We are sourcing 100% Angus cattle for the first time in our company history, with the goal of bringing our customers consistent quality, appealing texture, and full flavor with every purchase. Why 100% Angus beef? Long associated with outstanding quality, the Angus breed provides excellent consistency. Consumers know Angus beef for its rich, delicious flavor, quality, and tenderness. The cattle is raised in the USA on a diet of grass and grain, and is processed at the USDA s Grade A Maturity level for tenderness. All Oliver s Choice 100% Angus Beef is USDA Choice Grade. Customers will not find Select Grade in our stores, assuring an excellent selection every time. The Oliver s Choice 100% Angus Beef is hand trimmed by our butchers, and is 100% satisfaction guaranteed. Page 3

Oliver s USDA Prime Beef is tender and juicy, with a buttery taste that makes it distinctly superior to any other steak. USDA Certified Prime Beef cattle represents the top 2% of all beef produced nationally. Prime grade beef is produced from young, high quality, well-fed cattle, which helps promote the abundant marbling leading to its superior tenderness and flavor. These cattle are minimally processed and are antibiotic and hormone residue free. All Oliver s Prime Beef is USDA inspected and is grown in the USA. Page 5

Lush, pristine pastures, fertile soils, cool summers, mild winters, and dedicated local family ranchers combine to make Humboldt County the ideal place for authentic grassfed beef. Cattle are raised without hormones or antibiotics while being allowed to graze naturally on perennial grasslands. A dedication to stewardship of the land, cattle, and the natural resources provided by the uniqueness of our climate ensures that beef provided by Humboldt Grassfed Beef is wholesome, healthy, and great tasting. Humboldt County s long growing season is ideal for raising premium authentic grassfed beef, ensuring our customers a fresh product year round. Page 7

Mindful Meats is a mission-driven meat company that brings regional, organic, non-gmo, pasture raised beef from small family farms to markets. Their mission is to restore the health of America s meat market from the impact on the environment and the healthfulness of the meat. They work exclusively with pasture-based organic dairy producers in Marin and Sonoma counties to repurpose retired organic dairy cows. Organic dairy animals spend their full lives producing thousands of pounds of food per animal per year. Mindful Meats worked closely with the Non-GMO Project and the USDA to create the first labeling standards for Non-GMO Verified meat, poultry and seafood. This has opened the flood gates to allow producers to bring their organically, non-gmo products to market. All Mindful Meats beef is born, raised and harvested right here in Sonoma County. Page 9

The incredible flavor of Wild Idea Buffalo meat is the result of the animals lives being lived more naturally and without unnecessary human interference. Its clean, rich, slightly sweet taste has subtle notes of grass, sage, and they believe sunshine. Their humane prairie harvests ensure that our buffalo are not exposed to any undue stress that would spoil the flavor of this natural meat. Their buffalo are given respect, dignity, and care throughout their lives. They believe their buffalo tastes better because they are raised better! Wild Idea meat is lower in calories, fat and cholesterol than chicken or fish. It s higher in protein than beef. Their 100% native grass-fed meat delivers 3.5x more antioxidant omega-3 fatty acids than grainfed buffalo. Prairie restoration is vital to their mission. Their land and animal management practices are as close to nature s intentions as possible. By giving the buffalo room to roam, the Great Plains prairie is brought back to health. Page 11

All Marin Sun Farms branded meats are processed based on processes and values that support their mission. Marin Sun lambs are humanely raised and fed only mother s milk and the grass which they naturally graze. They are never given antibiotics or given growth hormones. Marin Sun Lambs are from the local California Foodshed. A Foodshed is a region where food flows, from the land where it was grown, the routes it travels for processing and the market it passes through until it reaches your kitchen. These lambs were born and raised on the beautiful grasslands and pastures from local family farms. Family Farms are the lifeblood of healthy and stable rural communities, nurturing natural resources and fostering ongoing sustainable farming practices. This premium eating quality is from animals raised according to the highest animal welfare and environmental standards. Page 13

Fallon Ranch is proud to present Sonoma Red, a heritage breed of chicken raised in the lush pastures of Sonoma County, California. Their Chickens will spend more than half of their days foraging for food in the pasture. This natural behavior is supplemented with continuous access to clean fresh water and vegetarian feed consisting of corn, soy, vitamins and minerals. The feed is 100% Organic,GMO- Free, and contains no antibiotics, hormones or animal by-products. Because of this natural diet, their chicken tastes the way nature intended with good old fashioned flavor. These chickens are raised in small groups with abundant outdoor pasture. They have plenty of space to be social and their environment is enriched with organic hay bales and perches to engage in behaviors that are natural to chickens. Their chickens are raised to the highest animal welfare standards as certified by the Global Animal Partnership, a nonprofit organization dedicated to continually improving the lives of farm animals. Sonoma Red birds are also Non-GMO Project verified. Page 15

