4 Message from the incoming Chairman BOODSKAP VAN DIE INTREDENDE VOORSITTER FRANS STAPELBERG 4 As introduction I would like to thank and compliment Dr. Fanie Steyn and the outgoing council members on what they have achieved in conjuction with our CEO, Dr. Michael Bradfield. Time devoted in a selfless manner has led to the development of programmes that would in future be recognised as an integral part in the success of the Wagyu breed in South Africa. Wagyu SA once again held a very successful conference this August, being well attended by our members, other interested parties and service providers. All workshops, presentations, the selection course and our very first National auction were of high quality. To Dr. Michael Bradfield, his righthand Charmainé Alberts and their entire team, a big thank you and congratulations. You have set a new standard for the WSA s annual congress. The highlight was surely the variety of Wagyu dishes that were very delectable and stylish. I was elected as chairman of our newly expanded board (now consisting of seven members in total). Nie net het almal onbaatsugtig hul tyd opgeoffer nie, maar daar is ook projekte geloods wat in die toekoms sal uitstaan as projekte wat deurslaggewend was vir die sukses van die Wagyu ras in Suid-Afrika. Wagyu SA het n baie suksesvolle konferensie aangebied gedurende Augustus wat goed bygewoon was deur ons lede, ander belangstellendes en diensverskaffers. Alle aanbiedinge en voorleggings was van hoë gehalte, en ons eerste Nasionale veiling asook keuringskursus word oor dieselfde kam geskeer. Welgedaan aan die hele span onder leiding van Dr. Michael Bradfield en sy regterhand, Charmainé Alberts. Julle het n nuwe standaard vir die aanbieding van WSA se jaarkongres gestel. Die hoogtepunt was sekerlik die verskeie Wagyu geregte wat keurig en stylvol aangebied was. Ek is as voorsitter van die vergrootte raad (wat nou uit sewe lede bestaan) verkies. 6 Corporate & Finance: Frans Stapelberg & Gerhard van der Burgh Fellow farmers, we have a high quality product. Thus our service, management and planning must be of the same standard. We have many challenges and uncertainties regarding land ownership, safety and wrong perceptions about farmers, but we will be working hard on social projects to change this perception, and to believe in the future with a positive attitude. We all realize the critical importance of CWB and BGP for the Wagyu breed in SA, and the implementation of the above mentioned will be one of my main goals. Apart from this, it is my priority that the Wagyu Society functions effectively as a service provider to its members and not vice versa. To expand the breed to its fullest potential is an enormous task, given the national and international demand for this quality product, but with active members who feel at home within their Society and actively participate in programmes like CWB & BGP, success is inevitable. Members, please don t hesitate to contact me should you feel management, member interests and association goals are neglected. 8 Message from the previous Chairman BOODSKAP VAN DIE VORIGE VOORSITTER FANIE STEYN 8 Certified Wagyu Beef Program raising the standard Published studies by the Red Meat Producers Organisation have shown the South African red meat prices to be as low as 45% below international pricing. Wagyu is the only breed that can differentiate itself completely from the competitors and thereby raise the standards (and pricing) of South African beef. During the Society s first strategic planning session in 2015 the highest priority from the meeting was for the Board to implement a certification system for Wagyu beef. This was again rated as one of the highest priorities during our strategic planning session in 2017 and today I am glad to report that we have successfully launched the Certified South African Wagyu Beef program. The trademark has already been registered under the Society s name in 2016 but it took a further 2 years to develop all the protocols and licence agreements, as well as to set up the functionality in the Breedplan system to accommodate the entire value chain (from commercial producers right through to feedlots; abattoirs; retailers and restaurants). Wagyu is die enigste ras wat homself heeltemal van die mededingers kan onderskei en sodoende die standaarde (en pryse) van Suid-Afrikaanse beesvleis verhoog. Tydens die genootskap se eerste strategiese sessie in 2015 was die hoogste prioriteit van die vergadering om n sertifiseringstelsel vir Wagyu vleis te implementeer. Dit is weer in 2017 as een van die hoogste prioriteite beskou tydens ons strategiese beplanningsessie. Ek is bly om te rapporteer dat ons die Gesertifiseerde Suid-Afrikaanse Wagyu Beef-program suksesvol geloods het. Die handelsmerk is reeds in 2016 onder die Genootskap se naam geregistreer, maar dit het nog twee jaar geneem om al die protokolle en lisensie-ooreenkomste te ontwikkel, asook om die nodige funksionaliteit in die Breedplan-stelsel op te stel om die hele waardeketting te kan akkommodeer (van kommersiële produsente regdeur tot voerkrale,

9 During our recent roadshow we received very positive feedback from the red meat industry and we also signed up three of the largest feedlots in South Africa, as well as two of the leading retailers who have indicated that they will support the program. A significant number of our members have also signed up and we encourage those members who have not yet signed up to obtain the necessary documents from the Society s offices or on the website. SAMIC has officially registered the protocols with the government and will be involved in the audits throughout the value chain. Nearly CWB Allflex ear tags have been sold. The tissue sampling ear tags enables our members and commercial producers to make use of SNP genotyping. The fees charged by CWB will be used to fund genotyping (40%), marketing (30%), research and development (15%) and administration (15%). It is a small price to pay for a certification program that will ensure integrity throughout the value chain. When (not if) Wagyu is exported internationally, it will allow us to compete strongly against competitors who themselves have strong national grading systems that ensures product integrity. The message for all our members is simply that we cannot afford not to have a system as was unanimously agreed at the first strategy meeting in Clarens. The alternative is not an option. Please note that the certification mark does NOT replace any producers own beef brand it is a supportive certification that serves as an independent stamp of approval to be used in combination with the producers own brand. Retailers have confirmed to the Society that they are not prepared to put such a high-end product on their shelves without this stamp of approval being verified by an independent certificating authority. Proof thereof are the retailers and restaurants currently selling AUSMEAT certified Wagyu in Sandton for prices of R2000/ kg and higher. These restaurants have indicated to the Society that they are willing abattoirs, kleinhandelaars en restaurante). Die boodskap vir al ons lede is eenvoudig dat ons nie kan bekostig om nie n stelsel te hê nie, soos wat eenparig by die eerste strategie vergadering in Clarens ooreengekom is. Die alternatief is nie n opsie nie. Kry môre se nuus vandag Die wetenskap van teling het so ver gevorder dat dit eintlik moontlik is om môre se nuus (teeltwaardes en eienskappe) van die volgende generasie, vandag te kry (d.w.s 2018). Die gebruik van beraamde teeltwaardes het lankal sy waarde regoor die wêreld bewys en nou dat die era van genomika aangebreek het, het die voorspellings selfs meer akkuraat geword. Genomika spaar ook waardevolle tyd - dink net aan die feit dat dit n minimum van 10 jaar neem om byvoorbeeld by n F4-suiwer dier te kom. As n mens Nuusbrief Augustus

