3 Maitre D P.O.S MAITRE D P.O.S. Our fully integrated Maitre'D Point of Sale software is the single source solution that can bring expert efficiency to your business. Maitre D POS is a true WIN 32 bit application that uses the MS Windows Operating System. A few facts Maitre D is available in 3 languages as a standard (English, French, Spanish) and can support any ISO (LATIN 1) language your customers need. All text in the Back- Office and POS applications can be translated. Maitre D offers fully functional handheld technology that uses Windows CE products such as the Compaq, Casio and Symbol for the hardware and operating system. The handheld software is not a third party software product and runs the Maitre D POS as it would on a fixed Windows Terminal. 7 Maitre D Back-Office MAITRE D BACK-OFFICE The Maitre D Back-Office is designed to provide store managers with comprehensive sales reporting, inventory, and labor management functionalities. The Graphical User Interface (GUI) is designed in such a way to help managers learn and remember system operations quickly and easily. Each manager may be assigned a password, providing security and allowing only the display and use of the functions which restaurant owners or corporate management decides to make available. The Maitre D Back-Office was designed for Windows 98/2000/NT/XP/XPE assuring our customers that we will always provide them with the latest innovations and technologies. The Maitre D Back-Office has enhanced features that provide on-screen help by simply clicking the help button and clicking on the flag you want to learn more about. We provide extensive help menus without looking through the manual. We also have added Hot-Link Icons to guide you through set-up screens without exiting your current location. Maitre D sorts items alphabetically in the Back-Office so that the items appear logically on the POS. 8 Maitre D Back-Office Point Of Sale Control The Point Of Sale Control module allows to control all day-to-day operations. This module offers flexibility, allowing for a more controlled and efficient operation. Also included in the P.O.S. Control is a truly, user-friendly report generator. In a minute, it is possible to design the exact report required. Screen designer program allows customization of colors, button sizes and function keys on the POS itself Increase the speed of using the POS Simplify user training Screen appearance, system functionality, available commands and options are determined by the current job code of the employee logged onto a particular terminal, which allows each terminal to work in a variety of modes. With the Frequent Diner module, managers can track all sales information and history on any customer, including personal profile, co-ordinates and dollars spent to date. Looking to tailor a promotion is made simple and more efficient with this feature. You can print out customer activity reports to produce the exact data required for target marketing. 11 Maitre D Back-Office Time & Attendance The Time & Attendance module gives managers the tools they need to analyze the efficiency of their work staff to create a streamlined productive labor force. Employees can clock in and clock out at any touch screen terminal, eliminating the need for time clocks. 13 Maitre D Back-Office Inventory Control The Maitre D real time inventory system provides up-to-date inventory counts 24 hours a day. Building menus is fast and efficient, as the manager can move freely between related functions like recipe building, sales item maintenance and bulk item maintenance. Traditionally time-consuming inventory management tasks such as counting and extending inventory, generating and receiving orders, and entering transfers or wastes are greatly reduced in time and effort. The Inventory System can be purchased for a single or a multi-location property. The multi-location option is very useful for property that wants to transfer stock from one location to another (Main storage room to the Bar or the Fine Dining Restaurant for example). It allows you to close a customer check in an account receivable file, generate statements and other printouts such as monthly reports. 18 Maitre D Back-Office Table Management The Table Management software is a simple but powerful module that allows for even distribution of customers among staff and tables, manages the wait list, gives estimates for the next available table and displays the restaurant floor plan at each terminal. Enhanced floor plan creator, enhanced graphics allow the creation of walls, washrooms, bars and doors. 19 Maitre D Back-Office Delivery & Dispatch The Delivery module allows you to take a telephone order by obtaining the customer's telephone number, then entering the order and printing the check. The system saves the customer record in a file keyed by telephone number, so employees do not have to re-enter the customer's information if the same customer reorders. The street code feature within the Delivery module allows you to create / map or modify delivery areas. This option will verify if the customer is located in the delivery area, and assign an automatic delivery charge where applicable. 