Allen Shainsky was born into a family of egg farmers and developed his passion and respect for poultry at an early age. He founded Petaluma Poultry in 1969 and dedicated his life to growing chickens with the utmost care while being mindful of the land. In the 1980 s San Francisco Bay Area chefs challenged him to produce a chicken that had the old-fashioned chicken flavor reminiscent of their culinary training in Europe. Shainsky spent months in France researching poultry husbandry and returned to implement back to basics growing techniques. This included an all vegetarian diet with no animal by-products, no antibiotics, no artificial hormones or steroids and a change in the animal s environment that allowed them more room to roam naturally. Because of this, the ROCKY brand became one of the first free range chickens that satisfied chefs as well as a growing consumer base that wanted healthy, tasty birds while leaving a small environmental footprint. Petaluma Poultry started organic protocols 10 years before the USDA allowed meat and poultry to be labeled organic. They fought to establish a defined organic certification program to help clear up the confusion in the marketplace. Thus, in 1999 the ROSIE brand became the first third party certified organic chicken on the market to earn the USDA Organic seal. Page 17

Page 18

Since 1949, the Diestel Family has been committed to producing the best tasting, premium, naturally range grown turkeys and turkey products. Their sustainably farmed turkeys develop at a natural growth rate in a free range environment, without the need for antibiotics or growth stimulants. This includes the production of their organic turkeys. As fourth generation turkey farmers, the Diestel Family understands that sustainability is about the health of the environment. It is a tangible management practice that supports the earth and guarantees its health and stability for generations to come. The Diestel Family Turkey Ranch is working as one of the last small family turkey grower processors in the US. They are pleased and proud to bring you our premium quality, range grown turkeys and turkey products. Page 19

Coleman Natural selects only the best breeds raised to their exact protocols with 100% vegetarian diets and no animal by-products. They never use antibiotics or growth hormones. Their animals are allowed to grow at their natural pace in a comfortable stress-free environment, with room to roam and continuous access to food and water. Pork is an excellent source of thiamin, niacin, riboflavin, vitamin B-6, phosphorus and protein, and a good source of zinc and potassium. Many cuts of pork are as lean or leaner than chicken. Pork shouldn t be overcooked. The best test of doneness is to use an instant-read meat thermometer to check the internal temperature of your pork. We recommend cooking pork chops, roasts and tenderloins to 160 F, which leaves the center pink and juicy. Less tender cuts, like pork shoulder (butt) and ribs can be cooked long and slow, to render them tender. Page 21

Oliver s Own... Gourmet Sausages Oliver s Own Chicken and Pork Sausages are made with same great brands that we carry in the full service fresh meat case. Oliver s Chicken Sausages are made with only fresh Rocky Air Chilled boneless skinless thigh meat. Their chickens are verified Non-GMO, fed an all vegetarian diet, and are never given antibiotics or hormones. Oliver s pork sausages are made with fresh Coleman Natural Pork shoulder. Coleman pork is antibiotics and hormone free. The meat used in our sausages is ground fresh daily, seasoned, mixed and pressed into fresh casing. With a few dozen choices we always have a unique fresh offering. All of our sausage flavors can be ordered in bulk. Page 23

Oliver s Market Sustainable Seafood Oliver s works with the Monterey Bay Aquarium Seafood Watch program, which helps consumers and businesses make choices for healthy oceans and provides us with recommendations indicating which seafood items are Best Choices, Good Alternatives, and which ones you should Avoid. Page 25

Look for these symbols on our seafood signs to help you in making environmentally conscious choices when buying your seafood: Page 26

Growing global demand for seafood is depleting fish populations around the world and threatening the health of our oceans.with nearly 76% of the world s fisheries fully fished or overfished, scientists are worried that the oceans cannot keep up with the growing demand. Other environmental impacts are also taking a toll: unintended catch of sea turtles, seabirds, marine mammals and other sea life; seafloor damage from some types of fishing gear; pollution and marine debris; and loss of coastal wetlands to create fish farms. The good news is that environmentally friendly fisheries and fish farms do exist, and they deserve your support. Restaurants, retailers and other businesses have an important role in supporting the health of the oceans. You can use your purchasing power to buy and demand seafood that is caught or farmed in an environmentally responsible way. E BL INA A T SUS Seafood in this category is well managed, abundant and caught or farmed in environmentally friendly ways. E BL INA A T SUS These items are an option, but there are concerns with how they re caught or farmed - or with the health of their habitat due to other human impacts. E BL NA TAI S U S Take a pass on these items for now. They are caught or farmed in ways that harm other marine life or the environment. Page 27
