants and pathgens creating recent recalls. Lw margins, activist investrs, and industry inertia are drastically reducing R&D frm the industry in favr f shrt returns. At the same time, there has been a dramatic increase in fd safety related recalls. The U.S. ecnmy, glbal security and stability depend n ur ability t make mre abundant, higher quality, safer, less expensive and mre secure fd fr a grwing glbal ppulatin.

The Slutin Apprach Establish a pre-cmpetitive public-private partnership (i.e. an MII) t transfrm hw fd is made. Fcus primarily n fd safety, security and autmatin as the unifying pre-cmpetitive themes fr the partnership. Industry executives identify the fllwing three areas as highest pririties: Traceability advanced sensrs and big data analytics are necessary t detect and mnitr transmissin and grwth f pathgens/allergens alng the entire supply chain. Sanitatin this is a water, time and labr intensive prcess representing a cst f 3% f grss revenues industry wide Raw material prep-prcessing (disassembly) these are dangerus (debning), difficult, repetitive prcesses where humans can transfer cntaminants acrss the entire prductin prcess.

Technlgy Radmap Deply transfrmatinal advanced manufacturing teams acrss fur majr technlgy areas: Autmatin and Cntrl This will allw wrkers t elevate their technical skill sets and peratin away frm the prductin flr. Sensrs State f the art sensrs, bth fr autmatin and cntrl, as well as fr real-time detectin f cntaminants will be necessary. Big Data Advances in infrmatin technlgy are making it pssible t track critical fd data alng the entire supply chain. Antimicrbial Materials and Catings Significant cst reductins can be realized if catings can be develped that are hstile t cntaminants, r are better prtect the final prduct. These effrts will be integrated int a matrix invlving: Sanitatin Savings in sanitatin csts can be used t capitalize the fd manufacturing transfrmatin int the future. Raw materials Preparatin The challenge is handling and cutting ingredients that are variable in size, shape, material prperties, etc. Fd Prductin Prcesses This is at the heart f the transfrmatin, making the fd remtely away frm the prductin flr.

Industry/ Market Opprtunities The ability t autmate and cntrl fd prductin pens tremendus pprtunities t tailr fds t individual custmer tastes and preferences. This will create pprtunities fr: Ultra-Custmizatin Like cars and cnsumer gds, fd in the future can be custmized fr different persnal, cultural tastes. Reduced Waste Smaller lts with targeted ingredients will lead t significant reductin in the amunt f fd discarded in western scieties. Sustainability Prductin methdlgies will be far mre efficient, reducing the demand fr ingredients, preservatives, energy and water. Safer, Whlesme Fd Supply will drastically reduce the change f external micrbial cntaminatin and the risk f expensive fd recalls.

Key Impacts/ Challenges Successful transfrmatin f the fd manufacturing industry will require slutins t/result in a number f additinal critical: Standards and Certificatins Current cdes and standards in the industry are ften cnfusing (multiple agencies), antiquated, and impediments t psitive change. Wrkfrce Develpment This transfrmatin will create the need fr a highly skilled technical wrkfrce. Cnsumer Educatin/Public Plicy Success f the transfrmatin will ultimately depend f a well infrmed cnsumer wh understands precisely what cnstitutes high quality fd, hw t keep it safe and prtect the cnsumers.
