Eco, indicating that food cannot be separated from our agriculture, our environment, and the myriad social, economic, political, and ethical issues associated with food production and eating. 13 Intro to EcoGastronomy ECOG Introduction to EcoGastronomy ETS This course challenges you to explore the science, politics and the culture that shape your personal food system and encourages you to participate in creating a food system that is environmentally sensitive, economically viable, socially just and sustainable.

14 ECOG Introduction to EcoGastronomy This interdisciplinary course introduces students to the principles and practices of EcoGastronomy. It provides students with a foundation for understanding the connections among food production, ecology, ethics, cuisine, nutrition and health within the framework of sustainability. The course includes guest lectures, class discussion, film reviews, activities, and food tastings.
