Head Chef - Dorney Lake General Background Eton College was founded by King Henry VI in 1440 for 70 King s Scholars. In addition to the King s Scholars housed in College, there are now 1,240 Oppidan boys at the school in 24 other boarding houses. Eton s academic results are good by any standard. The demand for places at the school remains very high. There are 155 full time academic staff and 650 other permanent staff including domestic staff (in the boarding houses and in the central dining hall), technicians, grounds-men, administrative staff, security, cleaners and a large buildings department. There are also 100 part-time and temporary teachers, including visiting music teachers. The school and its immediate grounds and playing fields extend over 400 acres from the north end of Eton High Street to the M4 by Slough, bounded to the east by the Thames and to the west by a railway. There are some 400 school buildings, including staff accommodation; and a 2,000m rowing lake set in a 450-acre parkland at Dorney. Dorney Lake Dorney Lake is a modern world-class rowing and flat-water canoeing centre set in a spectacular 450-acre parkland near Windsor. The site hosted the Rowing and Kayak events during the Olympic and Paralympic Games for London 2012 and was voted top Olympic venue by an exit poll of spectators. Constructed and privately owned by Eton College, Dorney Lake is managed and operated by Eton College Services Ltd. As well as sporting activities we provide year-round corporate and private hospitality facilities through our in-house events and catering team and we can tailor an activity package on land and/or water to meet each client's requirements. There are three meeting rooms which are ideal for conferences and meetings. Set in picturesque and peaceful surroundings, overlooking the rowing lake, the facility offers a unique and inspirational atmosphere and can accommodate up to 200 delegates. Dorney Lake also operates Queen s Eyot, a secluded four-acre island on the Thames adjacent to Dorney Lake, a few miles upstream from Windsor. The island is accessed by its own private ferry making it an ideal venue for both corporate and private hire.
Queen s Eyot operates mainly from March through to the end of October for corporate and private hospitality events. These range from wedding receptions and private parties, to informal barbecues and school social occasions. Place of work: Eton College Rowing Centre Dorney Lake JOB DESCRIPTION HEAD CHEF DORNEY LAKE Main purpose of job: To ensure the prompt and efficient preparation of all meals to the College s standard and to the Client s satisfaction, maintaining the correct standards for food safety and health and safety. Primary duties will include the provision of hospitality for school events, corporate and private clients. This will include functions ranging from 12 people to several thousand people offering a wide array of catering options to the highest standard possible. Responsible to: General Manager Liaising with: Chefs, Management Team, General Assistants, Porters Qualifications: NVQ level 3 or equivalent Advanced Food handler s certificate Experience: Previous experience as a senior chef and knowledge of high volume catering and fine dining operations is essential to the success of the business. Accountabilities: To organise and assist in the preparation and presentation of all meals service at the required times and to the required standard, with particular emphasis on core feeding. To ensure that the College and Statutory Regulations pertaining to the safe and hygienic operation of the kitchen and ancillary areas are adhered to by all members of staff and visitors in the absence of management. To plan menus within strict budgetary guide lines given by the general manager for all events, staff rotas to be done with a strict need to the business demand. To carry out, the ordering process through our nominated suppliers, invoice query liaison, stock control management and completion of monthly stocktaking. To oversee the attention to detail in all areas including service, cleanliness (deep cleaning) and maintenance. To ensure all work areas and surfaces are clean and tidy as is practical at all times, especially at the end of the day/shift.
To take all necessary steps to ensure maximum security of the kitchen, store, office and any other areas within the Dorney teams control. To prepare all food with due care and attention, particularly in regard to customers special dietary requirements: Making sure compliance with the allergen legislation 2014 To ensure that a chef presence is maintained within key servery areas at service times ensuring that specifications and standards are adhered to. To support the general manger at client events as and when required. Promote a friendly working relationship with colleagues. To carry out any reasonable request by management. To report any complaint or compliment and take action if at all possible. To report any incident of accident, fire, theft, loss, damage and take action as may be appropriate or possible. Organise and prepare any special functions which may sometimes be outside of normal working hours. Undertake training and development relevant to the role. Terms and Conditions Salary: 30,000 per annum. Hours: 40 hours per week, working all year round. Working days and pattern will be by arrangement with the General Manager as these will be dependent on the seasonal operational needs of Dorney Lake.
Holidays: 21 days per academic year, bank holidays, plus (non-contractual) extra days at Christmas/New Year to bridge the gap between the two. Benefits Pension scheme Employees who wish to be enrolled into the College s Group Personal Pension Plan can choose either to contribute 4.9% of their salary and the College will contribute 11% or to join the auto-enrolment category where they will currently pay 1% and the College pays 1%. These auto-enrolment amounts will increase gradually over the next few years in line with Government requirements. Death in service benefits This is currently 4 x basic salary.
