2 Event Participant Information EVENT INFORMATION What ingredient is more decadent than chocolate? It is both delicious and versatile, having roots in Mesoamerica dating back to 1900 B.C. With bold and soft flavors, chocolate can be used in a multitude of ways. Au Chocolat is an event presented by the Houston Chapter of the National Association for Catering and Events that will eplore both traditional and non-traditional recipes that will delight and challenge your concepts of chocolate. Event participants will enter into one or more of three categories: appetizer, entree, and dessert. There are no additional requirements for the recipes as long as they contain chocolate/cocoa as an ingredient. Final counts for attendees will be given a week prior to the event. Plan for 200 guests as of now. Approimate 3 ounce portions will be served. One recipe per booth. Load in from 1 to 4pm on Wednesday. Items may be prepared ahead of time. Convection ovens available on site. Entries will be judged on presentation and flavor, with an additional People s Choice award. Contestants are encouraged to design and decorate their booth space and may use their own vessels for presentation. An additional award will be given for best booth design. Judging will conclude at 9 pm with awards presented prior to the conclusion of the event. PARTICIPANT BOOTHS Each chef will be provided with two (2) dressed 8-foot tables and signage. Table assignments and a detailed schedule for set-up will be forwarded to you prior to the event. The National Association for Catering and Events Houston Chapter will provide all paper goods for your tastings, including forks and napkins. Serving vessels are the responsibility of vendors. All other equipment/utensil needs must be arranged with the event management prior to the event. Parking is available in the garage for vans.
