4 What is Research? Definition: Research is searching for and gathering information. Companies in the food industry conduct both internal and external research. There are Government groups that also help food companies search for and gather information about the changing needs of consumers. Market Research The action or activity of gathering information about consumers' needs and preferences.

6 Why do Food Companies need to Research & Develop? Research and development is the process used to create new products. Thus, allowing a food company to meet consumer needs and remain competitive in the food industry. R&D results in innovation which is regarded as extremely important to a company s continued success. Competition drives food manufacturers to create new products for the purpose of winning market share (a company s portion of sale). INCREASED EFFICIENCY AND/ OR PROFITABILITY.

7 Organisations that assist with R &D Research and Development in the AFI is costly but necessary to ensure it remains up to date and competitive on a world scale. Businesses need to spend money on research and development related to their products. The Govt. provides funding to assist in research and development and some of this is done by CSIRO and FSANZ.

8 What is CSIRO? Commonwealth Scientific and Industrial Research Organisation (CSIRO) does research in all sectors of the food industry. The CSIRO is working with farmers, the government and research teams to develop innovative agri-food and processing technologies to increase prosperity and sustainability in Australia s agribusiness sector. They use science to solve real problems and find solutions.

9 Goodman Fielder - Case Study Goodman Fielder produce many of our daily food items such as bread, milk, margarine, flour, dressings, condiments, mayonnaise, frozen pastry, cake mix, desserts, sauces, vinegar and cooking oils. Their brands include Meadow Lea, Praise, White Wings, Pampas, Helga's, Wonder White, Meadow Fresh, Edmonds and Irvines. The company wanted to reduce the vinegar taste and the salt and sugar content of some of their mayonnaises and dressings. However, food ingredients such as acid (the vinegar), salt and sugar can be important in making food products safe to eat and preventing foods from spoiling. To do this, they needed a way of predicting the effects of these changes on aspects like shelf life, taste, safety and spoilage.

This ensures that the needs of their consumers are being met and that the quality of their products is kept to a high standard so that they remain competitive in the market (Heinz is their biggest competitor). 13 EXAMPLE: New research has revealed that the nutrient lycopene in cooked tomatoes has been show in laboratory studies to slow the growth of, and even destroy, prostate cancer cells. Lab tests have shown that lycopene, which gives tomatoes their red colour, intercepts cancer cells ability to make connections needed to attach to a healthy blood supply.
