1 history Vinagres Parras S.A. was founded in Torrijos (Toledo) in 197. Since its beginning the company has been devoted to vinegar production; first, from the refuse of grapes after pressing, and later, using wine as raw material. Initially the production method used was the one called Orleans: the raw material recirculated in a tank filled with beech tree wood, to foster its ventilation and its transformation into vinegar. It was just market vinegar in bulk destined basically to the preserved food industry, both vegetal and fish. In 197, we started bottling the vinegar, and we were the very first to do so in Spain. philosophy Vinagres Parras spares no effort in endowing our products with their most recognized feature: high quality above all. At present Vinagres Parras counts the most important companies in the food industry among its clients, including most of the biggest hypermarkets. These carry out on-going checks on the quality of the products, with their suppliers companies audits; Vinagres Parras has always passed such checks. Since June 2003 Vinagres Parras has the quality system ISO 9001:2000 certified by AENOR with number ES-032/

2 processes Nowadays the vinegar production method being used is the so-called "sunken fermentation", with controlled temperature, and three fermentation units installed with a production capacity of litres per day, of 10º acidity, destined almost totally to packaging. It is also producing molasses alcohol vinegar which, due to its lack of colour, is ideal for its use in pickled vegetables, as it does not transfer any colour hue to the pickles. In the same way Vinagres Parras S.A. packages and markets the so-called "special vinegars": garlic, tarragon, cava (Spanish wine similar to French champagne), cider, or sherry vinegar. Vinagres Parras uses last generation state of the art filtration methods, as well as in the bottling, labelling, boxing and storage in pallets. As far as the packaging is concerned we use bottles made of PET, an unbreakable and quite transparent material. For special vinegars we use bottles made of glass. Vinagres Parras, S.A. is equipped with a laboratory dealing with quality control of raw materials, the transformation process and the final product. This laboratory contains the most modern instruments as well as highly trained and qualified personnel. 2

3 wine vinegar production 1- Transport of wine Wine is received in our factory in tanks of litres. Previously, its metals, extract, ashes and sulphurous are analysed. 2- Downloading and reception of wine Before being downloaded at our installations, the wine is subjected to rigorous microscopic analysis. 3- Adding vinegar and water When the wine is downloaded, it is mixed with vinegar and water. We obtain an uniform dissolution of 13. grades approximately (12º alcoholic and 1º acetic). - Storage in feeding tanks After being analyzed, the mixture is poured into supplier tanks, which supply the acetators. The mixture is identified with a number for its quality control. - Acetification At this point, the acetic and alcoholic grades are analyzed. When it is of 0.3 order, approximately the 0 % of the content is downloaded. Next, the machine is loaded with the mixture of wine and vinegar that is in the supplier tanks. - Clarification y filtration The vinegar which come from the acetators is treated with clarifiers and then it is filtered with a spark plug filter. 7- Adding water and SO 2 The following step is to fit the vinegar to acetic grades through the addition of water. Colour is also adjusted and SO 2 is added. 8- Analytical Determination Next, the definitive product is analyzed and we assign the letters of quality control which will be identical to the lot. 3

4 9- Filtration with fine grain earth The vinegar, fitted to acetic grades, is filtered again.