10 to pay the premium for this product ONLY if there is an independent certification Getting tomorrow s news today The science of breeding has evolved to such an extent that it is actually possible to get tomorrow s news (breeding values & traits) of the next generation today (i.e. 2018). The use of Estimated Breeding Values has long since proven its worth all around the world and now that genomics has arrived, it has made the predictions even more accurate. Furthermore, genomics saves us valuable time just think of the fact that it takes a minimum of 10 years+ to arrive at an F4 Purebred animal. If one does not make use of EBV s and genotyping, then you might well find you arrive with an F4 animal that lacks in some or other trait. It becomes even more important to make use of EBV and genomic data when one is making use of assisted reproductive techniques such as embryo transfer, IVF production and artificial insemination, as good or bad traits will be replicated at a higher rate in the herd. I am very excited about the fact that there are now highranking Wagyu bulls available internationally which have EBV s and genotypes positive for growth, carcass weight, milk and most importantly marbling. I want to encourage all our breeders to make use of Breedplan to do mating predictions as far as possible. Our Society is working closely with AWA to establish a joint Breedplan analysis that will incorporate both the South African and Australian data into one analysis. As we know data is worth very little if it is not analysed in larger contemporary data sets. We want to urge all our members to submit all weights and calving records to the office timeously. Furthermore, we want to urge our members to obtain genotypes of the imported genetics together with sufficient (more than 1 000) local phenotyopes (weights and other) and carcass data this will enable us, as a Society, to have EBV s available in the next 6 to 12 months. nie van teeltwaardes en genotipering gebruik maak nie kan jy dalk met n F4-dier sit wat nie na wense in sommige eienskappe presteer nie. Ons genootskap werk nou saam met die Australiese Wagyu Genootskap (AWA) om n gesamentlike BREEDPLANanalise te loods wat beide die Suid-Afrikaanse en Australiese data in een ontleding sal insluit. Soos ons weet is data baie min werd as dit nie in groter intydse datastelle ontleed word nie. Ons wil al ons lede aanmoedig om betyds alle gewigte en kalf rekords by die kantoor in te dien. Verder wil ons ons lede aanmoedig om genotipes (SNP s) van die ingevoerde genetika te kry - tesame met voldoende (meer as 1 000) plaaslike fenotipe (gewigte en ander) en karkas data, sal dit ons as n Genootskap in staat stel om teeltwaardes in die volgende jaar beskikbaar te kan stel. 13 DR MICHAEL BRADFIELD From the CEO s Desk VAN DIE HUB SE LESSENAAR We have just come out of planning and running one event and then it was straight back into planning the National Sale and Technical-, Industry- and Outlook Conferences in August. We have had positive feedback from members regarding the conference and we appreciate the good turnout. More on the Congress will also be given in our next Newsletter. I would also like to thank the Lumin team by name of Anette Derks, Nerine van Zyl and Sunet Schoones with their help with the roadshow. The program held in three provinces was demanding and they did a sterling job. At short notice Charmainé Alberts and Caria Vermaak also stepped in to assist us with the arrangements with the National Sale, Uit de Fles Sale, Selection course, Technical Conference, Industry Conference, Outlook Ons het pas uit die beplanning en aanloop van een gebeurtenis gekom en was reguit terug in die beplanning vir die Nasionale Veiling, asook die Tegniese-, Bedryfs- en Uitkyk-konferensies in Augustus. Ons het goeie terugvoer van lede oor die konferensie gehad en ons waardeer die goeie opkoms. Meer oor die kongres sal in ons volgende Nuusbrief gegee word. 14 Conference, AGM and Gala dinner. I have received a lot of good feedback from our members regarding the good work that was done. Ivonne from the office and her husband Hennie also did their utmost to ensure that the Sale and conference went well. We have also proposed that we expand the Wagyu Board to seven members (accepted) and ensure that we have more producers on the board. Our membership is currently 120 members, a big increase from the 60 members a year ago. We would also like to see more producers on the Board who are willing to serve at least a two-year term. The proposal is also to restructure the board so that it fits in with our strategic plan. It is envisaged that Board members head up their own committees and portfolios as is the case with most breeds Internationally. The portfolios envisaged fit in with our strategic plan and are: Supply: (Increase the Wagyu value chain s ability to supply premium quality beef in sufficient volume to meet market demand). This is essentially a Breed Improvement portfolio. Demand: (Increase consumer demand for South African Wagyu premium quality beef). This is a Marketing portfolio. Product Trust: (Ensure trust in the African Wagyu value chain). This is the Certified Wagyu Beef portfolio. Social responsibility (Socially uplift emerging beef producers enabling their involvement in the premium quality beef market). This will be the Social Responsibility portfolio. Service Delivery: (Create an effective service company delivering value-adding services to its members and customers). This will be the Corporate Affairs portfolio that will include the strategic plan, finances and office matters. At the AGM this year we also proposed that we scrap the clause in the constitution that relates to the showing of animals. Wagyu is business that ensures a fine dining experience and the focus should be on genetically improving the product, and not the animal per se. For this reason we also proposed some changes to compulsory inspections. Producers have been given an opportunity to do an inspection exam and those that passed are now exempted from having their cattle inspected. Producers new to the industry, or who have not done any selection courses, will still be required to have a compulsory annual inspection. The proposal is also to have an exam for all members every three years. konferensie, Uitkyk-Konferensie, AJV en Gala dinee. Ons wil ook graag meer produsente op die Raad sien wat bereid is om ten minste twee jaar te dien. Die voorstel is ook om die Raad te herstruktureer sodat dit inpas by ons strategiese plan. Daar word beoog dat Raadslede hul eie komitees en portefeuljes bestuur, soos by meeste rasse in Suid-Afrika. Die beoogde portefeuljes wat by ons strategiese plan inpas is: Toevoer: (Verhoog die Wagyu-waardeketting se vermoë om premie-kwaliteit beesvleis in voldoende volume te voorsien om aan die markvraag te voldoen). Dit is in wese n Rasverbeteringsportefeulje. Vraag: (Verbeter verbruikersvraag na Suid- Afrikaanse Wagyu premium-kwaliteit). Dit is n Bemarkingsportefeulje. Produkvertroue: (Verseker vertroue in die Afrika Wagyu waardeketting). Dit is die Gesertifiseerde Wagyu Beef (CWB) portefeulje. Sosiale verantwoordelikheid: (Maatskaplike opheffing van ontluikende beesvleisprodusente wat hul betrokkenheid in die premie-kwaliteit bees mark moontlik maak). Dit sal die Sosiale Verantwoordelikheidsportefeulje wees. Dienslewering: (Skep n effektiewe diensmaatskappy wat waarde-toevoegende dienste lewer aan sy lede en kliënte). Dit sal die Korporatiewe Sake portefeulje wees wat die strategiese plan, finansies en kantoor aangeleenthede insluit. By die jaarvergadering vanjaar het ons ook voorstel dat ons die klousule in die Grondwet wat verband hou met die skou van diere, skrap. Wagyu is n besigheid wat n goeie eet-ervaring verseker en die fokus moet wees op die genetiese verbetering van die produk en nie die dier per se nie. Om hierdie rede het ons ook n paar veranderinge aan verpligte inspeksies voorgestel. Produsente sal die geleentheid kry om n inspeksie- /keurders-eksamen te doen en sal dan vrygestel word van keuring indien hulle die eksamen slaag. Produsente wat nuut is in die bedryf of wat geen keuringskursusse voorheen gedoen het nie sal steeds verpligte jaarlikse inspeksie hê. Die voorstel is ook om elke drie jaar n eksamen vir alle lede te implementeer. 14 Newsletter August 2018

