6 Foreword As a student and then as a teacher and researcher, I have realized the need for a practical manual on agricultural experiments in general and horticultural experiments in particular, as a ready reference. Unfortunately, such information is scarce and scattered. I am happy that my friend and colleague Swati Barche along with co-author Reena Nair and P.K. Jain have managed to put together this manual in a very clear and accessible manner. It is indeed a pleasure for me to write a foreword, calling attention to their important contribution. Over the last couple of decades, horticulture has gained increasing interest in India and worldwide. This manual would appeal to students, teachers and the general public engaged in horticulture at various levels. The authors have referred widely, compiled information systematically from various sources and have drawn on their own knowledge and experience in the area over the years. In this manual, with its eclectic combination of theoretical concepts, in-depth explanations and of-course, practical guidance through field experiments and laboratory exercises, on processing, propagation, harvesting, extraction technologies, post harvest management, preservation and storage, the authors have drawn together an impressive and highly useful wealth of knowledge and ideas on practical horticulture. Relevant coloured photographs have been included for better understanding by students and amateur gardeners. As a Regional Director in the Open and Distance Learning system, I feel that the lucid language and illustrations in the manual can even serve as self instructional materials to students of distance learning.

8 Preface Horticulture is a practical field of Agriculture in which students can secure their future. Field experiments and Laboratory exercises are the basic keys for common understanding of any subject for undergraduate and post graduate students. Unfortunately, such compiled and systematic information is not available for the students. The authors are therefore making sincere attempts to meet this need. The book is a ready reference practical manual for teachers as well as students of undergraduate programmes and postgraduate beginners in the discipline of horticulture, amateur gardener and processing industries personnel s. This manual will be definitely helpful in standardizing the subject matter for teachers and students alike. Spread over 26 exercises, the manual covers various topics i.e. acquaintance with planting methods, processing and propagation of spices, mother plant selection of plantation crops, harvesting methods and extraction technologies of aromatic crops, post harvest management, maturity indices, low cost storage technology, processing and value addition in fruits and vegetables including preparation jam, jelly, marmalades, squash, cordials, syrups, candy, chutney, pickles, sauces and ketchup, physico-chemical analysis of fresh and processed products, preservation by drying and dehydration of fruits and vegetables, pre-storage treatments, prolonging storage life of fruits and vegetables, plant growth regulators, orchard management, nutritional disorders in horticultural crops and Seed viability and germination test. Besides, few annexure have also been given describing units of conversion. The contents of chapters is completely based on new syllabus of the approved 4 th Dean Committee recommendations. It has been put up in a simple language giving references where ever needed and separate practical assignment for students after every exercise. Coloured photographs of tools, equipment, horticultural crops as
9 well as fruit and vegetable products are provided for better understanding by students and amateur gardeners. It is expected that this manual have immense utility in planning and conducting field and laboratory practical. It is genuinely hoped that the book would be of great use to the students, researchers, teachers and all those who have interest in the subject. My sincere gratitude to our colleagues, family and friends for their support and constructive suggestions.
