3 Warranty These conditions must be read in conjunction with the Moffat Limited s Terms of Sale and Delivery for Business Customers, section 9 Warranty. WARRANTY Moffat Limited warrants that the equipment, as supplied by Moffat Limited to the original purchasers, is free from defects in materials and workmanship. Should any part thereof become defective as a result of normal use within the period and limits defined below, then at the option of Moffat Limited such parts will be repaired or replaced by Moffat Limited or its Nominated Service Provider. The warranty time period shall be 24 months parts and labour warranty from the date of installation. This warranty is subject to the following conditions: Repairs under this warranty should be performed by a Moffat Nominated Service Provider. Moffat Limited will not be held responsible for charges incurred or service performed by Non-Moffat Nominated Service Providers unless prior approval to the repair has been given by Moffat Limited. Repairs pursuant to this warranty should be carried out between the hours of 8.00am and 5.00pm Monday to Friday. Out of hours call-out rates and charges may not be accepted without prior agreement. All installations must be carried out in accordance with local Installation Code and Local Authority requirements covering electricity, gas, fire, health. Installation and commissioning procedures are to be carried out in accordance with the instructions in the manuals supplied with all units. EXCLUSIONS The Equipment warranty specifically relates to component failure. Consumables, component adjustments and the resetting of safety devices are covered under warranty only for the first 30-days from date of installation except items listed in 1, 2, 3. The warranty does not extend to nor will Moffat Limited be liable for the following; 1. Installation issues i.e.) Adjusting and correcting installation issues, including; Adjustments associated with the commissioning of the machine or requirements specified in the products user manual, e.g./ checking operation of door switches, setting switches in correct position, checking drive chains, etc. Incorrect installation not carried out in accordance with the instructions in the manuals supplied with all units. 2. Connecting services i.e.) any connecting service that does not meet the equipment specification, including; Electrical supply cabling and/or mains connections made by other parties. Electrical connecting plugs made by others and/or wall socket outlets. Gas supply pipe work and or connections made by other parties. Gas flow or pressures issues. 3

4 Water supply (hot or cold) pipe work and or connections made by other parties. Water quality and/or water temperature outside equipment specification. Drains and or connections made by others and/or pipe work not specifically part of the equipment supplied. 3. Abuse associated with wilful and/or deliberate damage i.e.) any part of the unit which has been subject to; Misuse and/or wilful damage. Neglect. Incorrect operation. Accidental damage. Damage caused by movement or transportation by other parties. Freight damage (where freight is not paid for by Moffat) Use of abrasive or incorrectly specified cleaning chemicals. Water ingression and/or damage due to incorrect cleaning procedures. 4. Glass including the following; Door glass panels. Globes/bulbs and fuses when blown due to globes/bulbs failure Lens covers. Gauge glasses. 5. Seals i.e.) Rubber/silicon products - including; Door seals. O-rings. Light seals. Drive belts. Cabinet Sealants 6. Cleaning and maintenance including; Costs associated with cleaning the equipment so as to gain access to relevant fixtures and components. All lubricants and any cleaning materials used. Rusting and/or corrosion. Descaling. Blocked gas pilots and/or injectors. Blocked solenoid body s. Blocked drains, drain pipes and/or failure of components due to a blockage. Failure of the equipment s components where directly due to the lack of cleaning and/or maintenance. Costs associated with performing general equipment servicing. Tightening and/or adjusting tension of drive chain or v-belts. Tightening, adjusting tension and/or tracking of conveyor belts. 7. Missing items including; Lost components, fittings and/or attachments. 4

5 8. Resetting of tripped safety devices where equipment and where no other fault exists including; Tripped over temperature devices. Tripped overload devices. Tripped circuit breakers. 9. General exclusions including; Supply hoses and/or drainage lines not supplied by Moffat Limited. Fitting of any non-genuine Moffat Limited component will void warranty. Any modifications or alterations to equipment not approved by Moffat Limited. Addition labour costs associated with poor access. No-Fault found calls. Where operator error is established. 10. General exclusions for remote sites including; Travel charges outside 100km travel distance or 2 hours travel time, round trip from nearest service centre Additional costs incurred (without prior approval) for any; o Accommodation. o Ferry/barge charges. o Associated waiting time relating to attending remote sites. o Car hire. o Personnel allowances o Flights 5