17 CEO AGM report ( n Afrikaanse weergawe van die verslag is beskikbaar op From the Societies records we know that over straws of semen and embryos were brought into the country in If we assume that the same amount of local straws of semen were sold we are looking at inseminations in The previous year had about half these numbers. We can thus realistically assume that cows have been inseminated with Wagyu in South Africa. With a conception rate of 60%, this equates to about calves to be born in the coming year, and at least half of these going through feedlots in the next two years i.e The demand for Wagyu product is extremely strong and as many consumers comment, once you have eaten the product, you are reticent to eat anything else. It truly is the meat that they make in heaven! Projections made by industry experts estimate that the industry will be able to absorb at least to carcasses before it needs to consider alternative markets. As per Fig 1 the Society itself now has a membership of over 120 members. The growth in cow numbers is given in Figure 2. In terms of membership size, Wagyu is now the 10th largest breed in South Africa if the 2016 statistics are used (Statistics for 2017 for all breeds are not yet available). The growth in membership and animal numbers is also expected to come from the Certified Wagyu Beef (CWB) program that will encourage commercial producers to submit data for genetic evaluation. There is a significant cost associated with feeding an animal for over a year and it is critical that the industry identifies the best genetics. HIGHLIGHTS FOR 2017/2018 Implementing a strategic plan that is goal and outcomes focused. Moving into our own corporate office in an office park, with a professional feel, that already accommodates two of South Africa s largest societies. They are in good company! Ensuring a strong balance sheet and financial report. This was also achieved by mainly strong membership growth, royalties on semen and embryo s and attracting new sponsors as a win-win for all parties. Our trip to Australia in November 2017 was a highlight. I was able to address the Australian Wagyu Association (AWA) board, meet with colleagues at ABRI and AGBU, and develop a good relationship with industry leaders. Develop the required registration and recording systems to ensure that members load their data into the system. Moving to a cow inventory system. Most leading Societies in the world have adopted this system because it ensures complete recording. 18 1. Supply 1.1 Membership As per Fig 1 below the membership of the Society has grown from 61 members in 2016/2017 to 110 members in 2017/2018 taking us to the number 10 position in South Africa. Our cow inventory numbers have doubled from cows to cows. There is still a long way to go to the cows that the medium Societies have as an inventory in South Africa. 1.2 Certified Wagyu beef membership By June 30 th 2018 we had signed up 29 licensees, including Cavalier, Beefmaster and Beefcor feedlots for the CWB program. We have had good support from the membership. 1.3 Data submission The level of data submission from members is still a serious concern but is changing now that we have some of our large producers submitting large volumes of data. The Society collected birth weights, 821 weaning weights, 525 final weights and 51 mature cow weights last year. 1.4 Beef Genomics Program (BGP) WSA will enter the new three year round of the BGP program. As an organization, we have committed to fund a fair share of the genotypes, feed efficiency tests, and carcass tests. Our allocation of R pa is 10% of the budget of the LRF breeds. Below the annual numbers that we envisage to test. The money (allocation) will be made available to all members that are willing to supply good data to the Society. There are currently 14 Societies that use ABRI as a service provider that conduct international or cros-country evaluation s. The Hereford in Namibia for example is included in the Australian and New Zealand Single Step evaluation. The challenge for WSA is that we have not yet accumulated our own data in sufficient numbers to come in as equal partners. The board will need to continue to deliberate the value proposition that it can offer to AWA members MIJ Camera and support The AWA has formalised agreements with Meat Image Japan (MIJ) to sell and support MIJ cameras within Australia, New Zealand and South Africa. We will soon be receiving an expression of interest to purchase MIJ Cameras including commitments to purchase volumes of images. The AWA is seeking to place 10 cameras within the initial year of its agreement with MIJ. In my discussion with the CEO of AWA, we have requested that we be one of the beneficiaries of the new camera s. 2 Demand 2.1 Monthly and Newsletter The Society sends out its monthly newsletter to over 600 subscribers, and a large proportion are captains of industry. The Newsletter will be printed three times per annum for the next three years and then hopefully move to a quarterly Newsletter. Over 2000 copies were printed in the first run, and all members should have received a copy Roadshow The Roadshow was well attended by nearly 300 participants. The Pretoria leg had approximately 150 people attending, Bloemfontein 50 and the Western Cape nearly 100 participants. Also pleasing was the participation from our large retailers including Woolworths and Pick n Pay. Our sponsors also got a lot of mileage and a big thanks to Woodview for sponsoring the meat at the Pretoria and Bloemfontein leg and Cape Wagyu for doing the Western Cape Website and Facebook The Website has been revamped and the table below shows that the reaction from the industry has been immediate. An average of three thousand unique visitors per month is excellent and shows that we have Nuusbrief Augustus

22 already ensured that we are well on our way to becoming the definitive source of Wagyu information in Africa. Although the Facebook profile has grown from 302 members to 1050, it should be above at least 3000 likes to be competitive with other Societies Media and radio Although Wagyu is a hot topic in South Africa we have had more than our fair share of media interviews. We have also made the large three media houses Gold Sponsors of the Society. Media editors are usually excellent master of ceremonies at functions and we see the editors as part of our Wagyu team. They have also bought into our new vision as the headline on the front page of the Farmers Weekly has shown ABRI Internet Solutions The growth in web queries from our service provider has also been excellent as has been the views of the National Sale on the website of 1514 queries. 3 Product trust At the roadshow in Clarens, the biggest strength of the Society was listed as the superior eating quality that the product delivers. The biggest threat to the Society was the dilution of the brand and all members present listed the biggest opportunity for the Society as the development of a quality assurance program. WSA has engaged Graham Truscott to assist with the development of a certification program. The program has been well received by the majority of the livestock value chain and considered to be well thought out and practical to implement. In the last few months the Society has: 22 1) Registered the CWB trademark 2) Developed the License application 3) Developed the protocols 4) Negotiated an excellent retail price of only R39.00 for the management tag, radio tag and DNA vial. We will be using Allflex, the world s number one tag manufacturer as the agent. 5) Provided a funding model Newsletter August 2018 (Continue on p22)

