INTRODUCTION FASTCHEF Elite This instruction manual for the FAST CHEF Elite Automatic Fryer has been designed to ensure that users understand the operations that must be carried out whilst in charge of this machine. It provides a description of all the situations that may arise during transport, maintenance and cleaning activities. The contents of this instruction manual must be understood by all the people in charge of operating, maintaining and cleaning the machine. This manual must be kept in a safe place, available only to authorised personnel and technical staff who may require it. 2. DESCRIPTION OF EQUIPMENT This Automatic Fryer model has been designed so that it can be used by just one person to fry any kind of frozen food with a maximum length, surface and volume of 7 cm, 7 cm 2 and 7 cm 3 respectively. For larger foods, we recommend first consulting the manufacturer or authorised technical services. It is also possible to fry fresh foods provided that their size does not exceed the above measurements and their shape is appropriate. All the components are housed in a stainless steel (AISI 304) unit. The FAST CHEF Elite fryer fries all kinds of food in the traditional way, without smoke or odours

6 2.2.1 ACCESS TO ELECTRONICS The machine s electronics are accessible from the left-hand side of the unit. To access them, loosen the screws that hold the protective panel in place and remove the panel by gently pulling upwards and away from the machine CAUTION! THE MACHINE HAS ELEMENTS WITH DANGEROUS VOLTAGES. DO NOT HANDLE ANY COMPONENTS MARKED WITH THE HIGH VOLTAGE SYMBOL. ONLY TECHNICAL SERVICES ARE AUTHORISED TO DO SO. ALL ELECTRONIC OPERATIONS MUST BE CARRIED OUT WITH THE MACHINE DISCONNECTED FROM THE MAINS ELECTRICITY SUPPLY 8

7 FASTCHEF Elite The electronics are connected to the mains electricity supply. This electric current flows through a 20A magnetothermic switch which will be triggered by any excess current or shunt, thereby cutting off the electricity supply to the machine. The mains voltage is converted to 5, 12 and 24 V DC by means of a toroidal transformer and electronic board. This feeds the fryer s product dispenser motor, trap door motor, heat exchanger fans, gas extraction and internal condensation fan, resistor contactor and condensed water level detector. 8 2.2.2 FRYER 2 The fryer consists of a chamber made of AISI 304 stainless steel with an upper opening which allows the product to be inserted for frying and a front opening which dispenses the fried product. At the bottom, there is a valve which facilitates the task of emptying the oil. In order to guarantee correct operation, the volume of oil should be kept between a minimum of 5 litres and a maximum of 6 litres. Inside the fryer (see lower picture), there is a resistor which heats the oil, a grille which separates the food from the resistor and also separates sediments and frying debris, a sensor (S1) to regulate the oil temperature, a sensor (S2) to monitor the oil level and a manual reset safety thermostat set at 230ºC -5%. If the sensor which regulates the oil temperature should fail and the thermostat were to reach the indicated temperature, the latter would cut off the voltage to the resistor, thereby putting the machine out of service. 9 FASTCHEF Elite The thermostat can be reset by unscrewing the cap located on the outside of the unit and pressing the button that is uncovered. Inside the fryer, there is a blade which extracts the fried product. At the top right, there is a heating unit. By removing the cover of this unit, it is possible to access the resistor connections, safety thermostat and temperature and oil level sensors. When the Low Level symbol appears on the display, ONE LITRE of new oil must be added to the fryer. Manual reset of safety thermostat IT IS RECOMMENDED THAT THE OIL SHOULD ALWAYS BE KEPT AT THE MAXIMUM LEVEL, WITHOUT GOING OVER THE LIMIT! 11

10 2.2.3 DISPENSER TRAY The purpose of this tray is to collect the food that comes out of the fryer s opening ready to be served. 3 Product tray CONDENSER UNIT 4 This is located behind the fryer, at the back on the left. The unit consists of a box inside which there is a stainless steel (AISI 304) coil. All the vapours generated during the frying process circulate inside the coil and are thereby condensed. The water, together with oil particles, flows into the condensate tank which is located in the central area below the unit. This tank serves as a second condensation phase which is, in turn, connected to the filter box collector by means of a silicone tube Condenser unit Filter box Coil Liquid waste discharge tube Liquid waste collection tank

11 FASTCHEF Elite FILTER BOX This consists of a stainless steel (AISI 304) box located at the back right of the unit. It measures 332 x 544 x183 mm. The box is equipped with a front-facing door which is held in place by two toggle latches and provides access to the inside, where there is a metal filter and a carbon filter which contains activated carbon. At the bottom, the box is connected to the water decantation collector in order to eliminate any last remains of water that may be decanted in the metal filter. This ensures that all the moisture is eliminated from the air before it travels through the activated carbon filter and is released (free of smoke and odours) into the air through the grille located at the top right of the unit. 5 Collector PRODUCT ENTRY HOPPER 6 The hopper is located on the top left of the unit. It is shaped like an inverted pyramid with a lid on top. The uncooked product must be placed in the hopper. The latter is large enough to hold the maximum amount of food that can be fried at any one time, depending on the production mode selected (normal or continuous production). The front side has slotted perforations so that it is easy to see whether the load is sufficient to be able to start frying. This element can be easily detached so that it may be washed in the same way as usual kitchen tools. Slotted perforations Carbon filter Metal filter Hopper 13

