6 Introduction About The Restaurant Entrepreneur Welcome to The Restaurant Entrepreneur Simulation The Restaurant Entrepreneur is an integrated Entrepreneurship, Marketing, and Computer Applications simulation designed to let you, the student, be the owner of your own restaurant. As you embark on this entrepreneurial journey, this simulation will give you an in-depth, real-world view of what it is like to use your creativity, business, and computer skills to run your own restaurant. Using Microsoft Office (or equivalent applications), you will assemble and create all of the documents that a real restaurant would need to open its doors. From writing a radio commercial script, to designing a mobile app, you will experience life as a business owner. Who Should Use This Book? The Restaurant Entrepreneur is designed for middle and high school level students who are enrolled in a computer applications course that includes one or more of the Microsoft Office (or equivalent) software applications in its curriculum. This simulation is designed to allow you to use and apply your computer applications knowledge and skills in an integrated, creative, hands-on format. Your Role as the Restaurant Entrepreneur As you assume the role of a restaurant entrepreneur, your tasks will be challenging, yet rewarding. Your job will be to create a restaurant that will be successful in the highly competitive food industry. You will use computer applications to create a series of documents that will give your restaurant a professional image to potential customers. By completing the projects in this simulation, you will fine-tune your office, creativity, and design skills, and you will learn what it is like to promote a real product your own restaurant. ii

7 The Story Behind This Simulation The Food Connection Introduction One of the challenges most business owners face is obtaining the capital (or money) to start-up their businesses. In this simulation, however, the start-up capital has already been taken care of for you. Here is the scenario you will assume happened: The Food Connection is a privately owned television network that airs daily shows. The Food Connection s mission is to televise a variety of food and cooking themed shows that will appeal to food lovers of all ages. As part of its new marketing campaign, The Food Connection ran a national contest to promote and attract young entrepreneurs. The campaign included a nationwide Start Your Own Restaurant contest. To enter the contest, The Food Connection required contestants to be enrolled in middle school or high school. Contestants were required to pitch a new restaurant idea that included a creative name, a description of their restaurant, and the name of the restaurant signature dish. Knowing that the top ten finalists would receive the start-up financing to open a new restaurant, you decided to submit your proposal. Out of the thousands of entries received, The Food Connection selected your restaurant as one of the finalists. Meet Amanda Sanchez, Your Restaurant Navigator Throughout this simulation, you will be guided by Amanda Sanchez, an 11th grade student from El Paso, Texas. Amanda is enrolled in a wide variety of courses at her high school, and she is actively involved in several clubs and organizations. During her sophomore year, Amanda enrolled in two courses culinary arts and entrepreneurship that sparked a passion in her to someday own and operate her own restaurant. However, long before Amanda entered high school, she was inspired by her grandmother, Maria (known to her as Nana Maria ). Amanda s grandmother was always in the kitchen, or outside on the grill, cooking up some type of barbeque cuisine. Nana Maria, who was famous for adding fiery spices to her dishes, would always squeeze Amanda s cheeks and say, This is some wicked kickn stuff, as she proudly served her a dish of barbeque chicken, ribs, or whatever the main dish was that day. While watching The Food Connection one day, Amanda learned about the Start Your Own Restaurant contest. She decided to enter the contest in honor of Nana Maria and call her Texas-style BBQ restaurant Wicked Kickn BBQ. Amanda was selected as one of the finalists in the contest. Her restaurant dreams were going to come true even earlier than she had planned. Just like you, Amanda Sanchez had become an overnight restaurant entrepreneur. NOTE: As you travel through the projects in this simulation, you will be guided by Amanda as she creates her own new restaurant. Following each project, you will see a page titled In the Kitchen with Amanda Sanchez. These pages will help you see how Amanda s restaurant story unfolds. They also contain samples of the documents that Amanda created. You should use Amanda s samples as a guide to help you develop and create your own. THE RESTAURANT iii

