Contents Background Product safety and convenience issues for packed food Technology overview Development of package leak indicators Visual detection Automatic optical detection Future prospects Paper 7642 Eero Hurme 2

Background studies Internal research programme on Intelligent products and Systems Active, Communicating Packaging Systems (consumer packages) Printed low cost diagnostic indicators Optical coding systems Printable conductive wiring, thin film indicators Sustainpack EU -project Printed rh sensors and optical detection methods Paper 7642 Eero Hurme 3

Innovative packages through ages (for food safety) functional packages MA-packages aseptic packages retorted plastic pouches sterilised hermetic bottles wine containers water submerge leaves Stone Age Paper 7642 Eero Hurme 4

Intelligent packaging systems FUNCTION Monitoring the conditions of package/packed food Storage of information & communication WAY OF ACTION Printed label (e.g. ingredients, best before, instructions) Colour changing indicator label/print Electronic tags Paper 7642 Eero Hurme 5

Intelligent packaging systems Indicator Principle/ reagents Gives information about Application Timetemperature indicators (external) Oxygen indicators (internal) Carbon dioxide indicator (internal) Microbial growth indicators (internal) Mechanical Chemical Enzymatic Redox dyes ph dyes Enzymes Chemical ph dyes All dyes reacting with certain metabolites (volatiles or nonvolatiles) Storage conditions Storage conditions Package leak Storage conditions Package leak Microbial quality of food Foods stored under chilled and frozen conditions Foods stored in MA packages MA or CA food packaging Perishable foods Paper 7642 Eero Hurme 6

Package leakage indication systems BACKGROUND New materials, new product types leaking seals possible hazards in safety Demonstrations of integrity requirements for consumer packages Development of in-line nondestructive leak testers Development of package indicators Paper 7642 Eero Hurme 7

Critical leakage diameter in consumer packages Growth of E. aerogenes in biotested packages Contaminated (%) Contaminated (%) Microhole diameter (µm) Microhole diameter (µm) Paper 7642 Eero Hurme 8 Aseptic cup, lid 100 µm Retort tray, lid 220 µm

Package leakage vs. microbiological quality PCA (log CFU/g) Leaking package C8, PCA CL8, PCA C5, PCA CL5, PCA Paper 7642 Eero Hurme 9 time (d)

Package leakage vs. indicator colour change L-value OS8 OSL8 OS5 OSL Paper Eero Hurme time (d) Leaking package

Low cost Ink- jet inks for Indicators Clearly visible colour reaction Irreversible colour change preferred Stabile (time, temperature, moisture) Suitable for food contact (legislation) Physical properties; low viscosity, typically below 20 mpa s surface tension/wetting behaviour of fluid and nozzle material spray formation Moisture often important in colour development water-based inks binders and surface tratments to improve the adhesion. Paper 7642 Eero Hurme 11

Printed package leakage (O 2 ) indicator Visual and/or optically readable, low cost for sterilised shelf stable products (indicator activated by heat). Based on indigo colourant for fast moving consumer goods (indicator activated by volatile reducing agent, e.g. ammonia). Based on redox dye Paper 7642 Eero Hurme 12

Printed package leakage (O 2 ) indicator Application areas Tamper-evidence of hermetically sealed food/pharmaceutical/cosmetic packages Evaluation of use-by date in opened package at home Evaluation of remaining shelflife of packed product Paper 7642 Eero Hurme 13

Demo: Printed Use-by Indicator Printing: flexo (can be ink-jet) just before packaging Package conditions: 100% N 2, rh 100%, O 2 scavenger, 200mL plastic tray The clock started when the package was opened The rate of the colour change can be tailored: reducing agents/compsition/protective layers 48 HOURS 2 HOURS Intact Opened Paper 7642 Eero Hurme 14

OPTICAL DETECTION Mobile camera phone DEMO: The software detects the square from the focus area the colour change is recognised information can be used for judging whether the food is fresh or whether the package has been opened/tampered Paper 7642 Eero Hurme 15

Freshness indicators Volatile compounds produced in microbial spoilage in perishable products (meat, fish, poultry, fresh-cuts, ready-to-eat meals) metabolites causing ph change, nitrogen compounds (e.g. volatile & biogenic amines), sulphuric compounds, HUMIDITY Paper 7642 Eero Hurme 16

Freshness indicators METABOLITES H2S CO 2 SO 2 NH 4 amines diacetyl organic acids ethanol microbial toxins ty ram in e (p p m ) PCA (cfu/g) Smolander, VTT Paper 7642 Eero Hurme 17