12 2.2.7 TRAP DOOR SUPPORT 7 The sliding trap door is located on the inside, underneath the hopper. The trap door motor makes the door slide automatically to the right, thereby creating an opening to allow the uncooked food to fall into the fryer. By means of this simple operation, a signal is also sent to the electronic control board to activate the selected frying programme so that the automatic frying process will begin and the food will be extracted once it has been fried. Underneath the trap door support, on the left, there is a 90mm x 110mm parallelepiped which is called the extraction coupling. There is a powerful extractor which absorbs and sucks out all the vapours and gases produced inside the fryer during the frying process and sends them through the decanter where they are condensed. Condenser unit fan Trap door Gas entry tube to decanter Filter box extractor Hopper Handwheel EXTRACTION COUPLING Extraction coupling This is a stainless steel (AISI 304) part in the shape of a parallelepiped. On the left-hand side it has a 32mm-diameter tube which is connected to the decanter via a high temperature resistant hose. The coupling slides downwards along the outer lower part of the trap door support and fits onto the fryer opening. Its purpose is to form, together with the part of the trap door support along which it slides, a chute which directs the uncooked product from the hopper to the fryer. To make it easier to remove and position the fryer, this element slides along the trap door support and can be fixed to the latter by means of a handwheel, thereby releasing the fryer. 14 8

13 FASTCHEF Elite ADJUSTABLE LEGS Underneath the unit there are four legs which can be adjusted to compensate for any unevenness in the surface on which the machine stands. This ensures that the machine is always completely horizontal. 9 CAUTION! THE MACHINE MUST ALWAYS BE POSITIONED ON A COMPLETELY HORIZONTAL SURFACE. FAILURE TO COMPLY WITH THIS REQUIREMENT MAY BE DANGEROUS AND AFFECT MACHINE OPERATION FRYER MOTOR 10 The rotation of the fryer blade is possible due to the incorporation of a motor which makes the system rotate. There is a fryer interlocking system which prevents it from coming free of the motor FRYER RELEASE 11 On the top of the unit there is a handwheel which releases the fryer from the motor, in order to facilitate its removal. 14 INTERNAL CONDENSATION FAN 12 The internal condensation fan is located in the bottom left of the unit which houses the activated carbon filter box. Condensation fan CAUTION! THE MACHINE MUST ALWAYS BE POSITIONED ON A COMPLETELY HORIZONTAL SURFACE. FAILURE TO COMPLY WITH THIS REQUIREMENT MAY BE DANGEROUS AND AFFECT MACHINE OPERATION. 3. TRANSPORT The "FAST CHEF Elite" machine is transported fully assembled, taking into account the following precautions: It must always be transported in a vertical position, as stated on the packaging. The fryer must not contain oil. CAUTION! NEVER LIE THE MACHINE ON ITS SIDE Do not throw away any electronic circuits as many of the materials used to manufacture them can be recycled. Please contact the local authorities to obtain information about how they may be recycled. 16

15 4.1 INSTALLATION PREMISES 4. START-UP FASTCHEF Elite The machine was designed and built for indoor use. Nevertheless, if the necessary precautions are taken regarding rain, wind and exposure to sunlight, it can also be used outdoors. For the optimal operation of the aforementioned system, it is recommended that the machine be placed as far away as possible from heat sources such as hobs, hot plates, cooling system outlet pipes, etc. The worktop or unit on top of which the fryer is placed must be completely horizontal. If the machine is not placed in a completely horizontal position, its operation may be affected and oil leaks may occur. 4.2 ELECTRICAL CONNECTION The fryer comes with a flexible 2-meter cable to connect it to the premises electricity supply. The single-phase fixed installation must be able to withstand a 20 A load with a voltage and frequency of 230 V 50/60 Hz. It must also be earthed and be protected against power surges and other fluctuations. The machine includes an equalisation terminal underneath the unit in order to connect serial earth connections. CAUTION! THE MACHINE HAS ELEMENTS WITH DANGEROUS VOLTAGES. DO NOT HANDLE ANY COMPONENTS MARKED WITH THE HIGH VOLTAGE SYMBOL. ONLY TECHNICAL SERVICES ARE AUTHORISED TO DO SO. THE POWER CABLE CAN ONLY BE REPLACED BY QUALITYFRY S AUTHORISED TECHNICAL STAFF. IT IS FORBIDDEN TO CONNECT THE MACHINE TO UNEARTHED CONNECTIONS OR CONNECTIONS THAT ARE NOT PROTECTED AGAINST SURGES AND OTHER FLUCTUATIONS! THE MACHINE MUST ONLY BE CONNECTED TO SINGLE- PHASE FIXED INSTALLATIONS

16 4.2.1 MAIN SWITCH The machine has a main magnetothermic switch to disconnect it from the electricity supply. If there is an electricity overload or power cut, the switch can be accessed by removing the side cover of the electrical box (see «2.2.1 ACCESS TO ELECTRONICS»). When the switch is in the ON position, the machine is ready for use. When it is in the OFF position, the machine will be disconnected. Main switch ON OFF ON/OFF SWITCH This is located on the right-hand side of the machine, below the keypad. The switch is illuminated and lights up in red when in the ON position (upwards). When ON, the fryer is ready for use. ON/OFF Switch CAUTION! NEVER OPEN THE MACHINE DOOR WHEN THE ON/OFF SWITCH IS IN THE ON POSITION. 18

