1 Congress Lake Club Food & Beverage Service Manager Position Overview This is an exceptional opportunity for entry level club professionals. As part of a team of service managers, the position oversees all daily operations of the Front of the House Food and Beverage Department including Ala Carte, Banquets and Club Functions. The position is vital to the success of operations and reports directly to the Clubhouse Manager. A sample job description is attached to this posting. Club Facilities The Congress Lake is an exclusive private country club located in the greater Akron/Cleveland metropolitan area. The Club, one of the oldest in Ohio, has about 400 members and features a 900 acre property with 87 upscale residences; a Donald Ross designed golf course; 300 acre private Lake for boating, sailing, and fishing; a resort style swimming pool, racquet sports including 6 Har-tru courts, 2 platform courts, and tennis facility; and a 50,000 square foot clubhouse with indoor and outdoor dining, banquet facilities, 10 overnight guest rooms, 2 kitchens, and other F & B outlets. $7M in annual revenue including over $2M annual F & B sales (extensive in season ala carte activity). Our Core Values We have uncompromising standards of Integrity, Respect, & Honesty We understand we are in the Hospitality Business First & Foremost We understand Hospitality is about focusing on the Details of Service We are disciplined in our adherence to standards, procedures, & policies We are part of the Congress Lake Club, not an employee of a department Position Qualifications Four-year degree required Minimum of 1 year supervisory/management experience preferred Practical F & B work/service experience and knowledge of Food and Beverage management required Leadership skills necessary including the ability to supervise, motivate, and coach employees Personal traits: integrity, creativity, ambition, extroverted, detail oriented, and multi-tasker Working knowledge of point of sale systems, preferably Jonas Working knowledge of Microsoft applications with proficiencies shown in Outlook, Excel, Publisher, and Word

Currently four CLC managers are active CMAA members; all having attended World Conference and various BMI s. 5 Job Description Food and Beverage Service Manager The below job description is not all inclusive of the duties required under the position. It is understood by the Club and the employee that the requirements of the job description may change at any time without official notice and the required changes must be adhered to for the best of the Club and its members. Job Tasks and Responsibilities 1. Adheres to the Club s mission and vision statement; consistently modeling behavior in alignment with CLC s values and leadership, 2. Enforces the Club s standard procedures for Food and Beverage and Clubhouse operations 3. Responsible for general operation and staff supervision of the F & B outlets, banquets and catering, and reception ensuring standard operating procedures are met 4. Set clear and concise expectations for every team member in every dining venue and event earning respect of the Club s staff, F&B Staff and Club department heads 5. HR: a. Schedule personnel and plan dining room setup based upon anticipated guest counts and member needs b. Assist in the recruitment, hiring, and onboarding of FOH staff c. Assist in initial training and daily/weekly training sessions for all FOH staff 6. Operations Ala Carte: a. Takes reservations, checks table reservation schedules and maintains reservations log b. Direct pre-meal meetings with dining room personnel; relays information and policy changes and briefs personnel c. Monitor service and food quality during all service times d. Greet and seat members and guests e. Supervise dining room staff to help ensure proper service is maintained f. Inspect dining room employees to ensure that they are in proper and clean uniforms at all times g. Check out side work, cleaning and restocking upon completion of the shift h. Receives and resolves complaints concerning food, beverages and service i. Makes suggestions about improvements in dining room service procedures and layout j. Works with Clubhouse Manager to maintain cost controls and manage the wine/beverage program k. Responsible for hands-on service work

6 l. Manage and address member concerns 7. Operations Banquet: a. Takes reservations, checks table reservation schedules and maintains reservations log b. Direct pre-meal meetings with dining room personnel; relays information and policy changes and briefs personnel c. Monitor service and food quality during all service times d. Manage and address member concerns e. Setting up all functions in accordance with Banquet Event Orders f. Ensure that all functions are properly staffed in accordance with the approved banquet staffing pars g. Managing floor functions for events, banquets, and private parties h. Synchronize the timing of the function by verifying details with the culinary and service teams i. Ensure the neatness, cleanliness and safety of all banquets j. Attend regularly scheduled BEO meetings 8. Administration: a. Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, tip pools, etc. b. Produces daily or meal-period revenue analysis and other reports from point of sale systems used in the dining room c. Monitors dining room labor and supplies budget; makes adjustments to achieve financial goals d. Review and confirm F&B payrolls, time and attendance, and revenue analysis on a daily basis; giving to the Clubhouse Manager for final approval e. Develops and continually updates and refines policy and procedure manuals for service staff to increase quality and to control costs f. Conducts and maintains F&B inventory to ensure club is prepared for daily operations g. Update and maintain Jonas system h. Create and maintain all Food and Beverage menus i. Attend staff and management meetings to review policies and procedures, future business, and to continually develop quality and image of the Club j. Function as manager-on-duty when necessary k. Performs opening and closing manager duties of club 9. General Responsibilities a. Maintain high visibility throughout the Club b. Perform other appropriate assignments and projects as required by Club Management c. Maintain active involvement in professional organizations and continuing

7 d. General Enforcement of Standard Operating Procedures and Club Rules regarding staff e. Adheres to all federal, state and local laws pertaining to safety, health and employment f. Anything else requested by the immediate supervisor for the successful operation of the club g. Maintains a professional image that represents The Congress Lake Club in and outside of the workplace
