1 April-June 2014 Pg 1 Preamble Preamble Current Research Focus Pg 3 Recent Happenings India has achieved significant success in agriculture by increasing its food production by four folds during the last five decades and thus emerged as a self sufficient country in food grains. But this success has not come all of a sudden. There were times when India found it difficult to feed its own people. However, with this great achievement, our future challenges for ensuring food security have not been solved forever. With the current population growth rate of 1.58 per cent, India is predicted to have more than 1.53 billion people by the end of Wastage of food grains, Pg 4 Academics and HRD Pg 4 Outreach fruits and vegetables and other primary agricultural products has been emerged as a serious issue adding more challenges for food and nutritional security. Among the numerous reasons for this wastage, lack of storage infrastructure, inadequate post harvest processing technologies, lack of proper policy initiatives and little awareness at the grass root level have been the major ones. Today, storage, processing and value addition of primary agricultural products are as important as increasing the production level. Realizing this importance, Government of India has shifted its concentration on encouraging more research and technology development in food processing and value addition. IICPT, being a word class educational and research institute under the Ministry of Food Processing Industries, Government of India dedicated to contribute substantially towards achieving high growth rate in the food processing sector through noble processing, value addition and adequate human resources development. The continued efforts made by the institute are being recognized by varied stakeholders in the sector. The institute is privileged to bring the compilation of its activities in the form of e-newsletter for the period April June 2014 as part of knowledge sharing endeavor among the peers all over the world. 2 Current Research Focuses C o n d u c t i n g c u t t i n g - e d g e research in the frontier areas of food processing science and technology has been one of the priority areas of IICPT. Some of the important developments in research arena are given below. Development of Moringa (Moringa Oleifera) Leaves Separator It was found that the set of nailsframes with two rows alignment have better efficiency compared to three rows alignment. The efficiency of machine was high in 2 rows alignment of nails and was best suited for 75 grams of feed sample at 70 rpm. The overall mean value of the efficiency was %. Similarly, the efficiency of three rows of alignment of nails was %. The cost of operation per kg of fresh leaves was Rs Nails Frames Iron bars Perforated Metal Cover Wheel with Handle V-Belt Oxidative stability study and quality assessment of olive oil blends Ball Bearings Outlet Stand Moringa Oleifera (Drumstick leaves) is an excellent source of vitamins, β- carotene, iron, minerals, protein, potassium, calcium and phosphorus. A moringa separator was fabricated with nails frames (2 row and 3 row), shaft, ball bearings, circular plates, L-angle, V-belt, perforated metal covers, pulleys, motor, metal casing and supported bars. Study revealed that blending of olive oil (seed and pomace) with sunflower oil, rice bran oil and sesame oil lead to improved oxidative stability and significant (p<0.05) reduction in free fatty acids and hydro-peroxides formation.
3 As the proportion of olive oil increased from 20% to 40%, oxidative stability of blends was enhanced. Blending of 40% pure olive oil as well as pomace olive oil with sunflower oil and rice bran oil resulted in better oxidative stability than other blend ratios. However, blends of olive oil with sesame oil had higher degradation rate than rice bran and sunflower oil blends. Viscosity of all the stand-alone oils and their blends decreased with the progress of oven storage. Whiteness of pure olive oil increased tremendously whereas all other oils were darkened due to oxidative deterioration. Redness and yellowness was increased in pure olive oil alone whereas it reduced in all other samples. Sensory evaluation showed higher preference for pure olive oil blended with sunflower oil in 30:70 ratio. Potato sticks fried in pure olive oil blended with rice bran oil in 30:70 ratio got significant acceptance (p<0.05) in terms of colour and textural properties whereas blend of pure olive oil and sunflower oil in 30:70 ratio got significantly acceptance (p<0.05) in terms of flavour, taste and overall acceptability. Recent Happenings rd The 3 RAC Meeting 2014 rd The 3 Research Advisory Committee (RAC) meeting of the IICPT was held on th th April It was attended by the RAC members, faculty, SRF, doctoral and graduate research students of the institute. So, olive oil is the best alternative for blending with less stable vegetable oils.