17 4.3 PROGRAMMING FASTCHEF Elite The fryer s programmes and functions can be accessed using the keypad and display located on the right-hand side. The machine has a total of 8 different frying programmes to adapt to any food type and size (within the limits set by this manual). The 8 aforementioned programmes can be accessed using the keys 1 to 8 on the keypad. To do so, please follow the instructions given in the manual. 19

18 4.3.1 OPTION SELECTION KEYS The MENU,, and ESC keys are located below the display. These keys can be used to select the different options offered by the programming menu which are visible at the bottom of the display. The options included in the MENU are the following: 1. DATA: This displays counters and immediate values for some of the most frequentlyused variables such as oil temperature and number of portions prepared. 2. DELETE DATA: This can be used to delete the partial portions counter. It is not included in the above option so as not to make it too complicated. 3. PROGRAMMES: The temperature and frying time for different programmes can be set using this option. 4. SETUP: The temperature format (ºC or ºF) and language in which messages will be shown can be selected here. It allows us to enable or disable the initial messages, Slow-Fry option and acoustic warning during blade movement. 5. LARGE PORTIONS/SINGLE PORTIONS: The type of production can be selected here: normal (only 1 section frying and one on hold) or continuous (two sections frying and one on hold). In order to access the different menu options, press the MENU key when the cursor is flickering over the desired option DATA MENU Access to the data menu can be obtained by pressing the MENU key when the cursor is flickering over the DATA option. The temperature and oil level sensors can be seen here. This menu also shows the remaining data, partial counter of portions prepared and total counter of portions prepared. Press the ESC key at any time to return to the operation screen. 20

19 4.3.3 DELETE DATA MENU This can be accessed by pressing the MENU key when the cursor is flickering over the DELETE DATA option. A deletion confirmation message will appear. Press the ESC key to return to the operation screen without deleting. FASTCHEF Elite Press the MENU key to delete the partial counter of portions made and return to the MENU screen PROGRAMME MEMORY MENU This can be accessed by clicking on MENU when the cursor is over the PROGRAMMES option. P 5 170ºC 02:10 ESC ENT The screen will show three lines: - TEMPERATURE: Working temperature selected for all programmes. - PROGRAMME: Selects the programme for which the frying time is to be changed. - TIME: Frying time for the programme selected in the previous line. NOTE: If the Slow-Fry programme is enabled, the Slow- Fry times and temperatures can be modified. - SLOW-FRY TEMPERATURE: Working temperature for Slow-Fry. This can be set between 100 and 130ºC. - SLOW-FRY TIME: Frying time for Slow-Fry. When accessing the PROGRAMMES option, the temperature line will be highlighted. Press the MENU/ ENTER key to modify the temperature in general for all programmes, using the and keys. The frying temperature for any programme can be increased/decreased by intervals of 5ºC using the and keys, from a minimum of 120ºC to a maximum of 195ºC. Once the desired temperature has been set, it must be confirmed by pressing the MENU/ENTER key

20 When accessing the Programme line, enter the number of the programme for which the time needs to be modified. Press the MENU/ENTER key to change the frying time for the selected programme. The frying time can be changed by increasing/ decreasing it by intervals of five seconds using the and keys, from a minimum of 20 seconds to a maximum of 15 minutes. Once the number of desired minutes has been set, it must be confirmed by pressing the MENU/ENTER key. If the Slow-Fry programme is enabled, the times and temperatures for Slow-Fry can be changed, just like for other programmes. The time can be chosen from between 10 to 25 minutes and the temperature from 100ºC to 130 ºC. NOTE: The Slow-Fry option will only function in programme SETUP MENU This can be accessed by pressing the MENU key when the cursor is flickering over the SETUP option. After acessing the SETUP option, a submenu appears with the following options: - LANGUAGE: This can be used to modify the language in which the different messages will be displayed. - DEGREES: This changes the scale used for the programme s temperature. - SET INITIAL MESSAGE: The initial message can be enabled or disabled. - ENABLE SLOW-FRY OPTION: It is possible to fry at a low temperature for a long period of time

21 - ENABLE ACOUSTIC WARNING: The acoustic warning can be enabled or disabled. Once inside the SETUP submenu, navigation through the different options can be done using the and keys LANGUAGE SETTING This can be accessed by pressing the MENU key when the cursor is flickering over the LANGUAGE option. The following screen displays the different languages that can be chosen for the messages. FASTCHEF Elite The language can be selected by using the and keys. When the cursor is flickering over the first letter of the language desired, press the MENU key to confirm and to return to the MENU screen TEMPERATURE SCALE SETUP This can be accessed by using the MENU key when the cursor is flickering over the DEGREES option. The scale in which the temperature is displayed (ºC or ºF) can be selected by using the and keys. When the cursor is flickering over the first letter of the desired scale, press MENU to confirm and to return to the MENU screen SLOW-FRY PROGRAMME SETUP The Slow-Fry programme will fry food at a low temperature (between 100ºC and 130ºC) for a long period of time. It may be used to fry potatoes in two stages, first slow-frying them (10 minutes at 100ºC) and then at a higher temperature (e.g. 1 minute at 190ºC). This can be accessed by pressing the MENU key when the cursor is flickering over the ENABLE SLOW-FRY option. 1 1 Slow-Fry icons 2 2 When this option is enabled, the machine will display Press 1 for slow-fry, provided that the oil temperature is below the temperature previously set for slow-frying. 23

