2 HEAD CHEF THE POST Principal Place of Work: Reporting to: Purpose of the Post: Direct Reports: Lyceum Theatre, Crewe Hospitality Manager The position of Head Chef for the Lyceum Theatre requires strong leadership, the desire and ability to make a difference, passion for food and solid organisational skills. The Head Chef will manage the quality and standard of food, profitability and day to day operation of the kitchen. As part of the senior team this role will influence the success of the Hospitality operation at the Lyceum Theatre. Kitchen Staff LYCEUM THEATRE The Lyceum Theatre is a beautiful, grade II listed, 670-seat Edwardian theatre, now in its 102 nd year. In October 2012, HQ Theatres were appointed by Cheshire East Council to manage the Lyceum. In February 2013, HQT will announce an exciting programme which will include the country s top stand-up comedians, West End plays, popular and classical music, family shows and a star-led, traditional family pantomime produced by Qdos Entertainment, the largest pantomime producer in the world. From early 2013 the Lyceum will have a fresh new look to its foyer and bars, creating fantastic new opportunities to eat, drink, socialise and be entertained. KEY RESPONSIBILITIES The management of the kitchens within the Lyceum Theatre Ensure that all service within the kitchens is performed to the required standard set by the Lyceum Theatre To ensure the menus achieve the agreed budgeted costs and net profit in accordance to the management accounts Planning innovative promotions, development of product lines and ensuring the food choices are constantly evolving to remain ahead of our competitors and maximise sales To help manage and develop a dedicated team of staff highly focused on delivering excellent standards of service To work side by side with the Hospitality Team in all aspects of the day to day operations of the business Page 2 of 5

3 To manage the chef team to the standards agreed by the Hospitality Manager. To continually develop, evolve and enhance the dining experience within the Lyceum Theatre Writing of the weekly rotas for the kitchens, health and safety, and all other paper work required on a day to day basis. To ensure all Health and Safety records are updated on a weekly basis. To ensure the food GP is maintained at 70% and above at all times. To develop and implement menus on a weekly basis To ensure all members of the chef team are trained and this is kept updated. To ensure the Kitchen Diary is constantly updated ensuring all knowledge pertaining to events have been collated. To ensure purchasing expenditure is in line with forecast business levels To understand and have a working knowledge of all current Health and Safety, Food safety legislation and be conversant with the rules contained within. To maintain all necessary documentation required by these rules and regulations. To ensure ordering is done correctly with the nominated suppliers and stock control procedures are adhered to. To ensure that the control of waste does not exceed expected levels. To identify and implement, with reference to the Hospitality Manager, any new areas of business likely to enhance the profitability of HQ Theatres Ltd and the theatre. In conjunction with the Hospitality Manager, liaise with business partners and suppliers ensuring best prices. To maintain all equipment within the catering operation, through due care and diligence. To undertake and review staff appraisals for direct reports on an annual basis To proactively manage the performance of the kitchen team To conduct bi-annual benchmarking exercises on local competitors to understand trends, competition and competitiveness To maintain stock sheets with current market prices and new product lines. 4 This job description is current at commencement of employment. In consultation with the post holder, it is liable to variation by management to reflect or anticipate changes in, or to, the role of Head Chef. PERSON SPECIFICATION Essential This role requires the successful candidate to be a well presented and professional with proven experience within a similar style of catering operation, either as a Head Chef or Senior Sous Chef Demonstrable experience of applying flair and innovation to create an overall customer experience An excellent motivator and team player, used to managing a large on-site team, ensuring a first class service is delivered with the expected financial results. An excellent communicator, both written and verbal. A strong understanding of the retail side of the catering business, particularly with regard to restaurants and bars. An exceptional passion for the leisure and hospitality sectors. Willing to work flexible hours including evenings, weekends and Bank Holidays as the business requires. Positive approach to problem solving Ability to work effectively as part of a team Desirable Minimum of 3 years experience of working in an entertainment venue Page 4 of 5

REMUNERATION PACKAGE Starting salary: c 27,000 per annum. The post attracts no additional payments for overtime or late working. HOURS OF WORK 40 hours per week. Occasional evening, weekend and Bank Holiday working may be required.
