ACCOUNTABILITY OBJECTIVES: Responsible for the selection, training and supervision and staffing of all service personnel. Accountable for a positive member restaurant (s) experience. To positively motivate a service staff and coordinate a smooth and timely service delivery of quality food and beverage, in both ala carte and catering environments, at an affordable value on a constant and consistent basis to the member is Priority #1. To assist in the development of and perform in the positive execution of special and holiday events. To be an ambassador of Bonita Bay Club s service culture. To maintain a safe hazard free working environment. To accept responsibility for the security of the building and its physical assets. To direct life/safety procedures if and when necessary. NATURE OF POSITION: This position works closely with and reports directly to the Assistant Clubhouse Manager and Assistant General Manager. Primary responsibility includes the selection process, hiring, training, scheduling and supervision of all service personnel including host/hostess, captains, servers, bar staff, banquet staff, bus staff, beverage cart personnel, and all other service personnel in any of the Club s food and beverage areas. This position is very hands-on in nature, one that requires a high degree of visibility to the membership, and will be very actively a part of the overall service experience during meal periods. Will have extensive contact with the membership, residents of Bonita Bay, and the community. Will coordinate internally with Club operations personnel as it relates to Golf course and tennis availability, tournaments, etc.

2 Will work with accounting department as it relatees to projects, budgets, P.O.S. systems and control procedures. In certain instances, this position may require working in and training personnel at the Naples Club operation. Will work with entertainment contractors and outside vendors of beverage and food products. Will coordinate cleaning schedules with the contracted cleaning service. Will need to have a solid understanding of the Northstar POS system. Will work with suppliers, serviceman and consultants as it relates to the successful implementation of the goals of the department. QUALIFICATIONS: Must be in compliance with and actively support a Drug Free Workplace. Position requires a minimum five years experience in restaurant/hotel/resort/club operations with a minimum of five years in a senior management capacity; or 5 years experience with three in a management capacity with a college degree from a four year university of national reputation. Ideally, a degree in restaurant/hotel administration is preferable. Must possess exemplary written and oral communication skills. Must have the propensity to develop computer skills related to but not limited to Microsoft Outlook, Word, Power Point and Excel. Must be certified by the State of Florida s Professional Food Managers Program. Position requires the individual to work nights, weekends and holidays. The nature of the position requires the individual to spend long periods of time on their feet, walking, standing and stooping. Must be able to pick up and carry a service tray in excess of fifty pounds. Must have a viable means of getting to and from work. Must have experience in table ala carte restaurant operations. Must have a neat, clean and well kept appearance and have appropriate attire to include: Suits and other clothes appropriate to moderately casual as well as formal restaurants. Must have bartender knowledge and a general working knowledge of wines. SUCCESS CHARACTERISTICS AND REQUIREMENTS: Must understand and practice the customer service philosophy of the company. Must be able to handle and prioritize multiple functions and responsibilities simultaneously.

3 Must have a pleasant and outgoing personality, and represent him/herself in a positive way to the membership. Must be well received and accepted by the membership. Must be able to develop exemplary intra and interdepartmental relations. Must be a well respected pro-active member of the management team; able to generate thoughts and ideas that result in increased sales and improved member satisfaction. NECESSARY PERSONAL CHARACTERISTICS: Must be courteous, friendly and personable. Must be even tempered and work well under extreme pressure. Must be well groomed and maintain a neat physical appearance. Must not possess any extreme personal appearance characteristics as judged by the conservative resident base. Must be respected in the community, and when not working, must represent him or herself in a way befitting the professional responsibility. PRINCIPAL ACTIVITIES IN ATTAINING ACCOUNTABILITY OBJECTIVES: Will follow approved personnel and safety policies. Maintain a safe hazard free working environment. Will oversee all restaurant and banquet operations, providing proper leadership and guidance for an effective operation. Will be responsible for the selection, recruitment, hiring, training and evaluation of all service staff. Responsible for monitoring service standards ensuring a high standard of service is delivered in a friendly, personalized and professional manner at all times. Membership name recognition is to be practiced by all service staff. Will appropriately schedule service personnel with respect to budget parameters, forecasted ala carte covers and group activity. Challenged to eliminate overtime by initiating proper staffing levels to business volume, and the proper labor controls. Will maintain exemplary relationship with kitchen management as well as all support function personnel. Responsible for the purchasing of all beverage product within established guidelines of product specifications, etc. Will schedule and be involved in the taking of inventories on a monthly basis, or as is necessary.

4 Will program the P.O.S. system and be the mentor of it. Will be able to perform all management functions within the system and teach others as is required. Responsible for the purchase of linen as is appropriate as well as the ordering of rental linen for daily operational purpose. Responsible for the proper atmosphere/environment in all service areas. Responsible for the researching and recommendation of uniform specifications. Accountable for the proper maintenance and control of employee uniforming. Will be accountable for the proper booking of appropriate entertainment pursuant to the operational plan. Will be accountable for other operating expense control. Responsible for personally interacting with the membership to resolve all disputes and/or problems. Assist in the derivation of the yearly budget on a timely basis. Accountable for the purchase and proper storage of supply items including: glass, china, silver, special event materials, etc. Involvement with the budget derivation as directed. Will attend staff meetings, development discussions, safety committee meetings, and hurricane preparedness sessions as directed. Will be responsible for the smooth execution of the emergency hurricane plan. Will develop short range plans and policies and procedures to improve the efficiency and effectiveness of the food and beverage operation. Will maintain close communication with immediate supervisor supporting proper prior approval of any/all operational change. Will represent the department to representatives of group/catered business. Supervises the general safety and security of the Club during his/her working hours. Responsible for the timely placement of promotional materials and information for insertion in the monthly newsletter. Assists in overseeing the master wine list to include selection process, purchasing, pricing, supply, inventory control and proper storage. Coordinates all banquet activity to include off-premise catering. Provide monthly and quarterly report to the Assistant General Manager as required. Responsible for completion of projects and assignments at the direction of the Assistant Clubhouse Manager and Assistant General Manager.