22 4.3.6 NORMAL/CONTINUOUS PRODUCTION This can be accessed by pressing the MENU key when the cursor highlights the NORMAL/CONTINUOUS PRODUCTION option. When selected, a submenu will be displayed showing the following production options to choose from: - CONTINUOUS SINGLE PORTIONS: The display will show an icon of two 200-gram portions. When using this option, the machine will fry two portions simultaneously and it will have a third one on hold. These portions may take up half of the entry hopper and their weight will depend on the product to be fried LARGE PORTIONS 1 BLADE ROTATION: The display will show an icon of one 400-gram portion. When this option is selected larger portions can be fried individually (entry hopper full). This option includes one blade rotation. - LARGE PORTIONS 2 BLADE ROTATIONS: This is the same as the previous option but the extraction blade rotates twice to make sure there no product is left in the fryer from the previous portion. Once in the NORMAL/CONTINUOUS PRODUCTION option, navigation through the different options can be done by pressing the and keys. 23 4.4 OPERATION FASTCHEF Elite The fryer will be ready for use once it has been installed, there are 6 litres of oil in the fryer, the bend connector located at the top of the fryer has been connected and the main switch, located inside the electrical box, is in the ON position. CAUTION! NEVER CONNECT THE MACHINE IF THE FRYER DOES NOT CONTAIN 5.25 LITRES OF OIL PROCESS Close the machine door. Push the ON/OFF switch located below the keypad upwards so that it lights up. The display will show the following message: CHECK OIL LEVEL AND PRESS ON. Once the ON key has been pressed the oil will start to heat up and the display will change colour and show the programmed temperature, the production mode icon and the current oil temperature, which will gradually increase until it reaches the programmed temperature. Once the oil has reached the optimal frying temperature, the display will turn white and show the programmed temperature, the production mode icon (200g/400g), the message Insert product, select programme and press Enter, Programme, Frying time and Finish time. 25

24 To start the frying process follow the steps described below: 1. Place the uncooked product into the hopper 2. Select the frying programme, CAUTION! Check that the frying time for the programme to be used is correct, if not, press the appropriate key and press Enter. 3. The trap door, moved by a motor, will slide to the right and the product will fall inside the fryer. At this point the frying time will begin, according to the selected programme, and is shown on the display in the form of a countdown, running downwards towards 0: The key can be used at any time to increase the current frying time. Press this key to increase the frying time by 5 second intervals. 5. We can stop the frying process at any point, even if the time has not elapsed, by pressing the expel product key When the counter reaches 0:00, the blade will start rotating in order to extract the product. Once extracted, an acoustic signal will be heard for a few seconds and there will be a brief message on the screen stating that the process has ended and the product can be removed from the tray The machine is ready to be used again. 26

25 FASTCHEF Elite USE OF HEAT-UP PROGRAMME 8 "FAST CHEF Elite" has an added advantage, namely the use of programme 8 (heat-up), which is factory-set to last 20 seconds. This programme makes it possible to warm up a product that has been fried a few hours earlier, in just 20 seconds. The time given is for guidance purposes and will depend on the product itself and on how long it was fried for initially MAINTAINING OIL LEVEL DURING MACHINE OPERATION The frying process entails oil consumption, given that each product that is fried will absorb a small amount. The Fast Chef automatic fryer warns when the oil level has dropped to 5 litres, showing an icon (1) and a LOW OIL LEVEL message (2) on the display. When this icon appears, 1 LITRE OF OIL must be added, as described in the following chapter. IMPORTANT: Once the icon and the LOW OIL LEVEL message appear, the machine will allow a maximum of 20 frying sessions after which it will go OUT OF SERVICE until the oil needed to reach the maximum level is added (add 1 litre). 26 4.4.4 MAINTAINING LEVEL OF CONDENSATION DURING MACHINE OPERATION When frying food, water and oil vapours are produced which are condensed in the different smoke and odour filtering stages. The Fast Chef automatic fryer warns when the condensation tank has exceeded the maximum level of condensed water allowed for the correct functioning of the filter system, showing an icon (1) and a CONDENSATION TANK FULL message (2) on the display. When this icon appears, the tank must be emptied according to the procedure described in the following chapter. IMPORTANT: Once the icon and the CONDENSATION TANK FULL message appear, the machine will allow 10 frying sessions after which it will go OUT OF SERVICE until the tank is emptied

