Introduce the CTE lesson. We are going to bake a batch of biscuits to sell in our café. We need to determine how much are we going to sell each biscuit for? Assess students math awareness as it relates to the CTE lesson. What is yield? What is as-purchased amount (AP)? Yield this is the m\number of servings that one preparation of the recipe yields As-purchased amount (AP) The amount of the product that is purchased, ie: 50 lb flour

2 What is unit purchase price? What is cost per unit? What is ingredient cost? What is total recipe cost? What is portion cost? What is food cost percentage? What is menu price? Unit purchase price The price paid for each individual item in a bulk purchase, i.e.: pounds, gallons, each. Cost per unit to determine the cost per nit, divide the unit purchase cost by the number of purchase units, or quantity. Ingredient cost to determine the cost for each ingredient used in the recipe, multiply the cost per unit by the AP amount. Total recipe cost to calculate this cost add the ingredient cost total Portion cost to calculate the portion cost, divide the total recipe cost by the total number of portions that the recipe yields. Food cost percentage to calculate the food cost percentage divide the cost by the sales to determine what percentage is related to the food expense Menu price to calculate the menu price divide the portion cost by the food cost percentage and round to a reasonable price We are going to complete a cost sheet for a recipe of Buttermilk Biscuits and determine our selling price for each biscuit in our café.