8 Introduction The Tools and Skills You ll Need Materials Required to Complete This Simulation To complete the individual projects in this simulation, you will need the following: The Restaurant Entrepreneur Student Workbook Microsoft Word, Microsoft Excel, Microsoft Access, Microsoft PowerPoint, and Microsoft Publisher (or equivalent software applications) The Restaurant Entrepreneur Project Planning Forms, copied from The Restaurant Entrepreneur Instructor Resource CD Note: The Restaurant Entrepreneur Instructor Resource CD must be installed on your computer prior to beginning this simulation. This CD includes a series of printable planning forms that will assist you in planning and organizing each project in this simulation. Prerequisite Skills This simulation is designed to be used as a reinforcement supplement for Microsoft Office-based courses. In order to complete this simulation, students should have a basic working knowledge of the following (or equivalent software applications): Microsoft Word Microsoft Excel Microsoft Publisher Microsoft PowerPoint Microsoft Access Drawing or illustration software Note: The projects in this simulation are designed to be completed using any version of the software listed above. For that reason, project instructions have been generalized and do not provide step-bystep instructions for completing any one particular version of the software listed above. 10 Introduction Working with Each Project Understanding the Format of This Book Projects in this simulation have been organized into an easy-to-read, self-guided format. This book is divided into six sections, each containing a set of individual projects for each of the Microsoft Office (or equivalent) applications. A brief explanation of the individual sections that make up each project in this simulation is illustrated below. It is recommended that you read this section to become familiar with the format of this book. Amanda is excited about getting her restaurant opened. In the next few weeks, she will need to communicate with a variety of people, and it is important to project a professional image by using her new letterhead. Communicating a Professional Image with Style Overview: Provides a description of the type of document being produced and how it will be used in this simulation Overview A business letterhead, with its logo and contact information, makes an important first impression. When opening a new restaurant, you will be communicating with many people. You will be writing to the media, vendors, customers, and future employees, to name just a few. A letterhead is not just a form of correspondence, it can be a method of branding or identifying your restaurant. In this project, you will design the letterhead for your restaurant. Be sure it projects a professional image and works well with the look and style of your restaurant logo. The letterhead that Amanda created for Wicked Kickn BBQ is shown below. Instructions 1. In the document footer, key your name and the project number and title. 5. Using your completed Project 3 Planning Form, in the document header, create the letterhead for your restaurant from one of your sketches. Note: Most letterhead designs are within the top 2.5 inches of the document. Do not let your design fall below this area. The most important piece of information should be the largest in this case, the restaurant logo. Use fonts and colors that complement your restaurant logo. Keep the design professional, clean, and simple. 6. Arrange your restaurant logo and text to fit your letterhead design. 7. Format the text using the font, colors, size, and style that best match the design of your restaurant logo. Optional: Add additional graphic elements to enhance the design of your letterhead. 8. Carefully proofread your work for accuracy, format, spelling, and grammar, then resave. 9. Print a copy of your document if required by your instructor. Open and print the Project 11 Planning Form file. Follow the instructions and complete the form. When starting any new business venture, it is important to stay in touch with current issues and trends within your community and local marketplace. To do so, you have decided to join the Chamber of Commerce. The Chamber is an organization of local business owners who share contacts and expertise. To get the ball rolling and apply for a membership, you will have to write a professional business letter introducing yourself to the membership board. In this project,, you will write a block style letter requesting membership in your local Chamber of Commerce. Refer to Amanda s sample for guidance. Do not copy the content or design of this sample. 2. Open the Project 3 file and save it as Project 11. [Insert current date] 3. In the document footer, change the project number and title. Outline a set of business goals for your restaurant so that you can communicate them clearly to Chamber of Commerce members. Convey a message of being a serious business owner who plans to be a successful member of the local business community. 