6 Nutrition Module Overview In today s health-conscious environment, food service operations are often encouraged or even required to provide nutritional information to their customers. Factors that are driving this demand include special dietary concerns or restrictions, institutional requirements and competitive pressures. Many states now require nutritional information to be posted on the premises and call for nutritional labels to be placed on all products for take-out. The FOOD-TRAK Nutrition Module simplifies the task of identifying and publicizing the nutritional value of food or menu items by providing nutritional data on complete meals or individual food items (served or sold) according to the United States Department of Agriculture (USDA) standards and Recommended Daily Allowance (RDA) data. Specifically designed for foodservice operations, such as K-12 schools, universities, supermarkets, healthcare institutions and restaurants, the FOOD-TRAK Nutrition module makes the process of creating and documenting the nutritional content of your products quick and easy by: Tracking the nutritional content of each item Calculating the content of recipes using those items Producing standard USDA style labels Reporting on the nutritional content of each product using the USDA Nutritional Database Please contact an Account Manager for additional information and pricing Create and view the nutritional content of their recipes or individual menu items immediately. The module uses either the accompanying USDA database and/or client-supplied nutrition data to calculate nutritional values for raw ingredients and complete recipes, providing an accurate method of monitoring the nutritional values of items purchased and menu items served. It meets the U.S. Government s legal requirements for nutritional labels and gives the consumer the information they need to make informed and healthy choices on what they purchase or consume. 7 Multiple Nutritional Information Sources Provides several options for creating nutritional data. Single Inventory Items You can assign or access nutritional information in two ways: Use the USDA s Standard Nutritional Database consisting of over 6,000 raw food items to provide nutritional data. This database is pre-loaded on the FOOD-TRAK system and is best used for single items. Create your own nutritional model by assigning specific nutrient information to items (e.g. from a label or laboratory analysis information). Easily enter specific amounts and nutritional information. Completed Recipes The FOOD-TRAK Nutrition module accesses the nutritional information for each ingredient and automatically adds it to the recipe in the appropriate quantities based on the recipe definition. The module also identifies items in the recipe that have no nutritional tracking data. Nutrition Module Reports A variety of reports can be generated containing several types of analysis and summary information. For users needing nutritional details, reports are available for an item s Required Daily Intake (RDI), as well as its full nutritional components. Item Nutrition Report provides users with general nutritional information and displays the nutritional value and RDI (Reference Daily Intakes) in a report format useful for internal analysis of menu offerings. It is useful in determining the better dietary alternative. Saleable Item Nutrition Report is the same as the Item Nutrition Report except it reports on the nutritional content of a saleable item. Item Nutrition Labels can be printed in two styles - a one-per-page format or as an Avery 5163 (2 x4 ) label. Labels can be placed on take-out items, printed directly on menus or on bakery and deli item packages. Barcodes can be included on the labels in order to scan the items during inventory. Recipes and menu items are displayed in the same easy-to-read format that consumers have become accustomed to on pre-packaged goods. 8 ANALYTICS Interactive Sales Analysis Sales analysis is critical to most clients, and the ability to drill down through this type of data can provide numerous insights. In this example, a client performs an analysis of sales activity by profit center over a three month period. Ranked by sales, (rankings are also available by cost, contribution margin or product group) the graph shows store 12 as the highest grossing store, followed counter-clockwise by the next nine highest stores. Selecting store 12 provides a closer look (see below). As with all the analytic reports provided by the FOOD-TRAK System, the second level graph shows ranked item level detail. In this case, menu items sold in that store are ranked from highest volume to lowest (scroll bar below allows the user to slide across the graph to see all the menu items sold in that store during the period. Pesto Chicken was the highest grossing menu item. By selecting that item, the client drills down to the list of actual sales mix forms that contained sales of the Pesto Chicken (see next page). 9 ANALYTICS Interactive Sales Analysis As with all third level analytics, the next report identifies the list of source documents upon which the item in question can be found. The four forms associated with sales of the Pesto Chicken are listed on the report. By selecting any single form, the actual form the numbers came from is displayed. At the fourth level, the source document is displayed. This type of analysis capability provides information from the highest level to the lowest through the drill-down functionality, allowing detailed research and informed reaction. ANALYTICS

10 ANALYTICS Interactive Spend Analysis A variety of interactive Business Intelligence functions are available in the FOOD-TRAK System. Clients identify the scope of the analysis they wish to perform and can then see ranked graphs with drill-down capabilities to do further exploration and research. Spend analysis is one type of analytics offered by the FOOD-TRAK system. Like all other analytic functions, the client defines the scope and parameters for the analysis and receives a ranked graphical representation of the top nine performers and all others included in the 10th slice, based on the criteria selected in the scope. In this example, the client is examining spend by profit center. Spend analysis ranking can also be performed by vendor or report group. The second level of spend analysis identifies the items associated with the selected group. Items purchased by store 11 are displayed in ranked order in the subsequent drill-down. Selecting any individual item drills down to the invoices associated with that item s purchases (next page). ANALYTICS

11 ANALYTICS Interactive Spend Analysis In this case, the client decided to review all purchases of the ground chuck. The drill down report shows by invoice every purchase during the time period selected, along with the quantity and cost. Selecting any particular invoice line item reveals the actual invoice itself. As with other analytic reports provided by the system, the final level is the source document, providing the ability to perform research from the highest to lowest level. ANALYTICS