8 Safety Before using your new Holding Cabinet, please read this instruction manual carefully, pay particular attention to any information labelled WARNING, CAUTION, IMPORTANT or NOTE in this manual. Warning Caution Indicates a hazardous situation which, if not avoided, will result in death or serious injury. Indicates a hazardous situation which, if not avoided, will result in minor or moderate injury. If you are unsure of any aspect of the installation, instructions or performance of your oven, contact your TURBOFAN dealer promptly. In many cases a phone call could answer your question. Should you contact your TURBOFAN dealer on any matter concerning this oven, please have the information provided below, readily available. This manual must be kept by the owner for future reference. A record of Date of Purchase, Date of Installation and Serial Number of the oven should be recorded in the area provided below. The serial number of this oven can be found on the Technical Data Plate located on the front right hand side panel, see diagram in Installation Section. 9 1. Instructions for use 3.1 Operation Using Crew Mode 1. CONTROL OFF key to turn control ON. 2. CONTROL ON CREW to start using Holding Cabinet. to show HELP (All screens) to turn oven light On/Off. to cool down oven. to turn OFF controller. 3. PRE-HEATING Pre-Heating will occur automatically. to show HELP to return to previous NOTE: Pre-heating only occurs in initial start-up 4. SELECT SHELF Shelves shown in Blue Not Acve. Timers display preset hold me ready for use. When Select Shelf appears; Load trays by shelf number. to show HELP to return to previous 9

10 5. Select HOLD TIME Select Hold Time 1 or Hold Time HOLD TIME START Selected Hold Time will start automatically on shelf selected. When shelves are yellow, Hold Time 1 is running. Product Available. When shelves are green, Hold Time 2 is running Product Available. Showing remaining Hold Time. Hold Timers running. Display shows remaining Hold Time every 3 seconds. 7. CANCELLING HOLD TIMER shelf for 2 seconds to cancel, in case of incorrect shelf selection. NOTE: Shelves can be cancelled at any time. 8. HOLD TIME EXPIRED Shelves with expired Hold Time will show in Red. Buzzer sounds / flashes on shelf display that has turned red. Remove trays / product. Cancel shelf alarm by pressing shelf shown in red. Shelf returns to blue (Ready State). When shelves are Red; Hold me has expired. Unload trays discard product. shelves shown in Red to cancel alarm. Discard Product. 10

11 3.2 Manager Mode Hold Temp/Timer Programming 1. ENTER HOLD TIMER PROGRAMMING in Manager Mode, to enter Hold Temperature and Timer settings. to show HELP to exit. for next MANAGER 2. SET HOLD TEMPERATURE This Temperature is global for all Shelf Timers. Enter Hold Temperature in keypad. to show HELP to return to previous to confirm. to cancel. 3. SELECT SHELF NOTE: The Shelf Select, Cool Down Time and Product Hold Time has to be set for each shelf being used to Select Shelf # Toggle Shelf # to scroll thru SET HOLD TIMERS SET HOLD TIME 1 - to set Hold Time 1 Range 0-4 hrs. Enter time in keypad, to confirm. to cancel. 11

