4 (3) Honey is important and high price animal origin product produced by honey bees. It contains distinctive aroma and flavour. Quality of honey e.g. natural colour, aroma and flavour, content of glucose and fructose shall be taken into account when produced. In addition, pesticide residues and contaminants shall be at acceptable levels. In order to promote the production of quality honey and provide guidance for honey producers including to enhance competitive potential for export which is on the increasing trend. The Agricultural Standards Committee considers it is appropriate to establish agricultural standard for honey to be used by all stakeholders for safe consumption. 5 NOTIFICATION OF THE MINISTRY OF AGRICULTURE AND COOPERATIVES ON THE ESTABLISHMENT OF THAI AGRICULTURAL STANDARD: HONEY UNDER THE AGRICULTURAL STANDARDS ACT, B.E (2008) Whereas the Agricultural Standards Committee, by the decision of the fifth session dated 20 September B.E (2013), deems it necessary to establish an agricultural standard for honey as a voluntary standard in accordance with the Agricultural Standards Act B.E (2008) to promote such agricultural commodity to meet its standard on quality and safety. By virtue of Sections 5, 15 and 16 of the Agricultural Standards Act, B.E.2555 (2012), the Minister of Agriculture and Cooperatives hereby issues this Notification on the Establishment of Thai Agricultural Standard on Honey (TAS ) as a voluntary standard, details of which are attached herewith. 6 TAS THAI AGRICULTURAL STANDARD HONEY 1. SCOPE This standard provides quality requirements for honey produced by commercial varieties of honey bees, Apis mellifera, for direct consumption and/or further processing. 2. DEFINITIONS For the purpose of this standard: 2.1 Honey means natural sweet substance produced by honey bee from the nectar of flowers or other living parts of plants which the bees collect, naturally transform and store in the honey comb until becoming aromatic sweet viscous liquid of light amber to dark amber. 3. QUALITY 3.1 Viscous fluid, consistent, clear, no objectionable foreign matter, natural colour of honey varies from light amber to dark amber. 3.2 Naturally distinctive aroma flavor (according to origin of nectars from plants), no objectionable odour such as sour smell from fermentation or effervescence. 3.3 Moisture content not more than 21% by weight. 3.4 Sum of fructose and glucose content not less than 60 % by weight or reducing sugar converted to invert sugar not less than 65 % by weight. 3.5 Sucrose content not more than 5 % by weight. 3.6 Water insoluble solids content not more than 0.1 % by weight. 3.7 Ash content not more than 0.6 % by weight. 3.8 Total acid content not more than 50 milliequivalents acid per 1 kg. 3.9 Diastase number not less than Hydroxymethylfurfural; HMF not more than 80 mg/kg Electrical conductivity not more than 0.8 ms/cm. This translation is made by The National Bureau of Agricultural Commodity and Food Standards (ACFS) to establish correct understanding about this standard to foreigners. Reference to Thai Agricultural Standard in any jurisdiction shall be made to the Thai version only.

7 TAS FOOD ADDITIVES All food additives are not allowed to be used in honey, particularly colour and flavouring agents. 5. PESTICIDES RESIDUES The pesticide residues in honey shall comply with those maximum residue limits established by relevant laws and regulations and the requirements under the Thai Agricultural Standards on Pesticide Residues: Maximum Residue Limits (TAS 9002) and Pesticide Residues: Extraneous Maximum Residue Limits (TAS 9003). 6. CONTAMINANTS Contaminants in honey shall comply with those maximum limits established by relevant laws and regulations. 7. VETERINARY DRUG RESIDUES Veterinary drugs residues in honey shall not be detected. 8. HYGEINE 8.1 Honey shall be produced, packed and stored in a hygienic manner in order to prevent contamination that may harm to consumers in accordance with the relevant laws and regulations and related Thai Agricultural Standard. 8.2 Microbiological requirements in honey are as follows: (1) Salmonella spp. shall not be detected in 25 g or ml. (2) Staphylococcus aureus shall not be detected in 0.1 g or ml. (3) Yeast and mold count shall not be more than 10 colonies per 1 g or ml. 9. PACKAGING 9.1 Containers Containers shall be made of food grade materials which are safe and suitable for their intended use. They should not impart any toxic substances or undesirable odour or flavour to the product according to Ministerial Notifications of Ministry of Public Health so that they do not deteriorate the quality of honey. The containers shall also withstand during the transportation. 9.2 Packing Honey shall be packed in dry, clean and tightly closed containers in order to prevent contamination that may harm to the consumers. 10. MARKING AND LABELLING 10.1 Consumer packages Labelling shall be in accordance with the relevant laws and regulations. The following information shall be appeared on the label of the container. They shall be readily legible, clear, and indelible without false or deceptive.

(2) Net content by volume in ml or l or by weight in g or kg. (3) Information of producer and/or distributor. Indicate the name and address of the producers or re-packers. In addition, name and address of head office of producer or re-packer may be provided. For imported product, the importer s name and address shall be indicated. (4) Origin of product Indicate country of honey origin, except domestically produced. (5) Date of manufacturing and/or best before date/or expiry date. (6) Lot identification. (7) Instruction for storage and transportation such as keep away from direct sunlight and heat. (8) Language In case of the product is produced or imported for domestic market, Thai language shall be used, however, foreign language may also be applied. In case where product produced for export only, foreign language can be used Non-retail containers Labelling shall be in accordance with the relevant laws and regulations. 9 TAS Certification mark The use of certification mark shall comply with the Ministerial Regulation of B.E (2010) on the Provision Concerning Characteristics of Mark, Application and Display, and the related Notifications of National Bureau of Agricultural Commodity and Food Standards under the Agricultural Standards Act B.E (2008) and its amendments. 11. METHODS OF ANALYSIS AND SAMPLING 11.1 Methods of analysis Analytical methods are shown in Table 1 and by referring to the latest versions or other methods which are equivalently valid and recognized. 11 TAS APPENDIX A CONTAMINANTS AND PESTICIDE RESIDUES The information on contaminants and pesticide residues in this appendix excerpted from related laws and regulations only for the purpose of convenient use. It is not considered as parts of Sections 5 and 6 of this standard. In case doubts on adulteration of honey with added sugar, the reference on method of analysis of AOAC International Standard for SCIRA (stable carbon isotope radio analysis) is suggested by Codex Stan , Rev (Codex Standard for honey).
