July 2014 Discovering Sicilan typical dairy products From 24 May to 1 June 2014, LACTIMED took over participants to meet with Sicilian typical dairy products. The Villa Niscemi (Palermo) and Milazzo Castle hosted a market of local producers and introduced visitors to the typical products through taste laboratories and theaters as well as tastings proposed and narrated by Italian chefs and pastry chefs. What was the objective of this week of promotion? To increase the influence and distribution network of Sicilian typical cheese and desserts, providing producers with an exhibition space and new business opportunities. During the Week, local tour operators have also been invited to a day of exploring local products in the Enna region, with the aim of encouraging them to develop tours more focused on the discovery of terroirs. This initiative would offer an alternative for the economic diversification of producers. A Route of the Typical Dairy Products will be achieved by the end of the year, while local partners already propose an original mapping of producers associated to the project. Cliquez ici pour la version française Second training cycle at Zahlé, Lebanon Facilitated by about 12 experts, this 2nd cycle, organised from 5 to 8 May 2014, allowed the 88 participants to tackle topics such as supporting tools to innovation and territorial development, flexible and innovative agro-industrial processes and notions of clusters. A field visit was the opportunity to visit several dairies, among which one is managed by a cooperative of women. Another one manages directly

Business meetings in Sicily and Thessaly About 300 business meetings were organised between 24 May and 1st June 2014 in Palermo, Enna and Milazzo (Sicily), besides the Week of typical dairy products of Sicily, gathering 26 buyers (agrifood companies, restaurants, retailers, tour operators etc.) with around 30 producers, which previously benefited from a specific preparation from the project partners. In Greece, 85 business meetings took place in Larissa on 24 June 2014, gathering 11 buyers with 17 producers. Competitions of innovative projects launched on the 5 territories From May to July 2014, LACTIMED launched the competition of innovative projects for the enhancement of Mediterranean typical dairy products on each of the pilot territories. These events gave the opportunity to raise awareness of participants of the project objectives, of traditional and sustainable productions, as well as exchanging about the competition modalities and the concept of innovation. The proposals received will be evaluated during the summer: preselected candidates will take part in a series of training-coaching workshops before the finals, in autumn Local Week in Lebanon From 4 to 6 July 2014, the Garden of Poets of Zahlé gathered local wine and cheese productions. Typical dairy products from Bekaa and Baalbek-Hermel were exhibited and more than visitors met the eight producers associated to the event, beside LACTIMED stand. Tasting, sales, exchanges on methods of production... this first activity of joint promotion around cheeses from the Bekaa seems promising and encourages producers to organise similar activities from now on. LACTIMED Steering Committee in Alexandria Alexandria will welcome a series of capacity building activities in mid-september, beside the third meeting of the Steering Committee, which will be held on 19 September 2014 and gather all the project partners. Weeks of the Mediterranean Dairy Products starting in Autumn Producers from the 5 territories will gather in a same area during international exhibitions, with a view to promoting typical dairy products of the Mediterranean and to accessing new markets: this is the aim of the Weeks of the Mediterranean, which will also allow promoting territories, raising awareness on local products and highlighting the main issues and challenges of the dairy chains. International business meetings will be organised as well. Three dates are already on the LACTIMED agenda: From 23 to 27 October 2014, LACTIMED will be at the Salone del Gusto, in Turin, Italy; From 29 October to 1st November 2014, LACTIMED will take part in the International Exhibition of Agricultural Investment and Technology (SIAT), in Tunis; From 6 to 8 November 2014, LACTIMED will be at the Beirut Cooking Festival in Beirut, Lebanon. The Greek partners will also organise a Local Week (involving producers from Thessaly) in Athens, from 1 to 3 November 2014, during Dairy Expo exhibition. More information is available on LACTIMED agenda.

3 3 sur 7 18/11/ :13 Kechk: tradition, flavours, and nutrition Kechk is a preparation based on yoghurt and crushed wheat (bulgur) with a very specific smell, offering outstanding nutritional values and excellent conservation properties. The Kechk preparation is traditionally linked to the end of summer in Lebanese Bekaa mountains. Once boiled, the bulgur is kneaded with thick and creamy yoghurt (Laban) and salted cow's milk, goat milk or sheep milk. The mixture is then left to ferment and kneaded daily until reaching the required homogeneity and acidity. It is then chopped and dried in the sun. Rich in carbohydrates, proteins, soluble fibers and calcium, kechk is an ideal nutritional asset in winter, and an essential ingredient of several rural recipes such as soups and stews. It is also used to lift and enhance season salads or manakich (Lebanese pizzete). Bouza: a typical milk-based Tunisian dessert Bouza is a typical and traditional Tunisian dessert, very popular during the month of Ramadan after the fast is broken. Served warm, it is made out of milk, ground hazelnuts, starch and sugar. For a stronger flavor, some people add a few drops of distilled geranium water. Once ground hazelnuts, sugar and starch have been mixed in a saucepan over a low heat, milk is then added gradually, until the mixture thickens. Served in glass jars, it can be sprinkled with chopped dried fruits. Bizerte Cluster (PCB) - Tunisia Towards a Mediterranean network of agropoles, technopoles and agri-food clusters The 5th edition of French/North-African agropoles forum was held on June 2014 in Marrakech, on the topic of "Agropoles, clusters and agri-food technopoles in the Maghreb: experience sharing and cooperation opportunities". The Bizerte cluster took part in this event through conferences and within a workshop on "Developing a Mediterranean network of agropoles, technopoles and agri-food clusters". The Bizerte cluster will be in charge of elaborating the project of the network statutes and contacting potential founding members. The network should be effectively created by November Slow Food - Italy Cheese Comes to Belgium!
