JOB DESCRIPTION REPORTING The Chef reports directly to the Deputy General Manager and the Group Development & Support Chef. PURPOSE OF THE POST The post of Chef is responsible for delivering a first-class food service strategy across the all areas of the Churchill Theatre along with the achievement of income, expenditure and profit targets. The purpose of the post is to deliver an ethically sourced food offer and ensure that the Theatre embraces the varied requirements of its customers, consistently delivers outstanding customer service, integrates consumer eating-out habits and trends into all food service strategies and is profitable, whilst upholding HQ Hospitality s standards and legislation as instructed. ACCOUNTABILITIES Key Accountabilities of the Post are to: Meet overall business targets, in collaboration with the HQT&H Senior Management Support Team, development of the vision and key strategies for the Churchill Theatre, Bromley. Manage food production, maintaining consistent food standards and quality across all areas of the Churchill Theatre, Bromley. Ensure the appropriate quality control measures and hygiene practices are implemented and achieved at all times as instructed. Assist the achievement of food budgeted costs controls, ensuring minimum wastage occurs within the unit. Actively participate in the ongoing development of the quality standards and menu development. Ensure operational areas are properly prepared and stocked for all services and functions. Take an active part in all training activities. Maintain all equipment within the catering operation, through due care and diligence, as instructed. Participate in the HACCAP procedure according to the company s Food Safety Management Document, maintaining correct use of the KRB, including (but not limited to) cleaning rota and closedown procedures. 2
Via delegated responsibilities, ensure that kitchen management activities are always adhered to. Ensure ordering is completed accurately with the nominated suppliers and stock control procedures are adhered to. Ensure all menus and food offers are costed on the Kitchen Cut recipe costings software to achieve the venues budget GP. Control, minimise and report waste taking. Ensure the Churchill Theatre, Bromley adheres to a 5 star EHO food safety rating. Manage and develop a dedicated team of staff highly focused on delivering excellent standards of service. Maintain stock sheets with current market prices and new product lines. Ensure staffing levels are appropriate to meet the needs of the business at all times. Investigate shortfalls or overspends against target, and develop agreed measures to rectify variations, so that overall budgetary targets are realised. Health and Safety Ensure, in conjunction with the Senior Management Team, that the Company s Health and Safety Policy is fully promoted and arrangements have been made to carry out the policy. Understand and have a working knowledge of all current Food Hygiene and Health and Safety legislation and be conversant with the rules contained therein. OTHER DUTIES AND RESPONSIBILITIES 1. Dress in accordance with the Churchill Theatre, Bromley uniform policy and wear protective clothing as issued and instructed. 2. Undertake training and development appropriate to the job role and keep apprised of developments in field of expertise. 3. From time to time, carry out any other duties as required by the Theatre Director, Group Development and Support Chef or Group Hospitality management team, taking into consideration the grade of the post and the capabilities of the post holder. 3
