1 Palos Verdes Peninsula Unified School District Human Resources Department 375 Via Almar Palos Verdes Estates, CA (310) Classified Employee Food Services Manager Central Kitchen JOB DESCRIPTION Supervisor Director of Food Services/Designee Work Year = Student Year Salary Range 24 DEFINITION Under direction, to plan, organize, schedule, and supervise food production kitchen operations and staff; to prepare and maintain a variety of records and reports; and to perform related work as required. TRAINING AND EXPERIENCE Any combination of training, education, and experience which demonstrates possession of the knowledge and abilities stated in this job description and the ability to perform the duties of the position for which the selection is being made. A typical qualifying entrance background is supervisory experience in institutional food production where assembly line food preparation, wrapping, and transportation are involved; and, completion of vocational training in institutional large quantity food production and sanitation. QUALIFICATIONS Knowledge of: The National School Lunch Program; Planning, organizing, and scheduling the preparation of pre-packaged food in large quantities; Practices, methods, and equipment use in preparing and packaging large quantities of food; Use of weighing and measuring devices; Principles of safety and sanitation; Proper operation of and correct maintenance procedures for food production line equipment; Basic mathematics; English usage; Record keeping techniques; Principles and practices of supervision and training. 2 Appropriate safety precautions and procedures; Possession of a valid and appropriate California Driver s License and insurance is required as a condition of employment. Major Duties & Responsibilities Responsibilities include (but are not limited to): Check and direct employees; taste food. Order food by filling out forms and check in food and supplies. Inventory supply room. Serve breakfast and take money. Write out ticket books, count tickets, and prepare daily report sheets. Cook for lunch. Remove sheets from transport carts and prepare sheets for next day, using adding machine. Convert units of measurement for food service warmers. Close and lock refrigerators, freezers, doors; turn off oven. Fill all phone orders for take-out sandwiches and salads. Remove milk from refrigerator and pull out to cafeteria for serving. Attend meetings. Move boxes in walk in freezer. Send all money and signed receipts to food service office. Inventory daily, weekly, monthly, and annually food and equipment. Clean and store equipment; and prepare orders for next semester/trimester. Perform other job related duties as assigned by supervisor. Ability to: Plan, organize, and supervise the production of pre-packaged food and the transport operation for receiving sites; Schedule work to produce required foods at a specific time; Make arithmetic calculations involving fractions and decimals; Read, interpret, apply, and explain rules, regulations, policies, and procedures; Maintain records and prepare reports; Analyze situations accurately and adopt an effective course of action; Train, supervise, and evaluate personnel; Establish and maintain effective relationships with those contacted in the course of work; Speak English at a conversational level; Wear protective clothing/safety gear in accordance with established standards; Participate in employer mandated training and re-training programs; Comply with rules and regulations of the Classified Service, Policies/Regulations of the Palos Verdes Peninsula Unified School District, and provisions of collective bargaining agreements.
