For a customer in Brazil, a ph measurement solution that would tolerate the harsh process conditions was essential. We provided not just a robust, dependable system, but one that requires very little maintenance. Growing demand Liquid sugars are produced in a number of different formulations for use in the food and beverage, and chemical industries. Premium liquid sugar is a virtually clear sucrose syrup used in the manufacture of a wide range of beverages and food products. Standard liquid sugar is a lightyellow sucrose syrup used in the production of cordials and juices. Liquid sucrose can be used in non-food applications, for example in industrial fermentation processes as a substrate. Production of liquid sugar can be achieved by adding distilled water to dry sugar, or by processing cane juice. The production process for liquid sugar from cane juice is simpler to that of dry sugar, and it also produces a product of a more uniform quality. However, unlike the extremely long lifetime of dry sugar, liquid sugar has a shelf life of only a few weeks. The sugar industry in Brazil has been investing heavily in liquid sugar production to meet increasing market demand. Our customer, a major sugar refiner in Brazil, manufactures liquid products purchased mainly by soft drinks manufacturers from local producers to multi-nationals. Tough conditions The refinery s liquid sugar production process follows the same initial steps to that of dry sugar, namely: juice extraction, filtration, sulfitation and liming. ph measurement during sulfitation and liming is essential as the ph level in the first

The purpose of adding slaked lime is to increase the ph of the acidic sulfated liquor from approx 3 to 7. The high concentration of sugar in the juice and the addition of chemical products make it very difficult to measure ph during these processes, as electrodes can become easily coated in precipitates. In order to maximize production uptime, our customer was looking for a ph measurement system that would endure the process conditions, without requiring a great deal of maintenance. Cutting-edge solution We installed a system based around the InPro 2000 i ph electrode. This probe is ideal for this application as it has been designed to function in extreme environments where quick, accurate ph measurement is required. Gradual outflow of the pressurized liquid electrolyte ensures fast response and long maintenance intervals, while the patented silver-ion trap prevents electrode poisoning from sulfides. The InPro 2000 i is a member of METTLER TOLEDO s Intelligent Sensor Management (ISM) family of sensors. ISM reduces the maintenance requirement for ph systems by sending diagnostics data to the transmitter, informing the operator of required maintenance before measurement is affected. Predictive maintenance The diagnostics information is displayed on the connected M400 transmitter as the Dynamic Lifetime Indicator which shows the remaining lifetime of the electrode based on the current process conditions, and Adaptive Calibration Timer which tells the user when calibration will next be required. For operational flexibility, the multi-parameter M400 also accepts analog sensors. A suitable housing for the InPro 2000 i is the InTrac 776 e. Its retractable design includes a built-in flushing chamber in which the electrode can be cleaned and calibrated when required, without process interruption. 4 Quick-Brix Excellent Wine Thanks to Quick-Brix It is a well known fact that making outstanding wines requires a blend of science and art. Read how Quick-Brix, METTLER TOLEDO s new portable digital refractometer, transforms analysis in a small, but exquisite, vineyard in Switzerland and helps to make even more divine beverages. Swiss wine North-eastern Switzerland is not exactly world famous as a wine region. Few connoisseurs would name Boppelsen, for example, along with St. Emilion, Montepulciano or the Barossa Valley. Nevertheless, wine making has a long tradition in Switzerland dating back to the Roman occupation. A local legend Former Swissair pilot Cees Van Rijn owns a small vineyard in Boppelsen, not far from Zurich airport, where he produces a small quantity of select wines according to the eco-friendly production methods of Vinatura, which allow only minimal usage of chemicals and fertilizer. Van Rijn managed to shock the wine making establishment of the region by winning gold medals for both red and white wines in 2004, only a few years after commencing as a wine producer. It is all about sugar level Producing outstanding wine requires a combination of skill and science. It is crucial to harvest grapes when they have developed sufficient sugar for fermentation, whilst retaining the right acidity level for that fruity and fresh taste. Typically, the sugar level in grapes is tested prior to harvest by optical refractive index or density measurement. This becomes even more important when grapes are sold to third party vinificators, as the price paid for the grapes depends on the sugar level. Van Rijn says: It's crucial to harvest as late as possible to benefit from the late autumnal sunshine, but not too late as grapes can start to rot, which has a devastating influence on quality. In the past, we have relied on optical refractometers for sugar level determinations, but experienced inconsistencies between operators and instruments and, depending on the light situation, had big problems reading the results at all. An indispensable instrument For the 2007 harvest, Van Rijn used the new METTLER TOLEDO Quick-Brix digital refractometer, which offers a much improved measuring performance. A drop of grape juice onto the prism, one keystroke and seconds later the result can be read on the display. It does not matter who performs the measurement, the result is always consistent and produced automatically. The instrument is small, splashproof and comes with a neck strap and some conversion tables for added portability. Cees Van Rijn sums up his assessment: After using Quick-Brix for both our white and red wine harvests we don t want to go back to optical measurement. The instrument is easy to carry around, simple to use and clean and it even helped settle a long standing conflict with a wine controller whose optical refractometer gave consistently different results. After seeing Quick- Brix he accepted the errors of his ways. Digital refractometry is clearly the method of choice for forward looking winemakers. Several specialized workshops have been set up, each focusing on a different aspect of the process: from coloring caramels, powders, bases and mixtures to distillation and packaging. The confectioner s caramels workshop, for example, is equipped with copper pots to prepare the caramel using traditional cooking methods, while raw ingredients and natural extracts are processed in the distillation unit. Across all these different units and processes, however, one application remains critical: weighing. Prior to production, raw ingredients are formulated in the 'bases' workshop using METTLER TOLEDO IND 690 weighing terminals connected to XS scales. Marble worktops provide a stable surface for these scales to ensure maximum precision and prevent vibration-related errors. 7 why Mr. Gumez, the site s maintenance and new works manager, entrusted the service operations to METTLER TOLEDO. I was looking for a weighing specialist that could work on equipment from different manufacturers with the necessary expertise to carry out metrological testing on compact balances, terminals, scales and tanks with built-in sensors, explained Mr. Gumez. Eric Manguet, the METTLER TOLEDO service manager for the North-East region of France, conducted an onsite diagnosis of METAROM s weighing equipment and drew up an annual metrological testing schedule to cover the company s diverse weighing requirements. One of the things we did was to optimize the process of calibrating the under-tank sensors, said Eric Manguet. Using a volume counter linked to the French Accreditation Agency COFRAC, it took a METTLER TOLEDO technician only two days to calibrate all 14 tanks, with capacities between 150 kg and 10 tons. From the very first meetings with METAROM, METTLER TOLEDO has provided ongoing advice on replacement scales while anticipating the company s future requirements and sharing its weighing technology and metrology expertise to establish excellent customer relations. We have visited METTLER TOLEDO s accredited calibration laboratory in Béthune, added Mrs. Roussel, production director at the Boves site. Mr. Leroux, the metrology director at METTLER TOLEDO, gave us valuable advice on metrological processes and helped us select the right equipment, including the marble tops in our 'bases' workshop.