27 FASTCHEF Elite 5. MAINTENANCE INSTRUCTIONS: FILLING & CLEANING 5.1 OIL The fryer oil must be replaced every 5-7 days depending on machine usage, the kind of oil used and the foods fried. In order to produce quality products, it is necessary to use the type of oil recommended by QUALITYFRY. If this is not done, the manufacture will not accept responsibility for any reduction in product quality. We recommend contacting the authorised technical services in order to obtain recommendations regarding the most appropriate oils to use. 5.2 MAINTENANCE CAUTION! IT IS ESSENTIAL TO ALWAYS KEEP THE OIL LEVEL IN THE FRYER BETWEEN THE MAXIMUM (6 LITRES) AND MINIMUM (5 LITRES) LIMITS. FAILURE TO COMPLY WITH THIS RULE MAY LEAD TO OPERATING PROBLEMS, CAUSING THE SAFETY THERMOSTAT TO BE TRIGGERED AND THEREBY PUTTING THE MACHINE OUT OF SERVICE OR LEADING TO OIL LOSS AND ODOURS. Cleaning should be carried out in a meticulous and scheduled way, according to the specifications of this manual. Before carrying out any work or cleaning operations inside the machine, the fryer oil temperature should be below 40ºC, which means that the machine must have been disconnected at least 5 hours earlier DAILY MAINTENANCE CAUTION! THESE OPERATIONS MUST BE CARRIED OUT WITH THE OIL TEMPERATURE BELOW 40ºC Machine exterior: Clean with a damp cloth and neutral detergent. Clean the hopper (where the food is inserted prior to frying). 29

28 With the fryer oil temperature below 40ºC and the ON/OFF switch in the OFF position, open the machine and clean the outside and inside of the door, the dispenser tray and any dirt that may have splashed onto the front of the fryer or the supporting guides. Extraction coupling Fryer exterior Door interior Product tray It is recommended that the oil should be filtered every day in order to optimise product quality. After doing so, sufficient oil should be added in order to reach the maximum level of 6 litres in the fryer. To filter and renew the oil, carry out the following steps: 1. Switch the machine off by pushing the red ON/OFF button. 2. Wait for app. 5 hours for the oil temperature to fall down to 40ºC. 3. Switch the machine on by pushing the red ON/OFF button. 4. Press the wash key

29 FASTCHEF Elite 5. Select the FILTER line by using the keys. 6. Press the MENU/ENTER key. 7. Switch the machine off by pushing the red ON/OFF button downwards. 8. Unscrew the cover from the oil outlet nozzle. 8 CAUTION! DO THIS OPERATION WITH THE CHAMBER DRAINAGE VALVE IN THE CLOSED POSITION 9. Screw the silicone tube (supplied with the machine) onto the oil outlet nozzle. 10. Remove all the fryer oil by opening the valve that is located at the bottom of the frying chamber so that it flows through the filter-funnel into the graduated bucket (if the oil is going to be completely renewed then there is no need to filter it, instead it should be discarded in an appropriate container) Fill up the bucket with new oil until the maximum level of 6 litres is reached. This level must never exceed the maximum of 6 litres. 12. If everything is in order, disconnect the silicone tube and put the previouslyremoved elements back in place. 13. Switch the machine back on by pushing the red ON/OFF button upwards

30 5.2.2 CLEANING THE FRYER The fryer is the machine component which requires most attention since the quality of the end product entirely depends on the quality and state of the oil, as well as the internal cleanliness of the fryer. Any attempts to achieve small savings by delaying oil changes will lead to serious errors which could ruin your business. Each time the fryer is cleaned, the oil should be completely replaced. The fryer must be cleaned every 5-7 days, depending on the hours of usage, number of portions fried, type of products and how often the sediments are removed. CAUTION! THESE OPERATIONS MUST BE CARRIED OUT WITH THE OIL TEMPERATURE BELOW 40ºC CLEANING OPERATIONS: EMPTYING In order to extract the oil, carry out the following steps: 1. With the fryer oil temperature below 40ºC and the ON/OFF switch in the OFF position, open the machine door, loosen the handwheel of the extraction coupling and lift the latter upwards in order to detach it from the fryer. Turn the handwheel clockwise in order to fix the coupling and prevent it from falling. 2. Completely empty all the oil by opening the valve that is located at the bottom of the chamber and collecting it in a container which can be sealed afterwards. If any blockage should occur in the tube due to debris or sediments which may prevent the oil from flowing, the tube may be unblocked by inserting a wire into the end, provided that the oil temperature is below 40ºC. When all the oil has been removed, close the valve. 3. If the fryer is to be extracted from inside the unit, it is necessary to release the electrical connector that is located at the top right by unscrewing it and pulling towards the back. 4. Remove the dispenser tray. 5. Unscrew the lid on the oil outlet nozzle. 6. Screw on the silicone tube for oil outlet. 32

31 FASTCHEF Elite CLEANING OPERATIONS: FULL DISASSEMBLY AND CLEANING 7. CLEANING OPERATIONS: WASH 7.1 Automatic wash Push the wash button Move to the Automatic wash line by using the keys Push the MENU/ENTER key Wait until the display screen indicates that the oil temperature is 40ºC or below Follow the display indications: Switch the machine off (ON/OFF button in downwards position) Empty the fryer oil (see page 31 of the manual) Pour in 7 litres of water and 100cc of degreasing liquid suitable for the food industry (do this in the same way as when refilling fryer oil) Switch the machine on (ON/OFF button in upwards position) Wait while the display indicates Washing and Waiting water temperature below 40 degrees (NOTE: This operation may last two hours) Follow the display indications: Switch the machine off (ON/OFF button in downwards position) Empty the washing water out of the fryer (see page 31 of the manual) Pour in 7 litres of clean water for rinsing (do this in the same way as when refilling fryer oil) Switch the machine on (ON/OFF button in upwards position) Wait while the display indicates Rinsing and Waiting water temperature below 40 degrees (NOTE: This operation may last two hours) Follow the display indications: Switch the machine off (ON/OFF button in downwards position) Empty the rinse water out of the fryer (see page 31 of the manual) Remove the fryer from the unit (see points 8 to 26, pages 35 to 39) Disassemble the fryer (see points 8 to 26, pages 35 to 39) Rinse the fryer (see points 8 to 26, pages 35 to 39) Dry with absorbent paper (see points 8 to 26, pages 35 to 39) Reassemble the fryer inside the unit (see points 8 to 26, pages 35 to 39). 33

