Once the legs are thawed, the combination of refrigeration, heating and optimal air flow dissolve the salt on the surface and determine the correct penetration of salt inside the meat. A microprocessor automatically controls the running (drying) and stopping (resting) cycles, producing the required temperature and relative humidity variation curves. After the salting phase, hams are cured at gradually rising temperatures in order to control salt penetration and water activity, in line with the parameters needed for the desired texture and flavor. Special care is given to uniformity of temperature, humidity and air distribution inside the room. A system of programmable microprocessors controls the process of drying the product through to the centre according to the processing parameters chosen by the client, while also saving energy.