4 A total of 17 completed, on-going and new internal as well as external research projects were presented before the RAC members for their comments and valuable suggestions. During the concluding session chairman Dr. Pitam Chandra and other members appreciated the research efforts of the IICPT scientists. Academics & HRD AICTE Approval for Academic Programmes The Expert Valuation Committee (EVC) of AICTE visited the IICPT and as per their recommendations a Language Software Laboratory was established and insurance were taken for assets. The final scrutiny was done by Standing Appeal Committee at AICTE Head Quarters, New Delhi. The Expert Valuation Committee (EVC) again visited the institute for final physical verification of assets and then AICTE gave its approval for academic programmes. They emphasized for creation of package of technologies in the post harvest supply chain for a minimum of two crops per year. RAC members were amazed to see the infrastructure facilities especially world class laboratory facilities of the institute. Outreach Mobile Processing Unit (MPU) Krishi Parivartan Yatra

Innovation Conclave held at National Agricultural Science Centre, New Delhi. Road shows, workshops etc. were conducted to make the other institutes and public in general aware of the ongoing activities and innovations of IICPT in food processing sector. National Agricultural Science Centre, New Delhi Indian Grassland and Fodder Research Institute, Jhansi Directorate of Sorghum Research, Hyderabad Central Institute of Agricultural Engineering, Bhopal Central Institute for Research on Goats, Mathura Indian Institute of Soil Science, Bhopal Food Processing Business Incubation centre Programs at a Glance Food Processing Business Incubation Centre (FPBIC) has provided short term and long term training programs, incubation services etc. to different stakeholders like entrepreneurs, national a n d i n t e r n a t i o n a l
6 6 Masala powder, pickle and canning of fruits and vegetables to potential entrepreneurs. students, scientists, farmers and SHGs for improving their knowledge and technical skills relating to food processing and value addition. They were given chance to have hands on experience in operating various machineries. Detailed consultancy services were extended to many individuals/groups, one of North Eastern Regional Centre IICPT Regional centre, Guwahati is very much active in offering training and consultancy services to different stakeholders of the region during the quarter. Several technical trainings with hands on experience in operating various machineries were given for preparation of jam, jelly, beverages, potato and banana chips, RTS, w h i c h b e i n g Ta t a G r o u p ' s Amalgamated Plantations Pvt. Ltd. Students from Assam University, Silchar enrolled for M.Tech.. course projects on hydrothermal processing techniques, partial use of sticky rice flour as bakery spread and Modified Atmospheric Storage at the centre.
7 National Events 7 During April-June 2014, IICPT received a wide range of visitors from different spheres of life such as individual farmers, SHGs, entrepreneurs, students, scientists and government officials across the country and overseas. Participation in the Educational Expo at Coimbatore IICPT participated in educational expo at Coimbatore organized by the Daily th th Thanthi on 10 & 11 May Our stall displayed the features and facilities available at our institute, academic programmes offered, course details, fee structure, selection procedures and placements Visitors to IICPT H o n ' b l e M e m b e r o f P a r l i a m e n t Shri.K.Parasuraman and Dr. Digvir S.Jayas, Vice President (Research and International), University of Manitoba, Canada were important among the visitors to IICPT. Placement Cell Placement Cell, IICPT coordinated the placements for the passing out B. Tech. and M. Tech. graduates. Many students attended the off campus interviews and got selected in Walmart Auxilary Unit, Chennai; Aachi Foods, Chennai; Mother Dairy, Bangalore; AMS groups, Kerala; Lawrencedale Agro Processing India Pvt. Ltd., Ooty; MTR Food Industries, Bangalore; ITC Foods, Bangalore and Lotte India Corporation Ltd., Chennai.
8 8 Social Gatherings th th th The 4 Club Day and 5 Hostel Day were celebrated on 7 April 2014 at IICPT. The functions were presided over by Dr. K. Alagusundaran, Director, IICPT. Dr. Chinnusamy, Dean, Agricultural College and Research Institute, TNAU, Madurai was the chief guest for Club Day whereas Dr. M. Sivaswamy, Dean, Kelappaji College of Agricultural Engineering & Technology, Thavanur, Kerala Agricultural University was the chief guest for Hostel Day. th Farewell was organized for 36 B. Tech (FPE) batch students on 6 May All the heads of departments felicitated the passing out graduates mentioning their achievement and goals to be achieved in the future. Some graduates shared their memories and their accomplishments during their stay at IICPT. Dr. K.