32 7.2 Cold wash (without connecting electrical resistor) Empty the fryer oil (see page 31 of the manual). CAUTION: Do this when the oil temperature is below 40ºC Remove the fryer from the unit Pour in 7 litres of hot water and 100 cc of degreasing liquid suitable for the food industry Leave the mixture of water and degreasing liquid inside the fryer for 1 hour Completely empty the fryer Disassemble the fryer (see points 8 to 26, pages 35 to 39) Clean and dry the fryer then reassemble it inside the unit (see points 8 to 26, pages 35 to 39). 7.3 Hot wash (with the electrical resistor connected) Empty the fryer oil (see page 31 of the manual). CAUTION: Do this when the oil temperature is below 40ºC Remove the fryer from the unit Pour in 7 litres of hot water (9 litres if the optional kit cover is used) and 100 cc of degreasing liquid suitable for the food industry Connect the electricity extension lead (optional kit) to the fryer and the electricity socket Boil for 10/15 minutes Disconnect from the socket Leave the water to cool for 1 hour Open the fryer valve and empty out the water Disassemble the fryer (see points 8 to 26, pages 35 to 39) Clean and dry the fryer then reassemble it inside the unit (see points 8 to 26, pages 35 to 39). 34

33 CLEANING OPERATIONS: DISASSEMBLY AND RINSING 8. No tools are necessary to disassemble and assemble the fryer. FASTCHEF Elite 9. Remove the product dispenser unit from the front of the fryer by unscrewing the three handwheels that secure it to the frying chamber Remove the blade. To do this, insert your hand into the front opening and push upwards until it is in a vertical position. 11. Pull the blade upwards until it is removed from the housing Disassemble the blade disc by pulling outwards

34 12. Remove the grille. 13. Detach the heating unit from the fryer. Pull upwards to remove the unit together with the resistor. The inside of the heater box must not come into contact with the water and the resistor must never be submerged as far as the wiring box The cleaning process must be done using plenty of water to wash the different parts and an aluminium scourer to remove all the dirt. All the components can be dried using absorbent paper. 15. Once all the components are dry, reassemble the machine by following the instructions for disassembly in reverse order (see steps 16 to 26). NOTE: It is also possible to clean the fryer using a hot water high pressure cleaner, which makes the task considerably easier and quicker. To do so, completely disassemble the grille and the rest of the internal mechanical elements and clean them individually. Be careful not to get the electrical box wet

35 FASTCHEF Elite CLEANING OPERATIONS: FULL ASSEMBLY 16. Insert the electrical box (heating unit) and fix in place using the two toggle latches. Do not forget the seal of the heating unit. Notch 17. Insert the metal grille (oil filter), taking into account that the notch at the top must match the notch on the left of the fryer. 18. Fix the blade disc in the vertical position Insert the extraction blade in the vertical position (as in the photo), taking care that it goes through the two pivots. 36 21. Position the upper lid in place, with the white rubber seal in the correct position (it is narrower at one end than the other), and secure in place using the four toggle latches. 22. Position the fryer on the guides. Seal Loosen the handwheel which secures the extraction coupling. Adjust the latter so that it fits correctly onto the fryer s upper opening and secure it using the handwheel. Extraction coupling Once positioned on the guides, fill with 6 litres of new oil (maximum level). DO NOT EXCEED THIS VOLUME. To do this, first position the fryer inside the unit and, WITHOUT connecting the electrical connector located at the top right, put the ON/OFF switch into the ON position (upwards) and keep it there until the product entry trap door has been fully opened, at which point immediately put the switch into the OFF position (downwards). (This process may be repeated if the trap door is not correctly opened). Once the product entry trap door is open, pour 6 litres of oil into the fryer

38 5.2.3 REGULAR MAINTENANCE PRODUCT ENTRY UNIT AND HOUSING: CLEANING PRODUCT ENTRY UNIT: This should be cleaned as often as necessary but at least once a week. 1. With the fryer oil temperature below 40ºC and the ON/OFF switch in the OFF position, open the machine door, loosen the handwheel of the extraction coupling and lift the latter upwards in order to detach it from the fryer. Turn the handwheel clockwise in order to secure the coupling and prevent it from falling. 2. Loosen the connector located at the top right of the fryer by unscrewing and pulling it away from the machine. 3. Pull the fryer release handwheel upwards and slide the fryer out. 4. In order to access the decanter it is necessary to remove the fryer from the machine. 5. Loosen the handle that secures the trap door motor to the product entry trap door. 6. Loosen the handwheel of the extraction coupling and remove the latter from the product entry opening. Trap door 3 5 Extraction coupling