24 (Continue from p20) a. 40% of the income will be for SNP testing that will ensure the integrity and also drive the genetic evaluation. b. 30% will be used for marketing. c. 15% will be used for research and development. d. 15% will be used for administration. 6) Launched the program at the roadshow. We have nearly 40 licensees that have now signed the protocol, including three of the major feedlots. 7) Nearly 5000 CWB tags have been sold The proposal from the Board is also that Wagyu split into two entities, i.e. the Wagyu Society as a genetics company, and the CWB program as a value chain company. The CWB not for profit company will ensure integrity in the product, market CWB nationally and internationally. It will also be a wholly owned subsidiary of the Society. 4 Social development The reality of conducting business in South Africa is to have a strong commitment to social development and to ensure emerging farmers see Wagyu as a viable opportunity. For this reason, we will propose the nomination of a board member that specifically works on social development to bring emerging producers into the fold. Successful large businesses in South Africa have targeted Black Economic Empowerment as an opportunity in the country. The Wagyu Society needs to do the same. Activities: Two meetings have been held with the Landbank Meetings with emerging producers have already been planned for the next two months. 5 Service delivery In January 2018 we moved into our new office with good facilities in the Genius Loci office park in Bloemfontein. Neighbours include the Brahman and Simmental office. They are now in good company! We foresaw the growth in Wagyu and signed a service level agreement with the Simmental/Simbra as registering authority (RO) to assist the Society with a front desk, accounts, registrations, performance recording and breed improvement (especially with reports for the BGP project). We have also created a proper filing system where all files are stored on Sharepoint using teams in Office 365. Any new employee will thus have immediate access to all Society folders, also remotely. Backups are also stored off site. I have also signed a new agreement, with performance targets, with Ivonne van Tonder and have appointed her the office manager. The Society now has two full time employees, three with the Registering Authority, Graham Truscott the international consultant for a three year term ( ), and Charl Hunlun, the local consultant who assists with the constitution, Newsletters, and who acts as a technical officer. The services of Hennie Snyman have also been contracted, to assist producers with their record keeping. We have also implemented our corporate governance procedures, but have yet to implement our board policies, HR policies and financial policies. 25 TRUSCOTT S Corner GRAHAM TRUSCOTT International Consultant Welcome back to Truscott s Corner. We seem to have come a long way since I last wrote. The South African Certified Wagyu Beef program has been designed, written and launched, placing the South African Wagyu industry in a very strong position. Unlike the Australian industry, which has had two unsuccessful attempts at establishing a certification program to protect the customer when purchasing Wagyu, South Africa now has a world leading Wagyu Certification system. Wagyu genetic content is assured by the requirement for use of WSA Herdbook Registered sires only. Eating quality is assured by incorporation of the Meat Standards Australia critical control points to achieve tender, juicy and flavoursome beef. And finally, it is the famous Wagyu marbled intramuscular fat (minimum Marble Score 3 for the first two years, then moving up to minimum Marble Score 4) which then turns the product into premium quality beef. With the South African Wagyu industry just starting to take off, the timing is perfect for certification. As you might recall, Australia ran the first World Wagyu Conference in Prior to that, little was known throughout the industry regarding the Wagyu premium pricing. Immediately following the conference Wagyu content animals started to be sold through the on-line auction system, Auctionsplus. Suddenly premiums of 50% - 70% for F1s and over 100% for Fullblood slaughter cattle became public knowledge and demand for Wagyu bulls skyrocketed. The Australian Association tried to warn the industry to buy only Herdbook Registered bulls with at least good Marble Score EBVs, knowing that when the progeny became available as feeder steers and heifers the feedlot buyers would simply go to the AWA animal database and look up the bull. If not there they would probably not even be prepared to purchase the feeders as the feeding risk was too high. If the bull was Herdbook Registered they would price based on EBV predicted performance. The result now is a large number of strange black (and some red) animals with horns claiming to be Wagyu F1 s but with un-provable sires. Is it any 25

26 wonder the Australian market for these has taken a dive, while calves from Registered and EBV performance predicted sires are still selling well? The Wagyu Roadshow in Irene, Bloemfontein and Paarl proved a great success with over 30 of the key Wagyu supply chain cattle accumulators i.e. the feedlots, abattoirs and brand owners, signing up for the Certified Wagyu Beef Trade Mark License Agreement as they strongly believe the program will protect both the customer and their investment in Wagyu. As Licensees can only buy and sell to other Licensees, the next stage of the program will involve the feedlots inviting their key commercial suppliers to a supplier workshop towards the end of September and prior to the November/ December joining season. The workshops will cover: What is Wagyu? Why Wagyu? How to produce Wagyu, the feedlot financial proposition and the need to become a Certified Wagyu Beef Licensee - to enable them to supply the feedlot. Two other specialist workshops will also be arranged for Licensees to lift Wagyu skills and experience in the South African supply chain. These will be: Feedlot Nutrition and Feeding Regimes with a nutritional expert from Australia sharing the three-stage feeding program to maximise the growth and marbling; and Wagyu Cutting Lines to Optimise Carcass Value a Wagyu cutting line specialist will deliver this training to boning plants to ensure maximum carcass value. So, in short, the Certified Wagyu Beef program is up and running with all players in the supply chain welcome to become a Licensee, providing you are willing to adhere to the protocol. Customers will be protected, the Wagyu reputation will be maintained and enhanced, and Licensee investment in Wagyu will be protected. Everyone wins! AGRI SECURITAS receives R DONATION from Wagyu South Africa 26 Wagyu members celebrated their achievements over the last five years and the conference this year was attended by over 120 people. The charity auction at the gala dinner remains a highlight, because all proceeds go to a worthwhile cause. This year it was decided that the proceeds should go to AGRI SECURITAS. We have also added a column on the Excel sheet to enter the RFID tag number (for traceability and herd management) and a DNA number. We have also included a clear set of instructions on the birth notification Excel sheet. This process has made the schedule O form redundant. The new Excel sheet is available and has being tested. An additional feature we have asked for is the inclusion of more DNA information, for example the date tested and test outcome. This means that the spreadsheet will have all the information for a once-off birth registration and cut out the current THREE step process. It will move us a lot closer to world s best practice for animal registrations. Producers with more than 50 cows should use the HerdMASTER program (a Breedplan product) or alternate that is linked to BREEDPLAN, that has been programmed specifically for South African clients. A registration submission, if correctly filled in should take staff no longer than 5-10 minutes and we please request that producers spend time to ensure that the form is correctly filled in. The staff will assist producers with their first submission but thereafter they will return the submission to the producer and assist until correctly filled. HerdMASTER has been in operation in South Africa for nearly twenty years and is thoroughly tried and tested. It is especially useful for producers using electronic tags and scales because the process is seamless. Its Crush Side Recording utility is real time and data automatically enters the program eliminating mistakes. Late birth notifications Late birth notifications extended from three to six months All Societies in South Africa charge a late birth notification fee and a reinstatement fee. We have changed the birth notification form to include all the embryo details (making the schedule O form obsolete) and DNA parentage information. Because it is going to take longer to submit your birth notifications we have extended the late notification from 90 days to 180 days. Births registered later than 180 days will incur a late registration fee. The reinstatement fee being charged is similar to the fee levied by other South African Societies. Submission of data A serious request for producers to please submit their data to the Society. Without data, the Society will simply cease to exists. 