2 Introduction This 10 th Cheese Symposium continues a tradition to showcase recent developments in both fundamental and applied research. It is organized by INRA in collaboration with Teagasc and University College Cork. It aims to cover a broad range of themes associated with ongoing cheese research and current market trends. The conference will provide a unique forum for academia and industry to share experiences on the latest developments and applications of cheese research. The program will appeal to all involved in cheese research or production. The global market for cheese continues to grow driven by consumer demand for nutrition, flavour and convenience and in particular through increased sales within the fast food and service sectors. The global cheese market was $80 billion in 2012 and is expected to exceed $100 billion by Global demand for cheese is greatest within Europe (39%) and North America (33%), but demand is increasing most in the Asia-Pacific region, with an expected growth of 7.8% each year until 2019, due to increases in population, disposable income, and rapidly changing lifestyles. Climate change, farm sustainability, price volatility, and changing market trends will all impact on cheese production resulting in significant changes in the immediate future. Therefore this symposium is timely in that it provides a great opportunity for academia and industry to meet and share experiences in a given place and time.
