4 Differential Scanning Calorimetry Liquid Fraction of Palm Oils Differential scanning calorimetry (DSC) is a powerful tool to characterize palm oil used in food products and for processing. The following example highlights how detailed information on crystallization and melting behavior can help maintain product quality. Palm oil and its liquid fraction, palm olein, are consumed in a wide variety of food products from instant noodles and crisps to cake mixes and snacks. The main supply of palm oil is from Malaysia with a production level around 50% of the global demand. The use of palm oil accounts for over 25% of the total global supply and demand in the oil market. Fruit of palm oil tree Fractionation of palm oil Fractionation is a physical process that uses the crystallization properties of triglycerides to separate a mixture into two or more fractions. The two fractions obtained from the fractionation of palm oil after crystallization at controlled temperatures are palm olein (liquid oil) and palm stearin (solid form). Palm oils of different origin and fractionated palm oils such as palm olein and palm stearin exhibit different melting and crystallization behavior. The results show that the DSC823 e can be used to characterize such oils and to obtain important information such as the liquid fraction at user-defined temperatures to guarantee and maintain optimal product quality. Palm oil is readily digested, absorbed and utilized in normal metabolic processes. Like other vegetable oils, it is cholesterolfree. Having a moderate level of saturation, it does not require hydrogenation for use as a fat component in foods and as such does not contain trans-fatty acids. The DSC heating curves shown in Figure 1 were measured using the DSC823 e and evaluated with the STAR e software. The liquid fraction was calculated by partial integration of the melting peaks.