31 A Strategic plan is important to an organization because it provides a sense of direction and outlines measurable goals. In this article we will outline the mission of the Society, the corporate goals and the vision as per the strategic plan. It is important that all members buy into the strategic plan because it describes the direction that the Society aims to embark into for at least the next ten years. 32 MISSION The mission of the Wagyu Society of South Africa (WSA) is to transform the South African beef industry to be highly profitable with consumers demanding and enjoying a premium eating experience. As per the Constitution, the objectives for which the Society is established are: - To encourage and promote the breeding and the improvement of the genetic production potential of animals in the Territories To maintain unimpaired the purity of the Wagyu breed in the Territories and promote the interests of the breed by all possible and available means; To encourage the collection, preservation and development of the breed by sound selection in accordance with the accepted description of a Wagyu and to eliminate contamination by foreign breeds; To compile and maintain a Minimum Breed Standard (Schedule B) based on production testing records and visual appraisal for genetic defects and conformation in as far as it is related to functional efficiency. For this purpose, all production data shall be made available to the Council, inspectors and appointed subcommittee/s; To compile, keep and maintain accurate records of the pedigrees and particulars of all animals duly registered or recorded through the Society by the Registering Authority in the Herd Book; To be the definitive source of Wagyu information in Africa; To establish a voluntary beef certification program for Wagyu beef which integrates the entire value chain from producer to consumer in South Africa to ensure the integrity of Wagyu Beef; To be recognised as a leader in genetic and genomic technologies; and to safeguard and advance the common interests of breeders in the Territories, and generally to give effect to the objectives contemplated by the Act. 36 ROADSHOW Wagyu beef is on everyone s lips figuratively. According to role-players in the industry, Wagyu is currently the most sought-after beef in the world. The South African beef industry recently got on board and, after the establishment of the Wagyu Society of South Africa, held a roadshow across the country to fuel participation from the industry. During the Pretoria leg of the roadshow, Dr. Fanie Steyn, chairman of Wagyu SA gave an overview of Wagyu SA, focussing on the current strategic plan of the society. Corporate goals include increasing the Wagyu value chain s ability to supply premium quality beef in sufficient volume to meet market demand, to increase consumer demand for South African Wagyu premium quality beef, to socially uplift emerging beef producers, enabling their involvement in the premium quality beef market and to create an effective service company delivering value-adding services to its members and customers. Wagyu carcasses are fetching the highest prices of any beef cattle carcasses and the industry has the end consumer in mind. This sets it apart from the coloured/rare game industry which has been purely speculative without the end consumer in mind, Fanie said. Another aspect that was discussed during the roadshows was traceability in the Wagyu industry. According to the role-players, Wagyu will be one of the first breeds in South Africa to have full traceability of its animals in the entire value chain through the registered Certified Wagyu Beef protocol, audited by SAMIC. Furthermore, all breeding animals have to be DNA proven this will ensure the purity of the breed and safeguard breeders. According to Brian Angus of Woodview Wagyu Beef, beef is sold as a commodity in South Africa. The problem with this is that all beef is generic and the beef industry is governed by a classification system that is pigeonholing beef. There is therefore very little scope to differentiate between beef products without a marbling based grading system. To compete in the export market, we need to grade the same as the rest of the world, Angus says. The opportunities open to the Wagyu industry are to supply a growing niche market, to supply the domestic and export markets and to increase the market share of beef sold in the country, by improving eating quality. The Wagyu Society of South Africa has established the Certified Wagyu Beef Program (CWB) which aims to ensure the integrity of the South African Wagyu beef supply chain and so assure the end customer of product reliability and quality. Die Wagyutelersgenootskap het egter baie duidelike voorskrifte oor die unieke, permanente identifikasiemetodes en -stelsels wat gevolg moet word met diere wat deur hulle geregistreer word. Die Wet op die Identifisering van Vee, 2002 (Wet No. 6 van 2002), bevat baie belangrike bepalings waarvan alle vee-eienaars hulself deeglik behoort te vergewis. In breë trekke bepaal die Wet dat alle diere ouer as speenouderdom permanent gemerk moet wees met die unieke merk wat vir elke eienaar geregistreer is. Geregistreerde of aangetekende (stoet)vee is uitgesluit van sommige van die bepalings van hierdie Wet, aangesien die voorskrifte (grondwette) van die telersgenootskappe voorsiening maak vir die aangewese identifikasie van sulke diere. Stoettelers en eienaars van geregistreerde of aangetekende vee moet egter toesien dat die amptelike bewys van die registrasie- of aantekeningstatus daardie diere te alle tye vergesel wanneer hulle na of van openbare plekke vervoer word. Sodra n stoetdier gekanselleer word, moet só n dier binne 14 dae volgens die voorskrifte van die Wet permanent geïdentifiseer word soos alle ander kommersiële Newsletter August 2018 diere. Die keuse van merkmetode hang hoofsaaklik af van die geskiktheid vir die produsent se omstandighede en, vir stoettelers, die voorskrifte van die betrokke telersgenootskap. Die volgende faktore beïnvloed die keuse van n merkmetode: maklike aanwending sigbaarheid van die nommer maklike vertolking permanensie koste visuele aanvaarbaarheid van die merk. Dit word aanbeveel dat ten minste twee komplementêre metodes saam gebruik word om mekaar te ondersteun, sou een merkmetode faal. 1. Tatoeëring Tatoeëring behels die prik van die dier se vel en die verkleuring van die geprikte gedeeltes met n merkink wat n permanente merk laat. n Spesiale tatoeërtang met doelgemaakte tatoeërletters of -syfers word normaalweg gebruik. Tatoeëring is n baie gewilde identifikasiemetode wat op alle plaasdierspesies toegepas kan word. Diere met n gepigmenteerde vel, byvoorbeeld swart diere, word met n spesiale gekleurde merkink getatoeëer, bv. groen merkink of -pasta. Die aanbevole maksimum grootte van tatoeëerletters is 20 mm 20 mm met n 6-mm spasie tussen letters. Voordele: Die metode is betroubaar, betreklik maklik om aan te bring, lewer n permanente en peutervrye merk, is betreklik goedkoop, lewer