20 Maitre D Back-Office Electronic Funds Transfer With on-line credit card authorization, servers simply swipe a customer's credit card through the magnetic strip reader on the terminal, and authorization is on its way. The back office computer manages all authorization requests for the restaurant, requiring only a line for communication. Realtime accumulation of credit card data for daily reconciliation shortens end-of-day accounting procedures. Maitre D Back-Office is able to process up to 20 transactions at the same time. Our Credit Card Interface links directly to different major processors such as NDC, Visanet, C.E.S., and Nabanco. The Credit Card interface allows the use of pre-approvals at the bar. In addition, Maitre D now supports IP Processing where credit card transactions are processed within 2 to 3 seconds through a completely secure channel. Reports Center The Maitre D Back-Office has an integrated Report Center to view reports in a Graphical Presentation. It also gives the ability to have custom reports written to meet the specific needs of any client, with various sorting options and presentations. Customizing reports gives a more relevant picture of daily operations, which helps to manage restaurants more efficiently and lower inventory costs. System activity reports can include flexible time increments of sales, activity, order figures by menu, customer counts, etc. Maitre D Back-Office chronicles sales, inventory and electronic fund transfers in real-time. Moreover, there is no limit to the database, except for the disk space. Since information is kept forever, forecasts and reports become more accurate as more data is collected over time. Furthermore, there s no need to sort through the extensive report list given that one can customize a list of reports used most frequently. Message Center Maitre D provides the ability to schedule internal communications. This feature helps operators make sure that employees get important messages pertaining to the restaurant s operations. As well, it is useful when software or menu updates have been applied from the corporate office. For instance, with the application of a new promotion, the corporate office can include a message that informs managers and/or employees of this change. Page 20

21 Interfaces INTERFACES There are also several interfaces with Maitre D which enhances its flexibility. Please refer to our Partner Guide on for detailed information on different suppliers listed in the interfaces section. Front Desk Interfaces Maitre D provides full integration with hotel Front Desk systems. It has developed several interfaces with the most popular Front Desk systems on the market. These interfaces allow you to do real time posting with the hotel system. You are able to return to a check closed at $0.00 to add tips. It is also possible to cancel a transaction that was posted to the wrong room number by sending a negative transaction. Maitre D gives the ability to modify transactions already posted to a PMS System. Bar Interfaces This interface is a direct link to an electronic bar device. This device measures and dispenses all liquors and beverages and reports all actions through a communication channel. These actions are saved in our files and comparative reports may be generated. These reports permit a better control over your alcoholic beverage inventory. Bar interfaces that we support are: Berg Azbar Scannabar Free Pour Auberg Accounting Interfaces & Payroll In addition to its own management solutions, Maitre D has developed Accounting Interfaces for the General Ledger, Accounts Payable, Payroll, and Accounts Receivable. The Maitre D Back-Office can export data to/from accounting software such as AccPac, QuickBooks, Microsoft Great Plains and JD Edwards. You can use our standard transfer file format. The Accounting Interfaces give you the opportunity to do a single entry in your Maitre D Back-Office and transfer the data in your accounting system. This approach greatly reduces the risk of errors and speeds the end-of-day Page 21

22 Interfaces process considerably. Payroll numbers can also be sent to payroll processing companies from the Maitre D Back-Office. Web Ordering Interface --- MealZone Maitre D MealZone is a fully integrated solution from end to end. This interface allows end users to place delivery orders through the web that are automatically entered into the Maitre D system in real time. This end user oriented solution sends automatic replies to clients when orders are received and when orders are ready. A full backup system takes place in the event that the internet experiences difficulty. Web ordering increases sales and eliminates languages barriers as well as time constraints. In addition, various customer tracking and report building tools are available to the administrator. Scale Interfaces This module is used to weigh items on a scale attached to a workstation. The workstation reads the weight from the scale and calculates price according to the weight sales items pricing. Scales supported: Toledo 8213 Toledo 8217 Weigh-Tronix 6710 (pounds) Bar Code Readers Maitre D supports keyboard wedge bar code readers. Coin Dispensers Interfaces to coin dispensers assist in speeding up operations and providing greater accuracy. Maitre D supports the Telequip Coin Dispenser. Order Confirmation Boards Gives drive-thru customers a visual confirmation. Page 22

23 Interfaces Video Display Posera offers Kitchen Video Monitors supports products from other companies. Gift Card & Customer Loyalty Interfaces Maitre D supports several gift card programs and loyalty programs, as well as offers its own loyalty application. The interface allows for a global gift certificate program. Cards can be purchased from one location and can be used at any location within the chain. The ability to retain sales history for that client can then be accumulated with the common database of gift card users. Digital Video Surveillance Interfaces Kodicom Digital Video Recorder system offers text overlay for each transaction and also offer search capabilities from the data enriched video saved on Hard-Drive. (For example: Who did that void for $50.00? The system finds the transaction and can then display the image sequence of that transaction). This device also has an IP address that allows viewing the video over the internet. Please note that there is no additional software required from Maitre D. Maitre D interfaces to I3DVR and TVS. ITC Cash Card Interface Cash cards are primarily sold for use with vending machines, in schools and in hospitals. For example, the customer pays $50.00 and uses the card in the Washer and Dryer, or in the Video Gambling Machine, and then can use it as money to buy Food and Dry Cleaning services. ITC sells any necessary hardware for this system. Page 23

