Country of Origin Labelling - New Zealand CoOL for New Zealand is being driven by produce. Push to increase the visibility of New Zealand sourced products. Countdown have always labelled Country of Origin, but not on the front of pack. We are now including On Fresh packaging 28

Allergen Labelling Change Due 25 May 2018 On 25 May 2017 Food Standards introduced changes to allergen labelling requirements in Standard Effective as of 25 May 2018 ALL food products must adopt the new labelling requirement. 41 What s the Risk?

SEP and Risk Assessment 10 Sections in SEP Base Std 6 CoP s

Risk Assessment Three Key Steps Risk Identification Risk Analysis Risk Evaluation

Risk Identification Methodology Risk Identification Risk Analysis Risk Evaluation Hazard Rating Significant Hazards CCP determination Biological Chemical Physical Allergens Control Measure(s) Critical Limits Monitoring Methods Corrective Action Verification

Risk Identification Sources of Risk What could happen? Where? When? How? Causes?

Risk Analysis Risk Identification Risk Analysis Risk Evaluation Hazard Rating Significant Hazards CCP determination Biological Chemical Physical Allergens Control Measure(s) Critical Limits Monitoring Methods Corrective Action Verification

Risk Analysis Objective is to provide information to: Allow risks to be prioritised Determine the significance of the risk Make informed decisions regarding how to control the risk

Risk Evaluation Methodology Risk Identification Risk Analysis Risk Evaluation Hazard Rating Significant Hazards CCP determination Biological Chemical Physical Allergens Control Measure(s) Critical Limits Monitoring Methods Corrective Action Verification

Risk Evaluation Significant Risks? Apply the specific requirements of the Standard/CoP OR Identify an effective alternative method What should the control(s) be? Where will we apply the control(s)? How are we going to monitor the control(s)? What records should we keep to show that the control(s) work? How will we verify that the control(s) are effective on an ongoing basis?

Risk Evaluation - Validation vs Verification Validation Validation considers the technical validity of the plan and basically asks 'if the plan were followed would a safe product be produced?' Verification Verification looks at compliance with the HACCP plan in practice and asks 'has the plan been effectively implemented, and are the controls being followed in the everyday operation of the business?

Product/Process Failure Root Cause Analysis Important that the true problem is understood before action is taken to address failure A systematic method to identify the root cause ensure actions eliminate / prevent the failure 5 Whys : question asking technique used to explore cause / effect relationships Return to Risk Analysis Revise Control Method & Evaluate