45 n merk wat maklik is om te vertolk, maak nie noemenswaardige inbreuk op die estetiese voorkoms van die dier nie en word deur die Wet aanvaar as n permanente identifikasiemetode van diere. Nadele: Gemengde resultate word verkry met die tatoeëring van diere met n gepigmenteerde vel, veral met swart diere; groen merkink word vir swart diere aanbeveel. Die akkuraatheid van tatoeëring as identifikasiemetode is baie afhanklik van die akkuraatheid waarmee dit aangebring word. Die metode is ook nie baie dier-vriendelik nie, en die tatoeërmerke is nie geredelik sigbaar sonder om die dier fisies te hanteer nie. Dit word dus aanbeveel dat dit gebruik word in kombinasie met n ander, meer sigbare identifikasiemetode. Die geheim van goeie tatoeërmerke wat lank leesbaar bly is n skoon merkoppervlakte sonder enige hare, wol of vetterigheid (oorwas); goeie penetrasie van die vel; en deeglike aanwending en invrywing van genoeg merkink. 2. Brandmerke en vriesbrande Brandmerk en vriesbrand behels die aanbring van n permanente brandletsel op die dier se vel; die veloppervlakte word beskadig en lyk dan anders wanneer dit genees. Met brandmerke bly die merk op die dier se vel omdat daar nie weer hare op die letsel groei nie. In die geval van vriesbrande groei wit hare op die letsel en laat dus n merk in die haarkleed. Doelgemaakte brand- en vriesysters in die vorm van letters en syfers word gebruik om die merke aan te bring. Brandysters word in n doelgemaakte gasoond of in n vuur tot nagenoeg 625 C verwarm. Vriesysters word normaalweg van koper of n hoë-kwaliteit brons vervaardig en word met vloeibare stikstof of n mengsel van etiel-, metiel- of iso-propiel-alkohol en droë ys tot n temperatuur laer as -40 C verkoel. Brandmerke is n baie gewilde metode van identifikasie veral by grootvee en perde. Vriesbrande word baie suksesvol gebruik by diere met n gekleurde haarkleed en is veral gewild by suiwelrasse en perde. Die aanbevole maksimum grootte van brandletters is 100 mm 100 mm en die minimum grootte 40 mm 40 mm met n 20-mm spasie tussen letters. Voordele: Brandmerke is baie duidelik sigbaar sonder dat die diere hanteer hoef te word. Verder lewer die metode betroubare, permanente en peutervrye merke, is betreklik goedkoop en lewer n merk wat maklik is om te vertolk. Brandmerke word deur die Wet aanvaar as n permanente metode van diere-identifikasie. Nadele: Die akkuraatheid van brandmerke as identifikasiemetode hang grootliks af van die akkuraatheid waarmee dit aangebring word. Die metode is nie dier-vriendelik nie en verg heelwat inspanning. Ten spyte daarvan dat brandmerke, en veral vriesbrande, baie netjies aangebring kan word, kan dit diere effens ontsier. As brandmerke nie op die regte area aangebring word nie, verlaag dit die waarde van die huid. Prosedure vir brandmerke: Maak seker dat al die toerusting wat benodig word by die werkplek is, skoon en in n werkende toestand is. Gebruik aparte brandysters vir elke letter en syfer enkelvoudige brandysters is makliker om te gebruik en dra by tot n netjiese brandmerk. Kies die area waar die brandmerk aangebring gaan word oordeelkundig. Brandmerke verlaag die waarde van die huid aansienlik indien dit in die waardevolle middel-area van die huid aangebring word (verwys na skets). Volg die voorskrifte van u telersgenootskap noukeurig, byvoorbeeld brandmerk so laag moontlik op die linkerboud, kuddekenmerkletters bo, horisontaal en ononderbroke, jaar- en volgnommers onder, horisontaal en ononderbroke. Bring die dier goed onder bedwang om veilige en doeltreffende werksomstandighede te Nuusbrief Augustus

46 46 verseker. Die doeltreffende immobilisering van die dier verseker die aanbring van netjiese en akkurate brandmerke. Maak seker dat die area waar die merk aangebring gaan word vry is van vuilis of stof en oormatige hare. Indien verkies, kan die hare afgeskeer word voordat die brandmerk aangebring word. Die afwesigheid van hare dra by tot n netjiese brandmerk. Maak seker dat elke brandyster warm genoeg is voor dit gebruik word. Gebruik n doeltreffende hittebron om die brandysters te verwarm. Hou die brandyster ferm maar met matige druk teen die huid vir ongeveer 3 sekondes. Verkoel die brandwond met koue water of ys om die dier se ongemak te help verlig en om die genesing van die brandwonde te bespoedig. Moenie mis of modder op die brandwonde smeer nie. Maak die brandyster na gebruik met n draadborsel skoon en verhit dit eers weer voordat dit vir nog n brandmerk gebruik word. Bring die ander karakters van die brandmerk op dieselfde wyse aan. Behandel die hele brandmerk na voltooiing van die proses met wondolie om genesing te bevorder. Prosedure vir vriesbrand: Maak seker dat al die toerusting wat benodig word by die werkplek is, skoon en in n werkende toestand is en dat daar voldoende verkoelingsmiddel beskikbaar is om die proses te voltooi. Kies die area waar die vriesmerk aangebring gaan word oordeelkundig. Volg die voorskrifte van u telersgenootskap noukeurig, byvoorbeeld vriesmerk so laag moontlik op die linkerboud, kuddekenmerkletters bo, horisontaal en ononderbroke, jaar- en volgnommers onder, horisontaal en ononderbroke. Bring die dier goed onder bedwang om veilige en doeltreffende werksomstandighede te verseker. Die doeltreffende immobilisering van die dier verseker die aanbring van netjiese en akkurate vriesmerke. Skeer die hare af in die area waar die merk aangebring gaan word en maak seker dat dit vry is van vuilis en stof deur dit te was. Maak seker dat elke vriesyster koud genoeg is voordat dit gebruik word. Laat die vriesysters in die verkoelingsmiddel totdat dit nie meer borrel nie. Vee die area waar die vriesmerk aangebring gaan word met brandspiritus of alkohol af net Newsletter August 2018 voordat die vriesyster teen die vel gedruk word. Skud die vriesysters droog wanneer dit uit die verkoelingsmiddel verwyder word. Bring die vriesmerk aan deur die vriesyster met ferm en harde druk vir die aangegewe tye teen die huid te hou: jong diere (6 8 maande oud) sekondes ouer diere (9 18 maande oud) sekondes volwasse diere (ouer as 18 maande) sekondes Maak die vriesyster skoon en verkoel dit eers weer voordat dit vir n volgende vriesmerk gebruik word. Bring die ander karakters van die vriesmerk op dieselfde wyse aan. Die hele vriesmerk kan na voltooiing van die proses met wondolie behandel word om genesing te bevorder. 3. Oorkodes / -kepe Die gebruik van kepe of merke in die ore word betreklik algemeen gebruik as bykomende sigbare identifikasiemetode by plaasvee. Die kepe of merke in die ore kan met n skerp mes aangebring word, maar die gebruik van n doelgemaakte tang lewer beter resultate. Die kepe of merke word gewoonlik aangebring wanneer die dier nog jonk is verkieslik binne enkele dae na geboorte. Die metode het mettertyd ontwikkel tot n gesofistikeerde stelsel waar n groot aantal diere teen betreklike lae koste individueel geïdentifiseer kan word. In baie gevalle maak vee-eienaars van oorkodes gebruik as ondersteuning vir ander identifikasiemetodes, byvoorbeeld oorplaatjies, om die identifikasienommer te behou indien die primêre metode faal (byvoorbeeld plaatjie verloor). Oorkepe / -kodes word nie deur die Wet erken as n permanente identifikasiemetode van diere nie. 4. Oorplaatjies Oorplaatjies is n algemene vorm van bykomende sigbare identifikasie en word vir feitlik alle plaasdierspesies gebruik. Met die implementering van die Gesertifiseerde Wagyu Vleis-program (CWB) het die genootskap daarin geslaag om n baie gunstige prys te beding met die verskaffers vir wat bekend staan as n RFID Combo-tag, dit wil sê n bestuurs-oorplaatjie, elektroniese oorplaatjie en n DNS-buisie vir n biologiese monster. Die oorplaatjies kan ook aan die verskaffer gestuur word wat die nommers met laser sal druk. Individuele oorplaatjies van die boer se keuse is ook beskikbaar in n (Vervolg op p47)