24 Maitre D e-global MAITRE D E-GLOBAL (ENTERPRISE SOLUTION) The Maitre D e-global Suite is a powerful package developed to answer multi unit food service operators. It eases consistent communication between the corporate office and their franchisees. This flexible software is highly adaptable to user needs and creates daily data transfers that are crucial to the long-term efficiency of restaurant chains of any size. Therefore, it allows receiving different figures from all units at any desired frequency. The Corporate Communication Module (CCM) also gives them the availability to manage each restaurant s database remotely, including PLU broadcasting, price changes, recipe changes, and much more. No restaurant chain is too small or too big for Maitre D e-global. Flexible hardware and software configurations are available to meet your needs. Data Management With the Maitre D report center, corporate users can receive different figures from all their units every night, which is stored in a central database. The central database is where all figures reside. From this database, users can customize reports for the specific analysis of any one concept, area, restaurant or transaction. The transferred files are compressed to reduce the download time and can be encrypted when using the Internet as a communication tool. Communication The communication program included in the Maitre D e-global is fully integrated with the Maitre D Back-Office application. File transfers can be sent daily, weekly, or monthly, according to needs, to provide more flexibility. Here are some highlights of the communication software and the different configurations available: Connection can be established directly to the corporate office server or by an Internet connection using any device supported by the Windows operating system. High scalability on the corporate office server side by using multithread technology to allow multiple simultaneous client connections. High integration with Maitre D Back-Office application. Bi-directional data transfer so the restaurant can transfer data to the corporate office and receive new data automatically for the P.O.S. workstation. Automatic error recovery on connection breaks. 25 Maitre D e-global E-GLOBAL WITH DIAL-UP SERVER The restaurant s Back-Office application connects by direct Dial-Up to the corporate office server. The corporate office does not need a Internet connection. Pros: 1. Low connection cost. 2. High security because no connection to the Internet 3. Automated from restaurant level at the end of day process Cons: 1. Longer transfer time because of the limited simultaneous connections. (Windows 9x and Windows NT workstation allow only 1 dial-up connection at a time, Windows NT server can have up to 256 simultaneous connection) 2. Long distance fees. E-GLOBAL WITH PERMANENT INTERNET CONNECTION The restaurant s Back-Office application connects by Dial-Up to a local Internet provider. The corporate office has a permanent Internet connection. Pros: 1. High processing speed: The number of simultaneous connections is limited only by the bandwidth of the corporate office Internet connection under Windows 9x, Windows NT (Workstation and Server) 2. No long distance fees. Cons: 1. More expensive cost for the corporate office server connection and restaurant internet provider 2. Lower security or fees for a firewall at the corporate office E-Global Multi-Unit Back-Office The e-global Multi-Unit Back-Office (MUBO) allows a corporation to manage multiple units from a central database. 26 Maitre D e-global The query manager allows you to customize and save reports through the use of custom queries. You can analyze the smallest piece of information or view only a summary of selected stores. e-global also allows you to publish any report on the World Wide Web, so that managers are able to view HTML coded reports via the Internet and Intranet. Operators can use our exporting capabilities to populate the organization s data warehouse. The e-global MUBO allows you to see exception reports. The purpose of these reports is to give information on critical points for your enterprise. For example, it might not be of interest to see all the void details for 500 restaurants. But if a restaurant makes more then 50.00$ of voids in a single day, you might want to know. You could do the same for the food cost, labor cost, etc E-Global Multiple Database Management Each time a remote location transfers their files to the corporate office; it shows that there are some changes that need to be downloaded. These changes could be prices, taxes, and recipe changes. Some highlights of the e-global Database Management Systems are: Grouping of similar databases for restaurants in the same region or state Effective dates activate menu item prices Provides a testing facility to simulate the changes before broadcasting Broadcaster Maitre D e-global has an integrated corporate communication module which includes the ability to manage the database from a central location. By using the POS Control Module at the corporate office, Maitre D can send menu changes including the item file, prices etc. to locations requiring updates. Maitre D uses a dual time stamp method, meaning you are able to send down the changes on one day and activate them at a later date at restaurant level. The file will sit idle in the Back-Office PC at the location and activate on a pre-determined date. This feature not only standardizes operations, increases efficiency and customer satisfaction, but by eliminating uncontrollable variables, the corporation can also be assured that their high quality standards are executed at every level.
