2 JOB PACK EXECUTIVE CHEF MANAGER TYNESIDE CINEMA Imagine if every business were a lightbulb and that for each light bulb the primary goal was to attract the most moths possible. Our staff must be like a scintillating string of one-hundred-watt lightbulbs, whose product is the sum of 51% feeling and 49% task. Danny Meyer Setting the Table Tyneside Cinema is one of the UK s leading independent specialised film and media venues, housed in a spectacular Grade II listed building in the centre of Newcastle upon Tyne. In 2014 the Cinema embarked on a capital redevelopment project which saw the birth of Tyneside Bar Café. After one and a half years of trading growth, we opened Vicolo, a new coffee and cocktail bar with an extensive pavement café in High Friar Lane. After three years we are now featured in the Waitrose Good Food Guide 2018 and have a reputation of creating and serving excellent fresh local produce. In 2018 we are working with the current owner to assume ownership of The Tyneside Coffee Rooms to continue to serve up its hearty comfort food in the cosy atmosphere that makes it a firm local favourite and a stop off for visitors from around the world. Our mission is to offer the best fresh food in the city centre, working with local suppliers to create a welcoming destination with the finest drinking and dining experience. We are looking for a new Executive Chef Manager to run the trading company. They must have an infectious can do attitude, be passionate about creating and serving fresh food, be able to create an exciting offer and continue developing our reputation in producing and serving fresh local produce to the highest possible standard. 2

3 JOB DESCRIPTION Job Title: Executive Chef Manager Hours: 40 hours per week Wage: 30,000-40,000 Responsible to: Head of Operations Responsible for: Bar Manager and Kitchen Manager JOB OVERVIEW: You will also be responsible for leading the Bar Manager and Kitchen Manager achieving the efficient, professional and profitable operation of the Tyneside Cinema Trading Company: this consists of Tyneside Bar Café, Vicolo, and next year, The Tyneside Coffee Rooms You will have creative freedom over the food and beverage menu but must continue its reputation for producing high quality produce whilst maintaining its gross profit margins and delivering upon its profit targets year on year. You will ensure that the kitchen team are preparing, cooking and presenting tasty, original and excellent value food to your own consistently high standard. You will ensure the Bar Teams are delivering consistent, excellent and welcoming customer service to all, maintaining the atmosphere and cleanliness of the Bar Café and Vicolo, serving both food and beverages to the highest standards, and in accordance with your own high standards. You will be responsible for ensuring that your teams are effective, and have productive working relationships with the bar team and colleagues in all other departments, your menu is profitable and memorable and that your kitchen and bar are safe and hygienic. This role is key within the Tyneside Bar Café, Vicolo and the Cinema team, and as such you will be expected to work alongside the other Senior Managers to ensure that the Trading Company is helping the Tyneside Cinema maintain and grow its reputation as one of the finest independent cinemas in the country, and the most welcoming and best loved venue in the city. Your typical schedule will consist of 20 hours of administration and management tasks and 20 hours of hands on operational work on shift. Regular evening and weekend work will be required. This schedule may need to be adjusted where the demands of the business require at busy times of the year such as December. Overtime is not payable. You will need to work additional hours and/or outside your typical working pattern from time to time to cover emergencies, meet a deadline or conduct other necessary business. Your flexibility to do this is respected and appreciated. In return for this, Tyneside Cinema will allow time in lieu when appropriate and allow you to take some time during your agreed hours to do personal work or attend to personal matters. Working hours and availability: Monday-Sunday

4 CORE TASKS 01. Work with the Head of Operations and your line managers to build and maintain an innovative, creative, efficient, and welcoming business which operates harmoniously with the Tyneside Cinema. 02. Devise with your team: menus, product and service offer, initiatives, content, programmes and promotions which ensure the appeal and success of the trading company. 03. Encourage and enforce a culture of excellent customer care, and ensure all decisions throughout the business are made with the needs of the customer in mind 04. Work closely with the Head of Operations, Hires and Events team and Marketing to ensure the maximisation of food and beverage revenue, footfall and spend per head through all available channels. 05. Work with the Bar Manager and Senior Sous Chef to develop and maintain a welltrained and well-presented Bar Café and Vicolo team which consist of highly motivated, effective, efficient, knowledgeable, cheerful and welcoming staff. 06. Manage the careful selection of suppliers for the trading company, ensuring that quality and price are always considered and that working relationships are well maintained. 07. Monitor and manage the Bar Manager and Kitchen Manager in controlling their stock, effectively rotating and that wastage is minimised or eliminated. Work closely with the stock taker on a monthly basis to monitor and improve on margins wherever possible. 08. Plan, manage and monitor labour costs and overhead spends weekly/monthly to maintain budgeted labour cost % or lower and control all costs in line with budgets. 09. Maintain a keen awareness of competitors, their pricing, product and business in order to maintain and increase market share. 10. Ensure a high quality of health and safety, cleanliness and food hygiene in all catering areas and adhere to all legal regulations relating to food and beverage preparation, storage and service, and that all company health and safety and fire procedures are adhered to. Maintain proactive relationship with Environmental Health officer and ensure a high pass rate for any food hygiene inspections. 11. Communicate in a polite and helpful manner, fitting to the audience. Maintain regular communication with line managers, attend all mandatory meetings and provide constructive and supportive feedback to bar staff when appropriate. Ensure you make every effort to remain informed, and that your team do the same. 12. Proactively manage the state of repair and condition of the venue and FF&E, monitoring and reporting maintenance and cleaning issues ensuring that all is in good repair, complies with health and safety standards and that faults are promptly rectified. 4

5 CORE TASKS - CONTINUED 13. Achieve these tasks with due consideration for the environment and work to enable the cinema to be as sustainable a business as practical. 14.