49 (Vervolg van p44) verskeidenheid van formate, kleure en groottes, en die keuse hang af van die veeboer se behoeftes en die omgewing waarin die diere aangehou word. Voordele: Oorplaatjies is goedkoop en maklik om aan te bring. Oorplaatjies van n geskikte grootte is gewoonlik redelik duidelik sigbaar sonder om die diere hoef te hanteer. Hierdie metode van identifikasie is meer dier-vriendelik as die meeste ander merkmetodes en die merk kan baie maklik vertolk word. Nadele: Soos met ander merkmetodes, is die doeltreffendheid van oorplaatjies as identifikasiemetode baie afhanklik van die akkuraatheid waarmee dit voorberei en aangebring word. Ten spyte daarvan dat oorplaatjies baie netjies aangebring kan word, is dit geneig om diere ietwat te ontsier. Oorplaatjies kan baie maklik verwyder of verander word, en beskadig of verlore raak. Daar is aanduidings soveel as 15% van beeste se oorplaatjies jaarliks verlore raak gedurende die normale bestuursprosesse. Dit is nie n betroubare, permanente of peutervrye merkmetode nie en dit word aanbeveel dat oorplaatjies saam met ander identifikasiemetodes gebruik word. Oorplaatjies word nie deur die Wet erken as n permanente identifikasiemetode van diere nie maar dit mag verander namate peuter-vrye oorplaatjies beskikbaar word. 5. Elektroniese identifikasie Daar is verskeie vorms van elektroniese identifikasie vir diere en elektroniese oorplaatjies is waarskynlik die mees gewilde metode. Hierdie tipe identifikasiemetodes staan ook bekend as RFID s: Radio Frequency Identification Device, omdat hulle op die beginsel van n radiosender en -ontvanger werk. Om RFID s sinvol te benut, moet dit tesame met n ontvangstoestel, wat die seine van die RFID kan opvang en vertolk, gebruik word. By die keuse van n elektroniese identifikasiemetode is dit belangrik om te let dat die spesifieke item sal voldoen aan die voorskrifte van ICAR, soos onderskryf deur die Wagyu beestelersgenootskap, ten opsigte van die onderlinge versoenbaarheid met ander RFIDtoestelle soos lesers en toestelle van verskillende vervaardigers. Voordele: RFID s is die mees akkurate en betroubare identifikasiemetode vir diere en is die eerste stap na n ten volle ge-outomatiseerde en geïntegreerde inligtingstelsel vir diere. Dit is meer dier-vriendelik as die meeste ander merkmetodes en is betreklik maklik om aan te wend. Elektroniese oorplaatjies kombineer goeie sig- / leesbaarheid van die dier se nommer met die betroubaarheid van n elektroniese transponder. Nadele: Die grootste nadeel van RFID s is dat dit betreklik duur is en dat die gebruik daarvan n redelike groot aanpassing in die boer se hele aantekeningstelsel sal verg. Met sommige RFID s is dit nie moontlik om n visuele identifikasie van n dier te verkry nie. Een van die grootste probleme van RFID s is dat dit n ontvangstoestel vir interpretasie verg. In die meeste gevalle is die reik- of leesafstand van die ontvangers nog baie beperk, wat die praktiese gebruik van die stelsel verder benadeel. RFID s in die vorm van oorplaatjies het verder ook dieselfde inherente nadele as gewone oorplaatjies. Elektroniese identifikasietoestelle word nie deur die Wet erken as n permanente identifikasiemetode van diere nie maar dit mag in die afsienbare toekoms verander. Prosedure: Diere kan op enige ouderdom met RFID s gemerk word. Die aanwendingsmetodes van die verskillende tipes RFID s verskil en al die vervaardigers van sulke toestelle verskaf duidelike aanwysings. Waar nodig, volg die voorskrifte van u telersgenootskap noukeurig oor die formaat en versoenbaarheid van die RFID wat gebruik word en waar die toestel aangebring moet word. Opsomming en aanbeveling Die Wet vereis dat alle plaasdiere in Suid- Afrika permanent geïdentifiseer of gemerk moet wees. Baie produsente sal n kombinasie van identifikasiemetodes gebruik. Die Wagyu Genootskap het sy Gesertifiseerde Wagyu Vleis-program (CWB) geloods en deelnemende telers (stoet sowel as kommersieël) moet die amptelike CWB oorplaatjie-kombinasie gebruik. 54 If producers are in a calving season, the whole batch of weaner s should be submitted. This should happen at weaning of calves from their mothers (between 6 and 7 months of age). As Table 1 shows the age range for submitting weaner s to Breedplan is between days so early weaning is also easily accommodated. The wean data will then automatically be grouped ( sliced ) into seasonal groups by the Breedplan system according to age. As shown in table 1, the seasonal grouping for weaning weight is a 45-day period. The system will automatically count 45 days from its first calving date. For example, if the first animal for a particular year is born on the 1st of September, the program will automatically group animals up to 15 October, to the 30th of November, etc. Producers calving down in January and February should inform the office to group their animals with the animals from the previous calendar year. The goal for a beef breeding enterprise should be to have a 12-month (365 day) inter-calving period. Lets assume the breeding season is from 1 October 31 December. Cows will then calve down from approximately 1 July - 31 September. Assuming that calves are weaned at approximately 210 days of age (7 months), the cows will be weaned at the end of March. Weaner s should then be between days old. Of course, a longer breeding season will have a longer age range but it should still be sufficient for the Breedplan system. For producers not in a calving season, the system will group animals according to a calendar year, i.e. it will start on January 1 to February 15, February 16 to March 31, etc. These producers should weigh batched of weaner s at least 4 times a year to ensure that all animals are being weighed. Weights should simply be sent in on a quarterly basis, i.e. March, June, September or December. Management/Performance groups The Breedplan system will automatically group animals from the same herd, calving year and sex. It will then follow the age slice grouping algorithm, as described above. Very important is for users themselves to record animals that received a different treatment that would influence their performance. This treatment may be deliberate (e.g. feeding group) or accidental (e.g. sick calf). Examples where animals should be recorded in separate groups, are: Animals fed for show Animals put on farm growth tests, i.e. being grain fed Sick animals Breedplan will also not compare singles with twins, embrio-trancipients with natural calves (these should be done using a specific form) and will automatically sub-group heifers up to 3 ½ years of age. While grouping animals that have been treated alike is very important excessive grouping can be counterproductive as it can result in very few animals finally being evaluated together. General comments The direct comparison of like treated animals is one of the most important aspects of genetic evaluation. If the management/performance groups are not compatible, the EBV s will also be incorrect and probably misleading. It is also important to ensure that records from all animals in a group are submitted. To give a slightly higher accuracy, Breedplan can accommodate two weights per trait. If a second weight is taken for 400-days for example, it should be done on the whole group of animals that was previously weighed at 400-days. The Breedplan program will automatically account for selection that take place at weaning. 59 Woodview Wagyu INLIGTINGSDAG from the REGIONS Woodview Wagyu het op 13 April 2018 n Wagyu inligtingsdag aangebied. Die doel van die dag was om ons Suid-Afrikaanse Wagyu telers die geleentheid te gee om meer informasie oor die Wagyu bedryf wêreldwyd in te win. Die sprekers was kenners oor hulle vakgebied en het gesorg dat die dag een van die leersaamste inligtingsdae was wat nog in Suid-Afrika aangebied was Dit was n baie suksesvolle geleentheid met onder andere 4 wêreldklas oorsese gassprekers naamlik Dr Joe Grose, Dr Kevin Sullivan, Dr Aaron Cooper en Greg Gibbons wat die nuutste inligting oor Wagyu teling gedeel het. Van ons ander sprekers was Dr John Purchase van Agbiz, Dr Mike Bradfield SA Wagyu CEO, Dr Munro Marx van Unistel, Mnr Wolf Edmayr van BKB en Megan Angus. Meer as 200 mense het hierdie geleentheid bygewoon. 63 GROOT planne met Wagyu bul van R1,85 miljoen Die hoogste prys nóg R1,85 miljoen is pas vir n rasegte poenskop-wagyubul betaal deur mnr. Johan Strydom, n Suid-Afrikaanse aktuaris wat in Engeland woon en werk, maar ook in die Suid-Vrystaat boer. Met sy groot toekomsplanne vee hy die opvatting van n borrel wat kan bars uit die pad. Wanneer n mens R1,85 miljoen vir n bul betaal en n opskudding in die vleisbeeswêreld veroorsaak, moet hy beslis vertroue in die ras en in homself hê. Dit is presies só n kalm, rustige vertroue wat Johan (40) uitstraal toe Landbouweekblad met hom gesels in sy huis in Gordonsbaai, net n dag voor sy vertrek na Engeland. Johan het as aktuaris reeds sy stempel in Brittanje afgedruk in die korttermynversekeringswêreld deur die mark daar te ontwrig deur sy buitengewone vernuwing in die motorversekeringsbedryf. My plan is om ook die vleisbeesmark in Suid-Afrika te ontwrig ek gaan die beste Wagyu-teelmateriaal ter wêreld op die plaaslike mark loslaat. Die Wagyu, wat vanweë sy uitsonderlike vleisgehalte astronomiese pryse behaal, is geen foefie of borrel wat kan bars nie, verseker hy. BESONDERSE PRODUK Johan vertel hy het in 2015 die eerste keer met hierdie befaamde Japannese vleisbeesras in aanraking gekom. A limited amount of top semen and embryos exchanged hands. The first lot on sale was three straws of semen from the bull Midnight. This bull is a polled purebred bull with both good marbling and growth. The bull was recently purchased by Johan Strydom of Prime Wagyu in Aliwal North for R1.85 million from Australia. 