17 4. Installation 4.1 Installation Requirements Important: Installation shall comply with local electrical, health and safety requirements. It is most important that this Holding Cabinet is installed correctly and that Holding Cabinet operation is correct before use. If you have any questions regarding the proper installation and / or operation of this Holding Cabinet, please contact your local Turbofan distributor. Unpacking 1. Remove all packaging 2. Check the equipment and parts for damage. Report any damage immediately to the carrier and distributor. 3. Check that the following parts have been supplied with your Holding Cabinet:- Side Racks 4. Report any deficiencies to the distributor who supplied your Holding Cabinet. 5. Check that the available power supply is correct to that shown on the Rating Plate located on front lower corner of right hand side panel. Refer to Technical Data in Specifications section. Refer to Specifications section, Oven Specifications Tables Location 1. Position the Holding Cabinet in its working position. 2. The Holding Cabinet should be positioned so that the operating panel and Holding Cabinet shelves can be easily reached for loading and unloading. Technical Data Plate Location 17

18 Clearances To ensure correct ventilation for the motor and controls, the following minimum installation clearances are to be adhered to:- H10T-LMD H10T-RMD Rear 50mm / 2 50mm / 2 Left Hand Side 50mm / 2 75mm / 3 Right Hand Side 75mm / 3 50mm / 2 Clearance From Source of Heat A minimum distance of 300mm (12 ) from the appliance sides is required. 4.2 Electrical Connection Warning This Holding Cabinet must be earthed / grounded. If the supply cord is damaged, it must be replaced by a suitably qualified person in order to avoid a hazard. The appliance is supplied with a cordset fitted. Check that plug is correct for electrical supply. 4.3 Initial Start-Up Before using the new Holding Cabinet; 1. Please refer to Operation Section of this manual for details on how to correctly operate and shutdown Holding Cabinet. 4.4 Technical Data Plate Location Technical Data Plate for the H10T Holding Cabinet is located at bottom left corner of RH side panel. 18

19 5. Ordering Parts/Service Important: Only genuine authorized replacement parts should be used for the servicing and repair of this Holding Cabinet. The instructions supplied with the parts should be followed when replacing components. For further information and servicing instructions, contact your nearest authorized service provider or Turbofan Dealer. When ordering replacement parts, please quote the part number and the description as listed below. If the part required is not listed, request the part by description and quote model number and serial number which is shown on the Technical Data Plate. 19

20 6. Cleaning & Maintenance 6.1 Daily Cleaning NOTE: Clean interior of Holding Cabinet first. This prevents build-up of soil and fingerprints on exterior of Holding Cabinet whilst cleaning the interior of each unit. 1. Activate Holding Cabinet oven cool-down function on the controller. Open oven door. When temperature reaches 50 C Holding Cabinet will shut down. Always turn Off power to cabinet before commencing cleaning. 2. Put on heat resistant gloves and remove side racks from the cabinet. 3.Take cabinet side racks to the 3 compartment sink. Wash side racks using the small wares cleaning brush and sink detergent solution. 4. Rinse side racks with clean, luke warm water and sanitize for a minimum of one minute in fresh, lukewarm Sanitizer Solution. Allow side racks to air dry. 5. Spray soiled interior areas of holding cabinet with QSR Heavy Duty Degreaser solution and scrub with a non-abrasive pad. NOTE: Do not spray cleaner into the fan / heater area. 20

21 6. Rinse Holding Cabinet interior, including door seals with a clean sanitizer soaked towel. Remove all film. Allow to air dry. 6.2 Monthly Door Seal Check To ensure efficient and correct operation of the holding cabinet door seal. Damaged door seals can affect the operation of the holding cabinet and quality of product being held. 1. Isolate holding cabinet from electrical supply. Isolate cabinet by following the Electric Isolation Procedures. Holding cabinet must be cold before commencing task. Holding cabinet may be hot. 2. Inspect holding cabinet door seals. Check the holding cabinet door seals for wear and damage. 3. Replace door seals if worn or damaged. Replace damaged door seal with Part No Door Seal. To remove the door seal, pull the 1 piece seal forward until it pulls out of the location groove around the holding cabinet door. Note the way the seal is fitted to the holding cabinet, with the lip facing inwards. To replace door seals, seal lip should face into the holding cabinet opening. the door seal into the locating groove in the front face of the holding cabinet until the seal is properly located all around the holding cabinet door. 21