11 Using the Project Planning Forms Project Planning Forms are included on The Restaurant Entrepreneur Instructor Resource CD. These planning forms give you a framework in which to begin mapping out a project s content, design, and layout on paper first. It is recommended that you complete the planning forms prior to beginning each project. Introduction NAME DATE Project 5 Planning Form Help Wanted Ad Letting the World Know You re Hiring Instructions Complete this form to help you organize and arrange the information that you will include in your help wanted ad for your restaurant. 1. Write a short, catchy headline that will grab the reader s attention. For example, New Restaurant Needs Help in the Kitchen! Project Title: The title corresponding to the particular project in the student workbook Instructions: Provides guidance on how to best utilize the project planning form 2. Write a brief description that clearly defines the type of employees you want to hire. Begin with your restaurant name and include why you are hiring. 3. List at least six job positions that you are looking to fill. 4. Explain how applicants can apply for the job. Data Recording: Tables corresponding to the data needed for completing a project 5. 14 1 Instructor Memo Getting Approval to Open Your New Restaurant Overview In the real world of business, a restaurant must get the necessary permits before opening its doors. Before you can begin to establish your dream restaurant, the name and theme of your restaurant must be approved by your instructor. To begin the process, you will complete a planning form to help organize your ideas. Once you have made some decisions about your new restaurant, you will create a memo to inform your instructor on what you have decided and why. Only after receiving approval from your instructor, can you continue in this simulation. In this project, you will write a memo to your instructor seeking approval of your new restaurant. Instructions 1. Open and print the Project 1 Planning Form file. Follow the instructions and complete the form. Refer to Amanda s sample for guidance. Do not copy the content or design of this sample. 2. Create a new word processing document and save it as Project In the document footer, key your name and the project number and title. 4. Using your completed Project 1 Planning Form, create your instructor memo. Note: Format your memo according to the template provided in Figure Carefully proofread your work for accuracy, format, spelling, and grammar, then resave. 6. Print a copy of your document if required by your instructor. Strategies Since most of what you do in this simulation is based on the decisions you make right now, make your decisions carefully. Your memo should be well thought out, organized, and professional. Keep your memo concise and to the point. 2

In honor of her grandmother s passion for fiery spices and barbeque cuisine, a BBQ restaurant was an obvious choice. The memo that Amanda created for her instructor is shown below. 18 2 Restaurant Logo Designing Your Restaurant s Identity Overview A logo is often the first thing potential customers notice about your business. A logo is a name, symbol, or trademark designed for easy recognition; for instance, the swish logo checkmark used by Nike or the white bitten apple seen on Apple products. Many companies will spend a lot of time and money to create the logo that they feel represents their organization to the public. Restaurants are no different. Having a recognizable logo that customers can identify with is essential in a market crowded with restaurant choices. It helps people become connected to your restaurant. In this project, you will design a logo for your restaurant to get your customers mouths watering before they even see the menu. The logo you develop will be used with different documents throughout this simulation. Strategies Use the Internet to research different restaurant logos. Analyze logos that appeal to you and incorporate similar characteristics into your logo designs. Creating a logo with too many graphics or too much text makes it difficult to read and remember. Therefore, your logo should be simple, unique, and easily recognizable. Many logos feature shapes or lines to make them more recognizable. Identify one or two fonts to use in your design and be sure to incorporate the colors you decided on for your restaurant. Instructions 1. Open and print the Project 2 Planning Form file. Follow the instructions and complete the form. Refer to Amanda s sample for guidance. Do not copy the content or design of this sample. 2. Using an illustration or drawing software program such as Adobe Illustrator, Adobe Photoshop, Microsoft Paint, or any graphics software, create a new document. Using your sketches on the Project 2 Planning Form, create each logo as a separate file. Note: Be sure to design your logos large enough in size so that they can be resized and scaled without losing quality and resolution. 3. Save the first version of the logo as Version 1 Logo, the second version as Version 2 Logo, and the third version as Version 3 Logo. Note: Be sure to save each logo in a format that will allow it to be placed as an image in other software applications; for example, JPEG, TIFF, or WMF. 4. Create a new word processing document and save it as Project In the document footer, key your name and the project number and title. 6. Insert all three logos in proportion on the page. This will allow you to review all three versions of the logos at one time. 7. Carefully proofread your work for accuracy, format, spelling, and grammar, then resave. 8. Print the document and survey your classmates and instructor, asking them to select their favorite logo. 9. Upon your instructor s approval, retrieve the approved version of the logo file and save it as Project 2 Final Logo. 10. Print a copy of your document if required by your instructor. 6

