1 Job Description Directorate/Group: National Marine Facilities Sea Systems, National Oceanography Centre (NOC), Southampton Post Title: Chef Post responsible to: Head Chef Location: National Oceanography Centre, Southampton Grade: Marine Grade Posts responsible for (and grade): N/A Job Purpose: NMF are responsible for the operation and management of NERC owned two vessels in providing wider support in the co-ordination and management of the NERC Marine Science Facility program. Scientific Research Vessels provide the scientific platform to support the UK's world-wide oceanographic research program. Expectations of the role: For the assigned research vessel the primary role of the Chef is to provide a high level food preparation by working closely with the Head Chef in all aspects of the catering service onboard the vessel during voyage and port time. Key Accountabilities/Primary Responsibilities: % Time 1 Seagoing Duty: Provide the Scientific Party with a welcoming, helpful and, as far as practical, flexible service in the best hotel services traditions. Be prepared to work according to the needs of the ships working pattern. Assist the Head Chef with the cooking and service of all meals and Menu compilation. Preparing cold starters, salads, cold collations, hot and cold desserts and cheese-boards. The presentation of all food on the self-service counter and chilled display units in the Mess. Preparing salads, cold meats and meals for the night meals facility. Washing up, potwash and wiping down. Conduct all duties in compliance with food hygiene regulations. In particular, record daily temperatures of the Chillwell, Bain Marie and galley fridges in accordance with the organisations Food Safety Management System. Ensure the principles of domestic economy are observed to minimise waste. Ensure the Deep Freeze Vegetable and dairy Refrigerators are properly cleaned and serviced. Assist the Purser/Catering Officer by recording all victualing stores drawn from the storerooms and fridges/freezers. Maintain the dry food storeroom in a clean and tidy condition. Ensure strict stock rotation. Report equipment and accommodation defects to the Purser/Catering Officer promptly. Assist with the loading, stowage and discharge of laundry and stores. 2 Health, Safety, Environment and general conduct: All staff shall provide the highest standard of service to support the objectives of the NERC Marine Facilities Programme onboard the vessels managed by NMF-Sea Systems. To ensure compliance with the NMF-Sea Systems aims and objectives, policies, processes and procedures, especially operational practices in respect of safety and pollution prevention. All staff shall participate in the implementation of the Safety Management System and to recognise that the delivery of a safe and efficient service calls for continuous improvement in skills, teamwork, procedures and provisions associated with safety management, protection of the environment and service delivery, through the identification of risks, inefficiencies and opportunities for further improvement and development. 1

2 All staff shall undertake operations in accordance with the Safety Management System in compliance with: 3 Training: 1. The International Management Code for the Safe Operation of Ships and Pollution Prevention (ISM) Code) 2. The International Ship and Port Facility Security (ISPS) Code 3. All relevant International Conventions, national statutory legislation and local regulations. All staff shall attend appropriate training, which maybe onboard ship or ashore, to revalidate certificates relating to STCW2010 and personal development programmes. The post holder is expected to participate in NMF Sea Systems internal training programmes both at sea and ashore. All staff must maintain an oversight of training needs in support of their position and personal development. 4 Medical/Fitness: All staff are required to hold an approved Medical Certificate (ENG1) and will be required to maintain a good standard of personal fitness. 5 Internal & External Relationships: (nature & purpose of relationships) To work ashore in partnership with shore based NMF staff, based at the National Oceanography Centre, Southampton in between periods of seagoing duty and leave. Internal: NERC NMF-Sea Systems to work in partnership with Managers and Staff. External: RCUK Shared Business Centre (SBS) Principle Scientist and scientific cruise participants. National & International marine regulatory authorities. 3 to the duties of the post. NERC expects that the post-holder will recognise this and adopt a flexible approach to work and be willing to participate in training where necessary. Attend relevant seminars, workshops and training events and maintain professional development by completing CPD (Continuous Professional Development) appropriate to the role. Maintain a safe working environment by attending Health and Safety training as required and follow local codes of safe working practices and actively contribute to embedding a safety culture across NOC. Adopt and promote awareness of NOC s environmental aims and other initiatives. Carry out other duties within the scope, spirit and general purpose of the post and adopt a flexible approach to work. As duties and responsibilities change this job description will be reviewed and revised in consultation with the post holder. Undertake such other duties within the scope of the post as may be reasonably requested by your Manager. Qualifications and Knowledge: 1 Certificate of Competency Part 1&2 (MCA) Ships Cook Certificate or equivalent catering qualifications. 2 Health & Hygiene certification. 3 Valid Seafarer Medical Certificate (ENG1), Unlimited, without restrictions. 4 Proficiency in Designated Security Duties. 5 Four elements of basic training to STCW2010, as amended (First Aid, Fire Fighting, Personal Survival Techniques 3

4 and Personal Safety and Social Responsibilities). Experience related to position: 1 Demonstrate success in a relevant work environment, backed by evidence of appropriate knowledge. 2 Strong awareness of health, safety and environmental issues. 3 Comprehensive understanding of all relevant convention and national statutory regulations applicable to the role to ensure compliance within the hotel and catering department. 4 An enthusiasm for advancing our understanding of the marine environment. 5 Experience of working on scientific research vessels. Skills: 1 Strong and independent problem solving abilities and task prioritisation. Able to make appropriate decisions and consider impact of decisions at all levels. 2 Able to work both independently and as part of a small team. 3 An effective team player able to build and sustain productive working relationships with staff within the organisation and the wider UK and international community. 4 Broad IT skills. 5 Confident and articulate written and oral communication skills at all levels, fluent and influential as appropriate for the audience. 6 Able to prioritise work and manage time effectively and complete agreed objectives within agreed standards and deadlines.