Remove the whole product entry unit by pulling upwards Open the filter box lid, located at the back right of the unit, by means of the two toggle latches that hold it in place. 9. Clean the walls, back and bottom of the filter box using a brush soaked in a mixture of water and degreasing liquid. Remove the metal filter and wash after every 2000 portions or once a month. 10. Use paper or a cloth to dry the walls of the filter box. 11. Fully submerge all the disassembled elements in very hot water with 100ml of the same degreasing liquid as used to clean the fryer. These elements may also be cleaned using a high pressure water cleaner. 12. After 30 minutes, remove all the elements and rinse using plenty of clean water. 13. Reassemble everything back in the initial position and connect the tubes. Take special care to ensure that the extraction coupling is correctly fitted onto the fryer. 41

40 DECANTER: CLEANING THE COIL DECANTER: The decanter coil must be cleaned after every 10,000 portions or after every 6 months of operation. 1. Unscrew the decanter s lower tube connector. 2. Unscrew the flat tank connector and remove the whole piece. 3. Remove the handwheels of the extraction bend and remove the bend. 4. Screw the drainage tube onto the lower part of the coil Upper tube Lower tube 5. Attach the filling tube (22x4) to the upper part of the coil. 6. Pass the two tubes through the product entry opening. Try to ensure that there are no kinks in the tubes. 7. Pour hot water mixed with degreasing liquid into the tube that leads to the upper part of the coil. 8. Leave the product to work for 15 to 20 minutes. 9. Carefully remove (from the product entry opening) the tube that leads to the lower part of the coil Pour the dirty water into a bucket. 11. Rinse with hot water by pouring it in through the upper tube using the funnel. 12. Repeat until the water comes out clean

41 METAL FILTER AND ACTIVATED CARBON FILTER FASTCHEF Elite ACTIVATED CARBON FILTER: The activated carbon filter must be replaced by a new one after every 15,000 portions or once a year, following the procedure described below. METAL CARBON FILTER: The metal filter should be cleaned after every 2000 portions or once a month. 1. With the fryer oil temperature below 40ºC and the ON/OFF switch in the OFF position, open the machine door, loosen the handwheel of the extraction coupling and lift the latter upwards in order to detach it from the fryer. Turn the handwheel clockwise in order to fix the coupling and prevent it from falling. 2. Loosen the connector located at the top right of the fryer by unscrewing and pulling it away from the machine. 3. Pull the fryer release handwheel upwards and slide the fryer out. 4. In order to access the activated carbon filter it is necessary to remove the fryer from the machine. 5. Open the filter box lid, located at the back right of the unit, by releasing the two toggle latches that hold it in place. 6. Remove the metal filter that is located inside, in order to clean it. 7. Remove the activated carbon cylinder that is located inside. 8. Use water and detergent to clean the walls and bottom of the filter box. Dry using absorbent paper. 9. Replace with a new filter or remove and replace the activated carbon that is located inside, after first cleaning the cylindrical casing. Put it back in the same position as before, inside the filter box. 10. Close and secure the lid by means of the toggle latches. Reassemble the elements that were removed earlier, taking special care to ensure that the extraction coupling is correctly fitted onto the fryer 6 7 Metal filter Activated carbon filter 43

43 FASTCHEF Elite 6. BREAKDOWNS & POSSIBLE SOLUTIONS 6.1 BREAKDOWNS WITHOUT DISPLAY MESSAGE PROBLEM 1 Red light switch on / off is off. POSSIBLE REASONS The machine is not connected to the electricity supply. There is no electricity reaching the socket where the machine has been plugged in. The main switch, located on the top righthand side of the machine is towards the left (disconnected /OFF). Plug it in. SOLUTION Turn on the electricity to the socket or find anothera socket connected to the grid. Move the switch s black lever towards the right (Connected/ON) PROBLEM 2 When pressing down the ON/OFF button, the red light comes on but seconds later it switches itself off and the machine has no power. POSSIBLE REASONS The main switch located at the bottom, on the side of the electrical box, is disconnected (towards the left/off). ON OFF SOLUTION Switch the ON/OFF switch off by pressing it upwards. Switch the main switch ON (to the right) (located on the bottom left-hand side of the machine) and push the ON/ OFF switch up again. If the machine loses power again and the main switch moves to the right by itself, unplug the machine and call the Technical Services. Check the electrical protection of the socket to which the machine is connected. PROBLEM 3 "BLADE ALARM", appears on the display and the extraction blade does not turn. POSSIBLE REASONS SOLUTION The extraction motor connector is not connected Connect it. 45

44 PROBLEM 4 The product extraction blade does not stop turning. POSSIBLE REASONS SOLUTION The lever s microswitch connector is not plugged in. The lever s microswitch is faulty. Connect it. Contact Technical Services so that it can be replaced PROBLEM 5 Too much oil is being deposited inside the machine. POSSIBLE REASONS The handwheels that hold the fryer s front cover are not properly tightened. The circular seal of the fryer s front cover is faulty. The fryer s emptying valve is not properly closed. The fryer s oil level exceeds the 6-litre maximum. SOLUTION Tighten them correctly. Replace it. Close it properly. Remove excess oil until there are only 6 litres. PROBLEM 6 Food is overfried or underfried. POSSIBLE REASONS The program s frying temperature or time is not correct. SOLUTION Select the appropriate time and temperature for the product in question. PROBLEM 7 The drain valve is open but the oil does not come out. POSSIBLE REASONS The valve has been blocked by debris left behind after frying. SOLUTION When the oil is cold, push a bit of wire into the valve to break up the debris. 46

