Linens and napkins may not be used in contact with food unless they are used temporarily to line a container for the service of foods and the linens and napkins are replaced each time the container is refilled for a new consumer. Observed faucet leaking at both hand sinks in deli, and at the 2 bay sink in deli. Section 346 Observed no soap at hand sink in back storage area near ice bin. Section 399 Observed absorbent dry wall in mop room. Discussed that surface shall be non-corrosive, non-absorbent, and easily cleanable. Section 404 Observed coving missing and chipped under 3 bay sink in deli and pulling away from wall near hand sink. Section 411 Observed numerous lights not functioning properly in back receiving, storage, preparation area, walk-in coolers, and walk-in freezers. Section 412 Observed fly strip hung above prep table in back storage area. Section 416 Observed pest droppings on shelf in back storage area, on floor in mop closet, and on shelf in linen closet. Person in charge stated establishment is serviced by Arrow Pest ontrol ompany. Arrow services establishment on a monthly basis. Person in charge provided last service ticket dated 4/15/15 which noted activity at exterior bait stations. Due to the observance of pest droppings, the follow shall occur before the follow up inspection: 1. emove existing pest droppings. 2. Provide inspector with most recent pest control report. 3. emove debris on floor and shelving in back storage area. 4. emove standing water in back storage area. 5. emove food and paper debris outside back door. 6. emove harborage conditions for pests such as unused equipment throughout establishment. 7. epair leaking hand sink faucets. 8. Ensure dumpster is closed. 9. emove and organize unnecessary items in back storage area to promote cleanliness and deter pests. Due to the observance of pest droppings, a follow up inspection will occur in 7 days. If the above list is not completed and a live pest is found, establishment can be closed. Section 417 Observed employee belongings on shelf containing single use articles in back storage area. Section 426 Observed numerous pieces of unused equipment stored in back room and numerous pieces of equipment on sales floor not functioning. All equipment must be removed from premises or repaired and in good working condition. Please call Stephanie Operschall at 449-7145 to have coolers approved for use once coolers are repaired. Observed frozen towel at bottom of soda cooler near check-out lane. Person in charge stated towel was left behind after cleaning up a spill. Observed detergent in a non-labeled bucket in back storage room. temporary means. Discussed placing a label on bucket since the detergent was taken out of its original packaging. Observed single use articles, such as food containers and lids, not protected stored on shelving unit in back storage area. Person in charge stated articles are no longer in use. Discussed discarding any unused single use products. Observed meat packing containers stored next to hand sink in deli area.
