3 Global Food Safety Initiative (GFSI) Started by CIES (The Food Business Forum) in Paris in 2000 Now called the Consumer Goods Forum (CGF) 400 members, 150 countries Non profit making foundation Focus is a simple set of rules for accepting different standards, establishing harmony between countries & auditing efficiency by: benchmarking food safety standards worldwide facilitating cooperation between standard owners assurance of quality of certification & accreditation Vision: Safe Food For Consumers Everywhere

5 Global Food Safety Initiative (GFSI ) The GFSI guidance document sets the minimum requirements for: Food Safety Management Systems GMPs, GAPs, GDPs HACCP Delivery of Food Safety Management Systems All standards (schemes) to get approved must meet these minimum requirements as outlined in the GFSI guidance document GFSI reviews these requirements every 3 years and then each scheme owner has to bring their schemes into compliance and re submit them for approval. Last GFSI update was 2011 next one scheduled for Standards owners can go above and beyond the requirements to add value.
6 GFSI Possible 2014 Requirement Update GFSI is considering requiring all Certification audits to be UNANNOUNCED If that change is made it will become effective in the next revision of the GFSI standards in 2014 with an implementation requirement for each scheme owner of most probably by Next GFSI annual meeting is February 2014 in Anaheim, CA at the Hilton on February th, 2014.
7 Reasons to choose SQF vs. other GFSI approved schemes More attuned to the North American food industry. (More certificates issued in NA in 2012 for SQF than for any other GFSI standard) Clearer defined standards removing auditor subjectivity. More visibility as their website identifies Who are the certified auditors in each category. Who are the certified consultants by category. Standard is readily accessible to everybody at no charge. Has separate Quality level in addition to the food safety standards.
8 SQF (SAFE QUALITY FOOD) Developed in Australia in 1994 by University of Western Australia in Perth Originally 2 codes, SQF 1000 for farmers and SQF 2000 for processors and distributors. 3 LEVELS of certification Level 1, Level 2 and Level 3. One of the original 3 schemes approved by GFSI. FMI purchased the rights to SQF in SQFI merged the 2 different codes into one in July 2012 now called SQF CODE. Differentiates by requiring compliance with different Modules for different sectors of the food industry.
9 SQF Advantage to Buyers Globally accepted standard (15% of all food consumed in USA is imported; 65% Produce; 80% Seafood;) Performed by Certified auditors employed by Accredited Certifying Bodies Consistent requirements applied for each standard Based on food safety risk hence HACCP based using scientific validations All non conformances have to be corrected

All Certified Auditors have to be familiar with your type of industry 4. All audits are reviewed by a Technical Assessor 5. Ongoing communications to everybody by CB 6. 12 SQFI Uses 2 Accreditation Bodies worldwide (ANSI in USA) 28 Certification Bodies (USA). Every Certification Body uses the same standardized assessment formats Auditor training conducted by SQFI only SQF Practitioner training conducted by Training Centers SQF conducts periodic witness audits at Suppliers EtQ captures the certification information manages it since July 1 st, 2012
13 SQF CODE Effective July 1 st 2012 only one SQF Code Edition 7.0. Each sector of the food industry has to meet the requirements of Module 2 Plus other Module(s) specific to your type of business (e.g.) 9 Meat Slaughter and Fabrication 10 Produce Pack Houses 11 Food Processing 12 Food Distribution 13 Food Packaging
14 SQF CODE Effective on July 1 st 2013 Edition 7.1 of the SQF Code went into effect. SQFI has available on their website at the following documents free of charge. These can be found under the DOCUMENTS tab SQF Code Ed. 7.0 (English; Spanish; French Canadian, Japanese) SQF Code Ed. 7.1 (Currently is available only in English) There is in addition to help companies understand the changes from Ed. 7.0 to 7.1 SQF Code Ed 7.1 Summary of Key Code changes

16 SQF 3 Levels of Certification Level 1 Food Safety Fundamentals (Pre requisite programs) + Building and Equipment. Level 2 adds in the Food Safety Plans (HACCP) Element (GFSI Approval level) Level 3 adds in the Food Quality Plans Element (Above GFSI approval requirement) (Can use the SQF Shield on product packaging if certified at Level 3)