Bend connector not connected. - Check the bend connector and the resistor s connections, S1 sensor. - Replace the broken parts. - Check the bend connector and the resistor and thermostat connections. - Replace the broken parts. The product entry trap door motor is not working properly. - Check the motor connections. - Replace the broken parts. 47

46 DISPLAY MESSAGE POSSIBLE REASONS The extractor is not working or not working at the appropriate speed. (The machine remains in service). SOLUTION - Check the extractor connections. - Replace the broken parts. The fan does not work at the appropriate speed. (The machine remains in service). - Check the fans connections. - Replace the broken parts. The machine will fry 20 more times before going out of service. Low oil level. Temperature sensor (S1) has broken down. Oil level control sensor(s2) has broken down. - Fill the oil in the fryer (1 litre) - Check the S1 and S2 sensor connectors. - Replace the broken parts. Heating up the oil Drainage tank level full. - Empty the drainage tank. The machine will fry 10 more times before going out of service. 48

47 STANDARD QUALITYFRY, S.L. WARRANTY FOR FAST CHEF ELITE FRYERS FASTCHEF Elite 1.General This policy establishes the terms and conditions of the QUALITYFRY, S.L. warranty for the automatic frying machine: FAST CHEF ELITE. QUALITYFRY, S.L. guarantees that the FAST CHEF ELITE automatic frying machine will be free of defects for a period of ONE (1) YEAR from the date when the end-buyer originally buys it (the "Warranty Period"). If, during the Warranty Period, the machine shows any of the defects or faults included in said Warranty, and if the customer informs QUALITYFRY, S.L. or QUALITYFRY, S.L. s official distributor in writing about the problem within the warranty period, the machine will be replaced by another one of similar characteristics at no expense to the end buyer, except, when applicable, the technician s call-out costs, when requested by the customer, provided that repair is not possible. If the customer chooses to send the faulty machine to technical services, after repairing or replacing the machine, QUALITYFRY, S.L. will return the automatic frying machine to the customer, with the customer covering the transportation costs, provided that the location to which it must be returned is outside the urban area where the Technical Services team is based. 2. General terms and conditions This warranty is subject to the following terms and conditions: The assessment carried out by QUALITYFRY, S.L. representatives (or by its Official Distributors or Authorised Technical Service teams) must satisfactorily demonstrate to QUALITYFRY, S.L. that the fault is due to irregularities in the materials or manufacturing work. The end-buyer must present, within the warranty period, the original receipt (stating the date of sale, model, serial number, itemised cost of the machine and name of the distributor) together with the stamped warranty. 3. Specific terms and conditions a) Spare parts QUALITYFRY, S.L. guarantees any spare part supplied within the scope of this Warranty for the longest period from the following two options: the time remaining in the machine s original warranty period or SIX (6) MONTHS from the replacement date. This warranty will only cover real defects and/or faults within the Warranty Period, not those arising from normal wear and tear or usage beyond the maximum number of hours of operation (when applicable) as published by QUALITYFRY, S.L. and in force and available to the customer at all times. b) Warranty Extension Alternatively, and at the discretion of QUALITYFRY, S.L., the warranty period for certain specific products may be extended.

Warranty Limitations This Warranty does not cover: Regular maintenance and repair or replacements arising from normal wear and tear or excessive number of operating hours (when applicable) as published by QUALITYFRY, S.L. and in force at any given time. Consumables provided with the machine. Superficial damage. Damage arising from: i. Acts of God or any other cause beyond the control of QUALITYFRY, S.L. ii. Improper use, which includes but is not limited to the use of the product for purposes other than those for which the machine was designed or which do not fulfil the instructions of QUALITYFRY, S.L. regarding its use and maintenance iii. Improper use or maintenance of the machine. iv. Connection to incorrect power supply. v. Any repair work not carried out by QUALITYFRY, S.L. s authorised technical service centres. vi. Use of the machine in combination with accessories, products or auxiliary/secondary equipment from third parties. vii. Damages which occur during transportation, due to impact or weather conditions viii. Repairs and adjustments made by non-authorised personnel. No compensation will be given for losses incurred whilst the machine is out of order. QUALITYFRY, S.L. is not liable for the quality and sanitary conditions of the products processed in its machines, nor for any potential harm caused to people, animals or objects due to non-compliance with the recommendations included in the instruction manual and/or communicated by the Authorised Technical Services Team. This Warranty will not cover any extractable plastic parts or screws, nor electrical connectors. This Warranty will not cover the electric resistor, temperature sensors, lights, electrical contactors, electrical and magnetic microswitches or fuses. This Warranty will not be applicable if the serial number of the machine has been altered, has been deleted, has disappeared or is illegible. 5. Limited liability THE WARRANTY DESCRIBED ABOVE CONSTITUTES THE FULL SCOPE OF THE LIABILITY OF QUALITYFRY, S.L.. THEREFORE, QUALITYFRY, S.L.
