The cattle is raised in the USA on a diet of grass and grain, and is processed at the USDA s Grade A Maturity level for tenderness. All Oliver s Choice 100% Angus Beef is USDA Choice Grade. 9 Oliver s USDA Prime Beef is tender and juicy, with a buttery taste that makes it distinctly superior to any other steak. USDA Certified Prime Beef cattle represents the top 2% of all beef produced nationally. Prime grade beef is produced from young, high quality, well-fed cattle, which helps promote the abundant marbling leading to its superior tenderness and flavor. These cattle are minimally processed and are antibiotic and hormone residue free. All Oliver s Prime Beef is USDA inspected and is grown in the USA. Page 5

13 Mindful Meats is a mission-driven meat company that brings regional, organic, non-gmo, pasture raised beef from small family farms to markets. Their mission is to restore the health of America s meat market from the impact on the environment and the healthfulness of the meat. They work exclusively with pasture-based organic dairy producers in Marin and Sonoma counties to repurpose retired organic dairy cows. Organic dairy animals spend their full lives producing thousands of pounds of food per animal per year. 19 Fallon Ranch is proud to present Sonoma Red, a heritage breed of chicken raised in the lush pastures of Sonoma County, California. Their Chickens will spend more than half of their days foraging for food in the pasture. This natural behavior is supplemented with continuous access to clean fresh water and vegetarian feed consisting of corn, soy, vitamins and minerals. The feed is 100% Organic,GMO- Free, and contains no antibiotics, hormones or animal by-products. Because of this natural diet, their chicken tastes the way nature intended with good old fashioned flavor. These chickens are raised in small groups with abundant outdoor pasture. 21 Allen Shainsky was born into a family of egg farmers and developed his passion and respect for poultry at an early age. He founded Petaluma Poultry in 1969 and dedicated his life to growing chickens with the utmost care while being mindful of the land. In the 1980 s San Francisco Bay Area chefs challenged him to produce a chicken that had the old-fashioned chicken flavor reminiscent of their culinary training in Europe. Shainsky spent months in France researching poultry husbandry and returned to implement back to basics growing techniques. This included an all vegetarian diet with no animal by-products, no antibiotics, no artificial hormones or steroids and a change in the animal s environment that allowed them more room to roam naturally. Because of this, the ROCKY brand became one of the first free range chickens that satisfied chefs as well as a growing consumer base that wanted healthy, tasty birds while leaving a small environmental footprint. Petaluma Poultry started organic protocols 10 years before the USDA allowed meat and poultry to be labeled organic. They fought to establish a defined organic certification program to help clear up the confusion in the marketplace. Their animals are allowed to grow at their natural pace in a comfortable stress-free environment, with room to roam and continuous access to food and water. Pork is an excellent source of thiamin, niacin, riboflavin, vitamin B-6, phosphorus and protein, and a good source of zinc and potassium. Many cuts of pork are as lean or leaner than chicken. Pork shouldn t be overcooked. The best test of doneness is to use an instant-read meat thermometer to check the internal temperature of your pork. We recommend cooking pork chops, roasts and tenderloins to 160 F, which leaves the center pink and juicy. Less tender cuts, like pork shoulder (butt) and ribs can be cooked long and slow, to render them tender. Page 21

Oliver s Chicken Sausages are made with only fresh Rocky Air Chilled boneless skinless thigh meat. Their chickens are verified Non-GMO, fed an all vegetarian diet, and are never given antibiotics or hormones. Oliver s pork sausages are made with fresh Coleman Natural Pork shoulder. Coleman pork is antibiotics and hormone free. The meat used in our sausages is ground fresh daily, seasoned, mixed and pressed into fresh casing.
