10 HACCP HACCP, is a methodology that allows you to apply self-control in food businesses in a rational and organized way. The HACCP system is designed to identify, prevent and control risks that could compromise the safety of a food and consequently the health of consumers. The first requirement that has introduced HACCP in Europe it was the regulation 43/93 CEE transposed in Italy with the decree law 155/97. This has been replaced by the Reg CE 852/04 currently in place. The workers formation of the food compay, it s an essential prerequisite without whom it coulnd t be possible to guarantee the correct and adeguate application of the HACCP system.