23 SQF Mandatory Elements When SQFI combined the 2 separate SQF codes into one SQF CODE in July 2012 they made certain elements in Module 2 mandatory and every company applying for SQF Certification needs to have documented programs in effect to match these elements. There are no exceptions to these requirements and your Certifying Body and Auditor cannot exempt you from these Elements. They are individually listed in the pre amble to the SQF CODE under 2.8 System Elements on page 34 of the SQF code Ed. 7.1 and they comprise of most of the Module 2 elements.
24 SQF Level 2 Exemptions When a facility applies to be certified only at SQF Level 2 then this exempts a facility from having to meet any of the requirements that only apply to SQF Code Level 3. The facility is thus exempt from having to meet these SQF elements Food Quality Plan General Requirements for Identity Preserved Foods.
25 SQF System Elements Exemptions Each facility has to determine which elements do not apply to them and this can be determined by considering which Module applies to you and your product line and processes. This will include considering Level of Certification being applied for (Level 2 vs. 3) Whether a facility uses any allergens Whether a facility conducts thawing Whether a facility manufactures high risk or low risk products Whether a facility has high risk processes ETC Use of an SQF Consultant maybe valuable in helping determine what elements do not apply and to discover gaps in other programs, procedures and policies.
26 SQF Other Exemptions not requiring pre-approval Other exemptions will be determined facility by facility, product by product and/or process by process. Thus your facility will be able to justify having certain elements be exempt from having to meet the specific SQF elements or sub element. Examples of these exemptions are as follows: this list is not totally comprehensive but is provided as a guidance Allergen Management if you have no allergens Thawing of Food if you do not thaw anything Cold Storage if you do not have any temperature sensitive products Ice Supply if you do not use ice On Site Laboratory if your facility does not have a laboratory.
27 SQF Other Exemptions requiring pre-approval Facilities may not want to follow the SQF Code element requirements as prescribed due to the fact that they have alternate approach to achieving the same food safety effect. To be granted an exemption to an SQF element or sub element a facility has to apply ahead of their audit to the Certifying Body for approval to be exempt. Do not fail to do this as the SQF auditor cannot grant a company an exemption and hence has to judge a Company as either being incompliance or not incompliance. Thus a Company without having an exemption is considered to not be incompliance unless the auditor is advised by the Certifying Body ahead of the audit visit that the alternate approach to meeting the element has been approved by the Certifying Body.
28 Applying for an exemption for an SQF element All applications for an exemption from an SQF element have to be submitted in writing to the Certifying Body ahead of time. Application has to state the element number and requirements as shown in the Code and then what alternate process the Supplier has implemented to achieve the same food safety objective including confirmatory analysis. The Certifying Body has to consider the exemption request and either approve it or deny it. If approved the Certifying Body notifies the Supplier and the SQF auditor of the exemption approval. If denied then the Certifying Body notifies the Supplier that their alternate method is not approved. Example of when to apply for an exemption is that SQFI only allows paper towels for hand drying in Module 11 so if you use air dryers you need an exemption.
29 SQF Level Scope Requirements When a facility applies to be certified depending upon the scope of certification different Modules may or may not apply. For all facilities Module 2 applies and then additional Modules will apply as follows Module 9 Slaughtering of Animals Module 10 Packing of Whole Fruit Module 11 Processing of Food Products Module 12 Storage and Distribution of Food Products Module 13 Manufacturing of Food Packaging Some facilities may do multiple functions.
30 SQF Non-conformances These non conformances can occur during the Desk (Document) audit or during the Facility (Site) audit. ONLY FACILITY AUDIT IS SCORED. There are 4 types of non conformances Critical (Minus 50 points) Major (Minus 10 points) Minor (Minus 1 point) Opportunity for Improvement (Not scored). Definitions for each of these non conformances can be found in the annex of the SQF codes. All non conformances have to be corrected before an SQF Certificate can be issued.
31 Certification Steps to be taken by a Supplier 1. Read the SQF Code & the Guidance Document 2. Designate an SQF Practitioner 3. Develop & Implement the SQF System at your facility 4. Conduct Self Assessments of your SQF system 5. Choose a Certification Body Complete the SQF Certification Application Complete a Contract with the Certifying Body 6. Have a Desk Audit & Correct all non conformances 7. Have a Site Audit & Correct all non conformances 8. Certification Decision is then made by the CB 9. Annual Recertification Audits 10. Ongoing Communications with the CB
32 SQF Desk (Document) Audit This is a review by the SQF certifying auditor of the documentation of your total SQF Food Safety Management Program comprising of. Module 2 SQF Systems Requirements plus Either Module 9, 10, 11, 12 or 13 Building and Equipment Design and Construction and Food Safety Fundamentals (Pre requisite programs) Hence this is a review of What you say you do. It is recommended that this review precede your facility (site) audit by sufficient time for you to correct all non conformances identified before your facility (site) audit starts. (Recommend a minimum of 1 month). Document Review can be on site at your facility or at a mutually acceptable off site location.
33 SQF Facility (Site) Audit This is a review by the SQF certifying auditor of your facility to see the following Have you implemented all of your SQF Programs, Policies and Procedures as written? Are you following all of these documented programs? Are your employees, when interviewed, cognizant of your documented programs? Do your Records show that you are producing Safe products? Do your Records show you are producing Quality products? Hence this is a review of Do you do what you say and Can you prove it. All facility (site) non conformances count in your final grade.

35 SQF Code Certification Ratings Fail (0 69) No certificate Comply (70 85) Certificate + surveillance audits Good (86 95) Certificate, no surveillance audit Excellent (96 100) Certificate, no surveillance audit Surveillance audits occur every 6 months.
36 Common non-conformances 2012 Business Continuity Plan not tested. Business Continuity Plan communication methods not defined. Internal audit program not adequate. Raw Materials not risk assessed. Job descriptions not written or not complete showing back up. HACCP Program not done or not written. HACCP Plan not validated. PRPs not validated. Recall Program does not list a technical expert and/or a legal advisor. Contract Services contracts not documented. Not notifying CB and SQFI at the time of a Recall.
37 Losing Certification Not having re certification audit within required timeframe. Getting an F rating during a recertification audit. Failure to close out all non conformities in the time allowed.