69 What Australian cattle breeders are doing with GENOMICS Using modern technology to predict an animal s genetics is the way forward for the cattle breeding industry, Graham Truscott, international consultant to the Wagyu Society of South Africa, said at the Namibian Livestock Producers symposium in Windhoek last month. Graham, former CEO of the Australian Wagyu Association and also CEO of Angus in Australia, played an enormous role in getting Wagyu breeding in South Africa off the ground. Using BREEDPLAN, a modern genetic evaluation system for beef cattle breeders that offers them the potential to accelerate genetic progress in their herds and to provide objective information on stock, breeders can have access to the prediction of an animal s genetics. Genetic improvement results from selection of aboveaverage candidates as parents of the next generation. In a competitive market, aboveaverage candidates would be those that improve commercial performance, consumer satisfaction through improved eating quality, purchase cost, long-term health implications of consumption and the welfare of the animals. Seedstock suppliers that sell bulls to cowcalf producers are expected to develop and implement breeding programs that provide successive crops of bulls that outperform their predecessors Graham explains that if you improve genetic selection you deliver improvement for the entire value chain in the cattle breeding industry. BREEDPLAN provides continuous product improvement and focuses on every section of the supply chain. This is done through its database and information provided to its members and the public. It is important to register the accurate identification of the sire and dam for seedstock production purposes because inaccurate pedigrees cause errors in the BREEDPLAN programme s genetic analysis, Graham says. These genetic analysis errors are further compounded with more progeny. MOVING TO SNPS Major breed societies are rapidly moving from microsatellites, the current industry standard, to Single Nucleotide Polymorphism (SNP) genotyping. The reason for this is that microsatellites can only be used for parent verification whereas SNPs can be used for multiple functions, such as parent verification, and even parent discovery. If all the previous animals in a database are genotyped, you will be able to find the sire and dam that is parent discovery and genomics can determine that. This is useful in seedstock herds because if you know the female base and you know the group of bulls that you put in there then you can get parent discovery to find a match. Even more important, an animal s SNP genotype can be incorporated into Single Step BREEDPLAN to further increase the accuracy of EBV predictions. Another benefit of SNP genotyping is that you can take one genotype for an animal, store Nuusbrief Augustus

70 70 it and you can keep re-using it for different purposes as technology advances, such as testing for genetic conditions. SNP technology is becoming cheaper whereas microsatellite prices are increasing. There are various levels of SNP genotypes, from 500, 50K, 150K to 770K. 770K is a high density test for original seedstock that is used to establish a breed. The industry standard is a 50K chip. GENOMIC SELECTION DOES IT WORK? Genomic selection created two big opportunities in the breeding process in Australia: first, it ensures faster genetic progress because it enables the breeder to select the animals at a younger age and secondly, it gives more precise control of the direction of progress. You can select traits in young animals that are either hard to measure or only measured later in life. Graham says that previously selecting for lean against fat produced animals that had a better lean meat yield, but also a decline in intra-muscular fat which meant the meat became leaner but also tougher and drier. Having access to genomic estimated breeding values (EBV s for Eating Quality and Lean Meat Yield), breeders are able to choose the best balance. Genomic selection therefore enables breeders to drive more than one trait effectively. He further explained that genomic selection only works when you have good quality phenotypic data for the traits that you are interested in: Genomic selection only delivers its benefits early selection and particularly the detection of hardto-measure traits if you have a lot of good phenotypic data on those traits. If not, you usually get very small increments of Newsletter August 2018 accuracy from small adjustments to relationships. The economic challenge of continuing to get 500 to1 000 good phenotypes (and genotypes) on a sound sample for a breed per year, is an economic challenge beyond most breeds, at least as they currently operate. And it is not a shortterm research and development project it is the price of being in the genomic selection game, he said. BREEDPLAN SINGLE STEP HOW DOES IT WORK? The use of BREEDPLAN Single Step integrates genomics into traditional genetic evaluation, allowing for more accurate calculation of EBVs. Traditionally, EBVs used only pedigree data coupled with performance data to estimate the genetic similarity of animals. BREEDPLAN Single Step however analyses all genomic, pedigree, and performance data in one model. This genomic data is more accurate in measuring the relatedness, and therefore the genetic similarity of animals. In essence, the new Single Step analysis relies more on genomic relationships than pedigree relationships, leading to more accurate EBVs. An excellent attribute of BREEDPLAN Single step is that it corrects pedigree errors. It also identifies all the other related animals to the one that you are trying to predict, and in that way enables one to gather more information on that animal. With ongoing analysis, a valuable feature of BREEDPLAN Single Step is that it shows which SNPs relate to which traits. The basis of genomic prediction is to measure lots of related animals for their phenotype and DNA genotype to get a reference population. Through analysis Single Step BREEDPLAN then produces genomic breeding values which can be used to predict the performance of animals with little or no performance data, such as very young animals. This enables the selection of animals at an early age for reproduction, so reducing the generation interval and accelerating genetic gain. Performance records are gold, Graham stresses. Keeping good record of what he calls the 3 P s of genomics phenotypes, phenotypes, phenotypes is of the essence of seedstock breeding. THE GENOTYPING PROCESS A boost to the Australian beef industry is that their government contribute to research and development funds by matching levy funds collected within the industry dollar for dollar - thus putting up half of the funding for research and development in that country. All sectors of the industry can apply for this matching R&D funding. The practical genotyping process involves taking DNA samples (hair, semen or tissue) which are submitted for testing by the breed society. After conducting genomic tests and storing the samples, laboratories send the results back to the association, where they are put into a genotype database. Through a software programme the database information is used to offer a parent verification and parent discovery service to its members and the genotypes are included in Single Step BREEDPLAN analysis. Cooperation between the Australian Wagyu Association and its South African counterpart will enable these societies to share genotypes and genetic condition tests to establish a Single Step breeding program in South Africa.