To ensure an appropriate choice of logo, Amanda created three designs and then surveyed her classmates and instructor before deciding on her final logo design. A business card is a small, convenient way to share information about you and your business. It usually includes your name and title, business name and logo, address, phone number, address, website address, and any other contact information. Since you will hand these out to current and potential customers as well as business contacts, it needs to be appealing and professional looking. 84 24 Takeout Menu Creating a Handy Takeout Menu Overview A restaurant menu makes an important, lasting impression on customers. A menu is a list of food items offered by an establishment that serves food. But a well-designed menu should also highlight your restaurant s identity and unique style. This is true even of a takeout menu because it becomes a form of advertising once it leaves the restaurant. In this project, you will create a booklet-style takeout menu. Since this is a menu that customers will take home with them, it must include your restaurant s contact information and business hours. Strategies The menu will be designed using a booklet-style format printed on two sides. When folded in half the long way (landscape), the menu will be divided into four equal panels as shown in Figure 24. Use at least two different fonts: one font for the menu items and their prices and another for subtext that describes the menu items. Use fonts that are easy to read. Keep the menu clean, uncluttered, and legible. Use graphics throughout the menu to bring the food items to life. Consider where you are placing menu items. 94 26 Employee Orientation Presentation Promoting Teamwork to Your Staff Overview Instructions Presenting company policies and job expectations to new employees needs to be clear and straightforward. Most companies use a printed employee handbook to communicate company policies and procedures, but using a slideshow to highlight key points with your staff can be very helpful, too. A well thoughtout presentation will convey a professional tone about working at your restaurant. In this project, you will prepare an employee orientation presentation that all new hires will view on their first day of employment at your restaurant. 1 Strategies 82 Refer to Amanda s sample for guidance. Do not copy the content or design of this sample. 2. Create a new presentation and save it as Project Using the information from your completed Project 26 Planning Forms, create your 10-slide presentation. Note: Be sure the different blocks of information are placed in separate text boxes. You should enter all of the text first and then go back to enhance the look of the presentation. This presentation will prepare you to put your best foot forward in your new position and to maximize your work experience at Wicked Kickn BBQ. 11/4/ Open and print the Project 26 Planning Form file. Follow the template provided in Figure 26 to complete the Planning Form and draft your 10-slide presentation. 4. Add additional text and/or graphic images that you feel will help illustrate and enhance the content and appearance of each slide. 5. Apply the following features to your presentation: Apply a background to each slide that best matches the color scheme of your restaurant. Using the talking points on the slide template provided in Figure 26, research each to develop a clear message to your employees. Include your restaurant logo on each slide. Be sure to use consistent design and typestyle elements throughout your presentation. Apply custom animation in the slideshow. Each slide in your presentation should contain a consistent headline style. Use graphic images that are consistent in style and help illustrate the text on each slide. Keep the slide transition the same so as not to distract your audience. 7. Print a copy of your presentation as handouts using 3 to 6 slides per page if required by your instructor. Limit the use of animation and sound effects to minimize distraction. 8. If required, present your presentation to your instructor and/or your class. Apply identical slide transitions to all slides. 6. Run the slideshow and carefully proofread your work for accuracy, format, spelling, grammar, and design. Be sure you have included all of the required information and features, then resave.
