4 Despite the extensive scientific progress and technological developments achieved in recent years, microbial foodborne illness remains a global concern. Specific sources that contribute microbial contamination to animal carcasses and to fresh meat during slaughter and dressing include the faeces, the hide, oil, water, air, intestinal contents, lymph nodes, processing equipment and humans. The type of micro organisms and extent of contamination present on the final product are influenced by sanitationn procedures, hygienic practices, application of food safety interventions, type and extent of product handling and processing, and the conditions of storage and distribution. Listeria monocytogenes has emerged as a major foodborne pathogen for the meat industry due to its psychrotrophic nature and its ubiquitous presence. It has been isolated from soil, sewage, dead vegetative matter, aquatic environments, fecal material, fish and domesticated animals. Meat products are highly perishable and their shelf-life is limited by microbiological spoilage. Therefore, when pathogenic microorganismss are involved, it posess a health threat to the general public. The situation is further complicated because meat processing plants are ideal environments for this organism to proliferate. As a result, this creates an ever growing potential for food safety issues. The microflora and cleanliness of beef hide are considered to have a major influence on the contamination of carcasses during slaughter. Transfer of contamination from the hide to the carcass is unavoidable due to the nature of hide removal. Contaminati ion can occur by direct contact between the hide and the carcass, or by contactt between the carcass and operatives hands, clothes, tools or factory equipment that had previously been in contact with the hide. Micro-organisms water and vegetation and can present on the hide are derived from faeces, soil, include pathogens such as Escherichia coli 0157:H7 and Salmonella.
